Todayβs Texas Recipe! π π π
Enjoy a delicious twist on taco night with this easy-to-make Taco Casserole with Tortillas! Packed with flavorful ground beef, gooey cheese, and layers of tortillas, this dish is sure to be a family favorite.
Ingredients
For the Filling:
1 lb ground beef π₯©
1 Β½ tablespoons taco seasoning mix πΆοΈ
Β½ cup water π§
Β½ cup salsa con queso π§
For the Casserole:
3 8-inch flour or corn tortillas π―
2 cups shredded Mexican cheese blend or cheddar cheese π§
For Serving:
Sour cream (optional) πΆ
Instructions
1. Preheat the Oven:
Preheat your oven to 350Β°F (175Β°C). Prepare an 8-inch round baking tin by spraying it with cooking spray.
2. Cook the Beef:
Heat a large skillet over medium heat and add some oil. Once hot, add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Drain any excess fat if necessary.
3. Season the Beef:
Stir in the taco seasoning and water. Let the mixture simmer for 2-3 minutes until well combined and heated through.
4. Add Salsa Con Queso:
Stir in the salsa con queso until fully incorporated. Remove the skillet from heat.
5. Assemble the Casserole:
Place one tortilla at the bottom of the prepared baking tin. Spread β
of the beef mixture over the tortilla, then top with β
of the shredded cheese.
Repeat this layering process two more times, ending with a layer of cheese on top.
6. Bake:
Place the casserole in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
7. Serve:
Allow the taco casserole to cool for a few minutes before slicing and serving. Top with a dollop of sour cream if desired.

Guadalupe River State Park
is a Texas state park located on a section of the Guadalupe River in Kendall and Comal Counties, northwest of Bulverde, Texas United States and is administered by the Texas Parks and Wildlife Department. The land was acquired by deed from private owners in 1974 and was opened to the public in 1983.

Thunderstorm and rainbows at Palo Duro Canyon, TX just before sunset yesterday. There were some pretty fierce, nearby lightning bolts. I was hiding in my car and observing except for the approximately 5 seconds I jumped out to take this shot. I love thunderstorms!
