Stuffed Artichokes with prawns.
Ingredients
1/Heart or bottom of Artichokes
2/Bechamel
3/Dried Red peppers and dried tomatoes.
4/Mozarella cheese
5/Salt ,pepper.
Method
1/ Use a large casserole and boil 6 glasses of water.
6/Boil the Artichokes , when ready put them in a strainer,keep aside
7/Prepare a bechamel
with 3/4 lts full cream milk.
Nutmeg powder
salt ,pepper and 1 and1/2
spoons of flour.,butter.
Method
Boil the milk and keep it warm .
Take another casserole , add
some butter with the flour and whisk immediately and add the warm milk ,peppers,salt,nutmeg powder.
Continue to whisk...and remove from heat as soon it starts to thicken.
Meanwhile start preparing your Prawns.
Stir fry them in some olive oil..with salt ,pepper,fresh thyme ,parsley and lemon juice.
Keep aside.
Then start the stuffing of the Artichokes.
Start by filling the bechamel,red peppers,dried tomates ,prawns and last the grated Mozarella cheese.
leave to cook in the oven for 30 mins..slow heat.
Then serve with a nice salade.

There are different ways to prepare
Beef Steak
You can eat it Rare,Medium Rare or well done.
Ingredients
Beef sirloin
Salt
Black grounded pepper
Paprika
Butter.
Method.
1/Wash and dry your steaks.
2/Marinate with little cooking oil,pepper,paprika.
3/Leave to marinate for 1 hour or more in.a cool place.
4/Use a non stick pan,add 2 spoons of butter and cook one by one steak,last minute before you serve and sprinkle some salt.
5/If you like onions ,add some as well..
And serve with fried chips ,salad.

To day will be a very simple Mauritian food.
Daube de poulet for 8 persons
Ingredients
2 small chickens..Remove the skin,Cut, and wash the pieces of chicken.
2/Marinate with Salt and Pepper..I use very little fresh Ginger /Garlic .
3/Potatoes ,chillies,
4/Tomatoes rougaye in can,
5/Cooking Oil
6/Fresh Coriander leaves.
Method.
1/ Fry 3/4 the potatoes
keep aside.
2/Cut the onions
3/Use a large pan,add some oil,heat a bit
then add the marinated chicken
leave to cook on slow cooking till the colour change to a brown colour,then add the potatoes,tomato rougaye,chillies,salt.
leave to cook gently.
Check if potatoes and chicken are cooked .
Then.it s done..
Sprinkle some fresh chillies and fresh coriander on top .
Serve with Rice,Cucumber RaĂźta

Poulet au Miel
Hi again some summer colours in your plate.
I decided to make some garlic,rosemary Roast Chicken.
Ingredients :
2 whole Chickens
Salt,pepper
20 Garlic cloves
6 whole onions
Rosemary leaves
4 spices leaves from.my garden
ketchup
Mustard cream.
1/Wash the chicken
2/Marinate with 3 tsp tomato ketchup
4 Tsp Mustard sauce
salt , pepper and 1 Tsp Olive oil.
Use a large tray and put the marinated chicken with the rosemary and 4 spices leaves.
Drop the garlic with the skin all over and big pieces of onions as well with the skins.
Sprinkle with a spoon some olive oil all over abt 1 and a half Tsp .
leave to cook.on 190 degrees .for 30 mins.
Turn.again every 30 mins with again some olive oil.
Till.well cooked.Note that I leave the chicken to be well done for 2 hours ..
Then.it a done.
Up to you to add potatoes ,carrots eggs,chillies.,
Serve with mashed potatoes or wedges and Salad.

Beef Sauté a ma façon.
Ingredients
Beef Entrecote
Black.pepper
Fresh Ginger slices
kokoman.sauce
Oyster Sauce
Onions
Red chillies.
Marinate the slices of meat with the grounded pepper,ginger
Use a large pan and add 2 Tbsp olive oil add the meat on.high heat ,sizzle the meat .
Then.add some kikoman.sauce ,be careful.as it is salty.
Give a big twist with.yiur spoon add the onions and Oyster sauce and red chillies.
Then.it s done.

