A hidden gem in the world of Pinot Noir. This wine, although classified as a humble Bourgogne Rouge, draws its essence from a remarkable single-vineyard site nestled near Pommard. La Taupe’s parcel, once a part of the esteemed Pommard AOC, lends its legacy to this extraordinary creation. The wine is 100% destemmed with very little intervention. Romaric prefers to use less punch-down, which tends to extract more, and instead, he works with pump-over, which brings a more floral and delicate profile to the wine. The wine is then aged in a barrel for ten months, giving it just the right amount of spice. Domaine Chavy-Chouet is a 15-hectare spread over 5 communes in the Côte de Beaune: Puligny-Montrachet, Meursault, St. Aubin, Volnay, and Pommard. Although the Domaine has been family-owned and managed for seven generations, Romaric Chavy succeeded his father (Hubert) in 2014, and the wines have achieved top-tier status. Romaric has been hailed as one of the rising stars in Burgundy. This classic Bourgogne Rouge shows delicate and elegant red fruits, fresh strawberries, subtle baking spices, and a hint of cedar. The nose keeps opening up, and there are some beautiful mushrooms, black truffles, and forest floor notes. The palate is surprisingly fresh, with some tart fruit, cranberries, and some elegant tertiary notes; the oak is discreet. This 100% Pinot Noir masterpiece hails from vines that have gracefully aged for seven decades, ensuring depth and complexity in every sip. Link in the bio

Honoring Natacha’s wine this week is a great honor for a deserving woman, heir to a great name who preferred independence to build her own history on the Crozes-Hermitage and Saint-Joseph appellations. Her wines have personality and character.   In 2004, after studying at Suze-la-Rousse and several internships, she decided it was time to build her own. She purchased 1.5 ha in Saint Joseph, followed in 2007 by 5 ha in Beaumont-Monteux, one of the 10 villages part of the Crozes-Hermitage AOC.   The name ‘Aléofane’ comes from a book by John MacMillan Brown regarding a fictional island. The word ‘Aléofane’ here translates as ‘a gem of truth’  Her Crozes-Hermitage shows beautiful notes of acacia flowers, honeysuckle, and ripe stone fruit like pear and yellow peach. There is also some exotic fruit in the mix: mango and ripe pineapple.  The palate explodes with all the beautiful aromas; it has a creamy sensation, but it’s not heavy on trying. I’m pleasantly surprised by the freshness of the finish.    I’m craving @chefrobscafe Mango Chicken over his coconut rice. The perfect wine for Spring! If you love bright crisp white like Chablis, Albarino, Pinot Grigio you will love this Grüner Veltliner, and luckly for us it’s on sale, So I grab all I could get becasue I really loved it! On the glass it is clear with a greenish-gold color. A very intense nose, with some ripe notes of kumkuat, creamy citrus curd, and a hint of honeysuckle. The mouthfeel is round, reverberates around the mouth – positively bounces from cheek to cheek! and the finish has a gorgeous salinity. Herbert and his wife, Carmen, are now the third generation of the family to run the business since 2003. Like many growers in Austria, his Domain is certified in biodynamic viticulture, but unlike many, he is part of the respekt-BIODYN association. This association takes this passion and commitment to another level and includes only 34 producers from Austria, Germany, and Slovenia, including Bernard Ott, Tement, Rebholz, Henrich, and Sattler.
