Moist Orange Cake Recipe 🍊🍰🧁

- 4 eggs
- 400g sugar
- 375ml oil
- 400ml orange juice
- 1 tbsp orange zest
- 580g all-purpose flour
- 3g salt
- 25g baking powder (1 sachet)

Syrup:
- 125ml orange juice
- 50g sugar

🥣Instructions🥣

1. In a bowl, combine the eggs and sugar. Beat for 3 minutes until well combined. Add the oil and beat for an additional 2 minutes.

2. Stir in the orange juice and orange zest, ensuring they are thoroughly mixed.

3. Sift the all-purpose flour, salt, and baking powder into the bowl. Mix until you have a smooth and homogeneous batter.

4. Grease and flour or line with baking paper three 16cm molds.

5. Preheat the oven to 180°C (350°F).

6. Divide the batter equally among the prepared molds. Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.

7. In a separate container, combine the orange juice and sugar for the syrup. Microwave for 2 minutes to dissolve the sugar, then set aside.

8. Allow the cakes to cool in the molds for a few minutes. Then, run a spatula around the edges to loosen them and carefully remove the cakes from the molds.

Fish Roll Recipe

Ingredients:

For the Fish Roll Dough:
- 1/3 teaspoon baking powder
- 1/4 teaspoon yeast
- 3 tablespoons sugar
- 3 tablespoons butter
- Warm water
- Pinch of salt
- 3 cups flour

For the Fish Roll Filling:
- 1 fresh fish (titus)
- 2 medium-sized onions
- 1 teaspoon curry powder
- Fresh chili pepper, to taste
- 1/4 teaspoon garlic powder
- Vegetable oil, for frying
- Salt, to taste
- 2 teaspoons chili powder
- 1 Knorr cube

Instructions:

1. In a small bowl, combine the yeast and sugar in warm water. Set it aside. The yeast helps to give the dough a fluffy texture.

2. In a mixing bowl, combine the flour, baking powder, butter, and salt. Add the yeast mixture to the dry ingredients and mix well to form a flexible dough. Cover the bowl and let it stand for 30 minutes.

3. Place the rinsed fish in a pot and add the pureed onions, salt, curry powder, garlic powder, and chili powder. Add a small amount of water and let it cook for 10 minutes.

4. Remove the fish from the stock, carefully remove any bones, and mash it up. Set it aside.

5. Heat vegetable oil in a pot or deep pan. Add the mashed fish and stir fry it with the blended pepper, onions, and seasoning cube for 5 minutes on low heat. Set it aside.

6. Divide the dough into manageable pieces. Take one piece of dough and roll it out with a rolling pin. Place some of the fish filling onto the rolled-out dough and roll it up, sealing the edges by pressing with a fingertip dipped in water or a flour-water mixture.

7. Fry the fish rolls in the hot oil until they turn golden brown.

8. Remove the fish rolls from the oil and drain them on a paper towel placed in a sieve to remove excess oil.

Your delicious fish rolls are now ready to be served! Enjoy them as an appetizer or snack.

Yam and Garden Egg Sauce

Ingredients:
- 10 large garden eggs
- 1.5 cup palm oil
- 1 onion, finely chopped
- Habanero pepper and salt to taste
- 1 small ogiri okpei (iru), optional
- Fish, cut into small pieces

Cooking directions:
1. Rinse the garden eggs and blend them in a blender or mash them with a mortar and pestle. Alternatively, you can cook them to soften before blending.
2. In a mortar, pound the habanero pepper and ogiri okpei until smooth. Set aside.
3. Heat the palm oil in a clean pot over medium heat. Heat it until it is hot but not bleached (when a piece of onion sizzles when added).
4. Add the chopped onions to the hot oil and fry for about 2 minutes until they become translucent.
5. Stir in the blended garden egg puree and cook until most of the water has evaporated, or until it thickens. Set it aside.
6. In the same pot, add the pounded habanero pepper and ogiri okpei mixture. Stir well.
7. Season with salt according to your taste preference.
8. Add the fish to the pot, stirring gently to combine with the sauce. Cover the pot and let it simmer for at least 2 minutes until the fish is cooked through.
9. Your delicious garden egg sauce is now ready!

Serve the garden egg sauce with cooked yam, potatoes, or plantains for a complete and satisfying meal.
