I don’t know about you all but meal prepping is essential for me. It makes life so much easier when I don’t have to worry about what to eat everyday. This morning I made baked chicken thighs, chickpea cauliflower rice, and steamed brussel sprouts. This made enough for my lunches for the next 4 days.

Mexican Cauliflower Rice:

Half an onion chopped. Sauté in a bit of olive oil. Season with a little Creole seasoning. Add in a can of diced tomatoes with green chilies (do not drain this will add a little liquid to the mixture) season a little bit again. Steam a 16oz big of cauliflower rice in the microwave then add this to the mixture. Add an 8oz can of tomato sauce. Season again as needed. Let this all simmer for about 5 minutes!! That’s it!! So delicious 😋

Grilled stake asada bits
Cauliflower Mexican Rice (my absolute favorite new recipe I’ll post this recipe)
Grilled green peppers and onions
Cucumber and Tomato salad.
And a side of refried black beans (not pictured)

What is Slow Carb Diet?

Slow carb meaning that the foods you are able to eat move through your system at a slower rate. It definitely seems to follow a low carb diet plan but carbs are absolutely an essential part of this lifestyle. Eating a slow carb diet will increase your body's ability to break down fat. This plan does state to eat 4 meals/day for 6 days. I do not do this. I only consume 3/day. It's hard for me to find the time for 4 meals. PLUS you get 1 cheat day!!!!! And that is exciting!! lol!! We get excited for cheat day. Though we did find we felt like crap the next day. So we have really taken it down to 1 really good cheat meal with a couple fun snacks and not a full day lol!! But do with it what you want :)

What can I eat?

Animal Protein - eggs, cottage cheese, chicken, beef, pork, and fish.
(I did cut out the cottage cheese since dairy is not allowed on this diet and wanted to follow it a bit more strictly)
Legumes - lentils and beans
Vegetables - lots of veggies lol!! Cauliflower rice is a standard staple in my meal prepping
Fats - butter, olive oil, nuts, dairy free creamer
Spices - key to any good meal lol!!
Lots of water, unsweetened tea and coffee

What can't I eat?

All white carbs, dairy (except cottage cheese if you choose), fruit, potatoes, processed food, sugar, juice, smoothies, sodas (I do enjoy and occasional Coke Zero), or any high calorie beverages.

So simplify it to: Meats, veggies, lentils and beans, and nuts. That's it!!!

No lifestyle change or diet plan is always going to be 100% perfect. I have definitely taken this plan and made a few modifications that work best for me and my lifestyle. The purpose of this page is to share my journey and hopefully inspire others. I am blessed to have an amazing support system and a partner, that is not only a professional chef and cooks for me often, but he is on this new plan right along with me as well. As often as he makes me delicious meals, a lot of meals are left up to me to figure out on my own. So, I had to start getting very creative lol!! If you know me and my kids would say it best, I cook very simply and chicken and rice was a standard in our home lol!! A lot! lol! My goal is to share not only what we cook, but the successes, frustrations, and most of all I want to support anyone who wants to join me on this journey. This is a place to share and connect. Please feel free to start conversations here or send me private messages. After this post I will share more details about the Slow Carb diet and what works or doesn't work for me. Again, this is my version of this plan that has been modified to fit me.
