Who said low carb doesn’t have to be DELICIOUS?? Spaghetti squash Carbonara for the win on this cold, windy night. Recipe 👇🏼 INGREDIENTS
* 1 large spaghetti squash
* 2 tablespoons olive oil
* 5 ounces pancetta, diced
* 1 small onion, diced
* 2 cloves garlic. minced
* 2 large eggs
* 1 tablespoon chopped fresh flat-leaf parsley
* ½ cup grated Parmesan cheese
* 1 teaspoon sea salt
* ¼ teaspoon black pepper
* ½ cup shredded Parmesan cheese
INSTRUCTIONS
1. Preheat oven to 400° Line a rimmed baking sheet with aluminum foil.
2. Cut spaghetti squash in half lengthwise. Scrape out the seeds. Drizzle squash halves with olive oil and sprinkle with a little sea salt and black pepper. Place cut side down on baking sheet. Bake for 30 minutes or until fork tender.
3. While the spaghetti squash is roasting, heat a large skillet over medium heat. Add pancetta to the pan and cook until crispy. To the pan, add the onion and the garlic. Cook until translucent and soft. Once the spaghetti squash is roasted, use a fork to scrape out the shreds of squash. Add to skillet and toss with pancetta, onion and garlic. Make sure that spaghetti squash is nice and hot.
4. In a large mixing bowl, whisk together eggs, parsley, grated Parmesan, sea salt and black pepper. To the mixing bowl, add squash mixture and toss with egg mixture. The heat of the spaghetti squash will cook the eggs just enough to coat them to the strands of squash without scrambling them.
5. Top with shredded Parmesan before serving.

These are packed with broccoli, cauliflower, black beans, onions, red and orange peppers, and a little jalapeno :)
I topped it with some mozzarella

Super easy instapot bulgar and chickpea dish. Has a sort of sweet flavor! I froze half and we will eat the other half in a few days.

THIS IS THE RICE THAT I BUY!
20 lbs of amazing. And it is on sale right now.

I use jasmine rice for everything, it is so yummy and fragrant.

When I want to make a more creamy southern dish, I'll pick up a bag of the reg stuff.

Okay guys!! I forgot to take a "final" pic but here is my first post :)
Acorn squash spaghetti rigatoni.

First time peeling an acorn squash this way... so complicated.. find your own way.
I cut it and gut it then used half in the dish.

Onions. Garlic. The peppers are sweet red, green, and jalapeno. Cooked all together with vegetable oil for like 10 min until everything was nice and soft.

Added store bought sauce!! Ya know, feeding a fam of 3 sometimes limits the time for homemades. I let that cook with a lid on for about 10 min.

Add the PASTA. Boom. 😍