Beef Saute with kikokan and Oyster Sauce.
Xmas is coming so letâs go for a nice whole beef fillet cooked in a large flat pan.
Iâll share an easy way so that youâll be more comfortable to prepare your other dishes as well.
Ingredients
Whole beef fillet
Salt
Coarse black pepper
Olive oil
20 garlic cloves
Method of cooking
1. Marinate the meat, by starting to rub all over some olive oil, salt and pepper.
2. Use a large pan, add the meat and cloves of garlic, 1 cup olive oil as the meat should not be dry
3. Give the four sides of the fillet a nice colour, by turning every 3 mins,and adding 1 spoon of water to hear the sound of the meat caramelising
4. Then slow down the heat and let cook slowly
5. Check every 5 mins and when the fillet is tender, turn off the heat, leave the meat release its juice. Itâs done.
Serve with a nice salad and mashed potatoes

Summer gives you some cravings for some appetising hors dâoeuvres. So letâs start with a nice revisited Prawn Cocktail.
Ingredients
For 10 pers
20 large prawns
Olive oil
Salt
Pepper
1. Prawn cocktail sauce
You can either buy ready made cocktail sauce or you can prepare it yourself. Here is the recipe:
- 1 or 2 tbsp of ketchup
- 2 o r 3 cups of of homemade or ready made mayonnaise
- 1 dash of Tabasco
- 1 tbsp of Worcestershire sauce
- 1 tbsp of Horseradish
Whisk all the ingredients with some salt and pepper and keep in the fridge
2. Prawns (cleaned and washed)
- Use a pan, add 2 tbsp of olive oil and the prawns
Remove and keep aside
3. Start preparing the salad, shred the lettuce, cut the red and yellow peppers, avocados, mangoes and lemons
4. Then start assembling your dish
- 1 spoon of the cocktail sauce,add some lettuce , peppers, mangoes, avocado, and the prawns
- Decorate with a nice piece of lemon and bit of the cocktail sauce on top, just enough for the taste

Hello, more and more days people tend to prefer fish to meat, for health matters or else. We are lucky to get fresh and tasty all year long.
Today I will share a very quick way of cooking some fresh fish fillet.
Try it and amaze your guests whenever you have a dinner at home.
So letâsstart
Ingredients
Fish fillets (preferably some thick ones with skins)
Lemon
Olive oil
Butter
Whole pieces of garlic with skin
Fresh basil leaves
Fresh herbs, thyme/spring onions
Salt, pepper and paprika
Method of preparation
1. Pre heat the oven
2. Marinate your fish with lemon,thyme, salt, pepper and paprika for 10mins
4. Use a large pan, add olive oil and butter, sufficiently
5. Then add the fillets one by one in the pan
6. Please donât drown the filets in the oil. You must keep an eye on the fillets while they are being cooked as they need to remain tender
7. Add the fresh basil garlic cloves with skin and some pieces of lemons
8. Sprinkle more olive oil if needed directly on the fillets
9. When done remove from heat.
10. Use a large deep plate, put the fillets with all ingredients cooked together with the hot cooking oil/butter. Add more olive oil if needed on the fillets and wrap with a foil paper and leave to cook for 30 mins more.
11. When done remove from the oven and sprinkle some more fresh basil leaves and spring onions.
Serve with a nice salad.

Hello, if you are a meat eater youâll appreciate this stir fry beef filet or brisket. Then youâll need to cook it in a pressure cooker as your meat will definitely get a special taste, as per my experience.
Ingredients
Beef filet or briket
Fried onions
Raw onions
1 natural yoghurt
Salt and pepper
Green or Red chillies
Slices of fresh ginger
Oil
Method of cooking
1. Heat 3 spoons of cooking vegetable oil, add the marinated meat with the ginger, yoghurt, salt and pepper
2. Add some water
Cook until tender
Sprinkle some red and green chillies.
The potato salado would be perfect with it. Check out the recipe below.

