A Lobster Story.
Earlier in the year, TOG visited Nathan Outlaw's restaurant in Cornwall to give his team some tips on keeping their knives sharp.
It was there and then that we spoke about Calum Greenhalgh, a lobster fisherman Nathan has been working with for over 20 years.
We spoke about humanely dispatching the creatures by recreating the conditions in which they live. We spoke about Calum’s approach to preserving lobster numbers in the ocean. We spoke about how each part of the lobster needs to be cooked in a different way.
It was a fascinating conversation. So much so, that we decided to make a film about it.

The LESTRANGE X TOG Micarta Santoku.
We used regenerative cotton offcuts from the TOG x LESTRANGE 24 Trouser to make a micarta handle for our best-selling knife, the 17cm Santoku.
The handles were created by laminating sheets of this amazing fabric with bio-resin and then shaping the material by hand. The end result is a unique, beautiful, grippy and super-tough handle for our most loved blade.
The LESTRANGE x TOG Micarta Santoku is a limited edition product. We won’t be making any more.

The LESTRANGE x TOG 24 Trouser.
The 24hr Trouser is Lestrange’s best-selling trouser. LESTRANGE were one of the first companies to successfully design and make a trouser with a tracksuit level of comfort and an aesthetic you can take from the office to after work. Never underdressed or overdressed.
Together, we collaborated on a workwear-inspired signature design, updated for use in the home kitchen too.
They were made using regenerative cotton - a method credited with improving soil health, sequestering carbon and increasing biodiversity. In short, if you’re going to wear cotton, regenerative cotton is the way to go.

Introducing our Sujihiki Micarta carving knife. A limited edition of just 24 knives made with regenerative cotton micarta handles.
The micarta was created for our collaboration with Lestrange using offcuts from making our 24 Trouser. Part of TOG’s philosophy is to reduce waste where we can. We already use offcuts to make our knife racks and strops. So we decided to create a limited edition collection of 24 Sujihiki slicing knives using the left-over Micarta material.

This versatile serrated knife is perfect for slicing soft or crusty bread, pies, cake and pastries. The long 10" blade slices through larger loaves and cakes and can be used to lift rolled pastry from a board or trim cake.

A design that took over 24 months.
Much of that time was spent perfecting the serrated scallops.
Having scalloped serrations rather than sharp pointed ones means that this knife cuts more cleanly, creating fewer crumbs and doing less damage to the food. It can even be used as a substitute for a straight-edge meat slicer. The wavy serrations are less vulnerable than sharp points too, making this geometry more durable.
When The said “this is the only bread knife we’ve come across that’s as razor-sharp and durable as a high-end chef’s knife” it made the 2-year wait worth it.

The surface you cut against is almost as important as the knife. It completes the cut. That's why we have put as much thought into our chopping boards as we have our knives.
Our chopping boards are handmade in Yorkshire using 'end grain' construction. This means the wood fibres are vertical, like in a butcher's block. The knife pushes down between the fibres rather than cutting them, allowing them to move back to their original position. This is why end grain boards are often described as 'self-healing'. Using end grain boards is easier on the knife as well as on the board.
