Carb Conscious Pizza!
Low Carb tortilla topped with overlapping deli sliced pepperonis, then overlapping deli sliced Muenster cheese, topped with Rao’s original sauce. Can add any topping you like!

*DISCLAIMER*
the pizza “crust” (tortilla) is quite thin- so caution to those who add more toppings- you may need to fork and knife this pizza. If you stick to these toppings you’ll just need to let the cheese cool a few minutes so you can pick up the slices.

Quintessential Quiche!

Sautéed Mushrooms, Broccoli, onion, and spinach.
Whip 7 eggs with cream
Freshly shredded sharp cheddar cheese
Mix the eggs and sautéed mixture with the cheese.
Spray grape seed oil on pie dish then pour mixture in. Place a few quartered tri-color tomatoes on top.
Place in oven at 350 degrees for 30-35 mins until center is set.
Top with sriracha sauce, plain greek yogurt,and chopped green onions

🍳 Spicy Jalapeño Cheddar Omelette 🍳

Whisk 3 eggs with a little 2% milk vigorously - set aside.

I used previously grilled jalapeño cheddar brats. We always grill a bunch of them and then have left overs- this is a great way to use them up!

In pan, cook mushrooms, onions, and diced jalapeño cheddar brats pull out of pan and set aside.

In same pan cook baby spinach and quartered tri-color tomatoes with a bit of olive oil or grape seed oil- pull out of pan and set aside.

In same pan pour egg/milk mixture in pan- place lid over to cook egg all the way through- put fresh shredded sharp cheddar cheese on half the egg and mushroom, onion, brats, spinach and tomatoes on the other side (reserve a bit of spinach and tomato to top later)

Fold egg in half and cut that in half to share with loved one or keep in fridge for yourself the next day.

Top with cheese, reserved spinach and tomato and sriracha sauce. You could also top with plain Greek yogurt as well- I just didn’t have any.

Mushroom Sriracha Egg Muffins!

Heat Oven to 370 degrees

•10 eggs
•Sliced mushrooms
•Baby spinach (stems removed)
•Chopped Onion
•Freshly grated Mild Cheddar Cheese
•1 1/2 tablespoons of Sriracha
•1/2 cup almond milk (unsweetened)
•1/2 cup heavy cream

Whisk Eggs, Almond Milk, Heavy Cream together vigorously until you see lots of air bubbles.

Add onions, mushrooms, spinach, cheese and sriracha and mix.

Use a standard muffin pan, spray with oil
Using a ladle, fill the muffins about 3/4 the way full

Cook for 13-16 minutes just until the egg is fully cooked. Be careful not to overcook the egg, otherwise they become rubbery in texture.

Top with Sriracha- and Voila!

When cooled you can place in Tupperware in fridge and reheat each morning. Place in microwave with a coffee cup of water to keep them moist.

•Baby Spinach
• Fresh chopped flat leaf parsley
• Tri-color tomatoes
• Chopped broccoli
• Shredded carrots
• Red Cabbage
• Shredded sharp cheddar cheese
Top salad with a grape seed oil, fresh pressed garlic, fresh squeezed lemon, salt, pepper dressing