1. Boil all the ingredients until they are mostly well cooked
2. Mix all with salt and white pepper and salad cream (ready made at supermarket)
3. And decorate with finely chopped spring onions
This goes well with the fried meat or chicken

I revisited one of my favourite chefâs, Cyril Lignac, *summer salad*
Ingredients
Fresh mozarella cheese
Cherry tomatoes [yellow,red,green]
Grated lime zest
Basil leaves
Avocado
Yellow and red plum
Strawberries
Olive oil
Method of preparation
1. Wash and cut all the ingredients in any way you prefer, but keep the basil leaves apart
2. Take a handful of fresh green basil leaves, put in the grinder and add plenty of olive oil.
3. Blend till you have a smooth mixture.
4. Then pass through the colander
5. Pour the vinaigrette on your salad
6. You might as well add whatever fruits you want or even prawns
I didnt add any salt or pepper but itâs up to your taste of course.

Today nice sunny day, I wanted to share some nice colourful food.
Salmon with cherry tomatoes in cream
Ingredients
Fresh salmon bought at Oceandash
Salt
Pepper
Paprika
Cooking cream [optional]
Salty butter
Cherry tomatoes
Fresh basil leaves
Method of preparation
1. Wash the steaks of salmon, dry them all over.
2. Add 2 spoons of butter or olive oil in a pan
3. Lay the salmon steak one by one on the skins side.
4. Salmon cooks very quick, So as soon as the skin is fried and it starts changing colour, you can flip it on the other side
5. Sprinkle some salt, pepper and paprika while cooking and add the cherry tomatoes and basil leaves.
Option: add the cooking cream, ground pepper and paprika.
Stop the cooking and garnish with some nice fresh basilic leaves and itâs done.

Hello, today I am going to share a nice recipe with beef sirloin.
Braised Beef with Daikon.
Ingredients for 8 pax
6 slices sirloin steak
4 Daikon (rave in french)
4 cloves
4 Star Anise (Anis étoilé)
Soy sauce
Oyster sauce
Cooking oil
Fresh ginger
Fresh garlic
Onions
Fresh red chillies
Method of preparation
1. Use a pressure cooker,add some cooking oil .
2. Add the onions, cloves, Star Anise and the marinated meat (beef, salt and pepper). Add also the large slices of ginger and garlic.
3. Simmer until it becomes brownish ,add some water and let it cook
4. Then add the Daikon and more water if needed
5. When meat and daikon are tender, sauté with the oyster sauce and black soy sauce
6. Give a big turn of spoon on high heat and itâs done
7. Garnish with fresh coriander leaves or spring onions and red chillies
Serve with boiled noodles, ramen noodles or nice with a brÚde sauté

Winter is here, eating some tasty mauritian food will keep you warm. So let me share a new mauritian receipe. Let âs start with some nice eggplants in dholl.
INGREDIENTS
Dholl Ti pois
A pinch of saffron
Onions
Salt
Ginger
Garlic
Some light masala, mild or medium hot Raja Masala
Fresh chillies
6 Eggplants
Method of preparation
1. Wash the dholl and keep aside
2. Use a pressure cooker, add some oil, add the onions, ginger, garlic, curry leaves and the eggplants.Leave to cook until they are a bit tender
3. Add the dholl with a pinch of saffron and salt
4. Cover with cool water. Close the lid and let cook for 30 to 45 mins
5. Check and see if everything is well done and remove from the heat
6. Sprinkle some fresh coriander leaves and fesh red or green chillies
Serve with well cooked rice, fried fish,salted fish sautee or fried chicken and some nice coconut chutney.
