It’s been a crazy week here in the Swamp. Huck has done a heck of a job maintaining the home front with the power being out since last Monday. Thankfully, it was restored on Saturday. We hope and pray everyone fared well and all are safe. Praying for our community and our country today. We will get back to cooking and sharing recipes soon. May your week and family be blessed.

Throwing it back with the Taco Bell Enchirito.
We have posted this before, it’s always a favorite. So here it is again. I’m not as creative with the presentation as Huck is but here you go.

Recipe
1 can Gebhart Enchilada sauce
Refried beans- use canned or make your own
1 lb browned ground beef
Diced onions if you like
Sliced black olives
Fine shredded cheddar cheese.
Taco Bell taco seasoning packet.
Mission brand large flour tortillas
Brown your meat in a tbs of coconut oil. (Taco Bell used that early on.)
Heat your enchilada sauce in a separate pot.
Once the meat is done add your seasoning packet and follow the directions
Heat your beans up
Warm your tortilla in the microwave until just warm. Add beans, then meat mixture. Fold up the ends and roll from the sides, seam down on your plate. Ladle a good portion of the sauce over that and then your cheese. Microwave 30-45 seconds. Add your olives and onions. Now you’re ready to eat, top it with Taco Bell mild sauce. It can be found at most grocery stores.

Icebox Pickles

Made these delicious pickles today with the harvest of cucumbers from the garden. The recipe I used is in the comments. I did add a little more vinegar since many said the recipe was a little too sweet. Turned out very good!

Salmon with Creamy Creole Sauce

Ingredients:
3-4 Pieces of Salmon
1 tbsp olive oil
Salt and pepper
1/2 cup diced tomatoes
1/2 cup diced Red bell peppers
1/4 cup diced onions
2 cloves garlic, minced
1 cup heavy cream
1 tbsp Creole seasoning
1/2 cup chicken broth
1 tbsp chopped parsley
Instructions:
Cook Fish
Season the Salmon fillets with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat.
Sear the Salmon fillets for about 3-4 minutes on each side, until they are golden brown and cooked to medium. Over cooked Salmon is not the way to go, you will lose that buttery richness if you do. Remove from the skillet and set aside.
Make the Creole Sauce:
In the same skillet, add a little more olive oil if needed. Sauté the diced onions, bell peppers, and garlic until soft.
Add the diced tomatoes and cook for another 2 minutes.
Pour in the chicken broth, heavy cream, and Creole seasoning. Stir well and let the mixture simmer for about 5-7 minutes until it thickens.
Combine and Serve:
Return the cooked Salmon fillets to the skillet, spooning the creamy Creole sauce over the top.
Let the fish warm through for a minute or two with the lid covered.
Garnish with chopped parsley and serve hot. We served it with Rice Pilaf.

Huck's cucumber michelada mix.
1 cup of V-8
2 cups of Clamato
2 tsp of Tajin
1 tsp of Franks Hot sauce ( more for spicier)
2 heaping TBSP of diced cucumbers. (I soaked them in pickling salt for at least 30 minutes. Longer the better).

Deep Dish Pasta Pizza

Recipe:
One cup and a half cooked pasta tubes
1/2 lb browned ground beef
2 cups mozzarella
1 tsp minced garlic
1 tsp Italian seasoning
1/2 tsp salt
3/4 bottle Condantina Pizza Sauce
Pepperoni slices
Italian sausage
Sliced white onion, Bell pepper, olives, or whatever your favorite pizza toppings are.
Preheat oven to 450
Cook your ground beef, add garlic, salt, and Italian seasoning. remove about 1/3 and set aside. Leave the rest in the skillet. Sprinkle some mozzarella around the edges of the skillet. Add your cooked pasta, top with pizza sauce, then pour the rest of cheese on that. Now add your pepperoni, the ground beef you set aside and pinches of raw Italian sausage or breakfast sausage. Add what other toppings you like. Cook about 15-20 minutes or until sides and cheese begin to bubble. Enjoy!

If you like Olives you will love this fun and easy dipping appetizer.
Recipe:
1/2 cup Olive oil
1/4 cup Balsamic Vinaigrette we used Ken’s Steakhouse
1/4 fine chopped fresh Parsley
1/4 cup shredded Parmesan
1 tsp minced garlic
1/2 tsp red pepper flakes
1/4 Julienne Sundried tomatoes
We chopped ours
3 tbs sliced Green Olives
1-2 tsp Paprika
Place oil and Balsamic Vinaigrette on a serving plate. Sprinkle all other ingredients on top. Serve with French bread baguette, or toasted crackers.

Blackberry Smoke Cake.
Because not everyone wanted BlackBerry icing. 😄

Recipe:
We used a regular white box cake mix, follow directions on box. The real star is this amazing Buttercream Icing recipe we found. See link. I split the reckon half and added six large blackberries and blended them with the mixer. Cooked the cake, let it cool and iced it. Such a simple and delicious cake.

Spinach Dip with Bowtie Pasta Dippers

I’ve been stalking this recipe for awhile. Decided to pull the trigger today. I can tell you it did not disappoint. The Bowtie dippers are a show stealer all by themselves.

Best fried Oysters Ever
Raw oysters rolled in Louisiana Fish Fry Original Seasoned Fish Fry.
Place in hot oil and fry to golden brown.
Serve with cocktail sauce

It’s been an interesting week out on the Swamp with all the rain, and release from the dam. Our water levels are the same as they were during Harvey. They live in the water but even too much for them. Laid up on the bank all week.

Tortilla pizza night.
This is such a fun meal. You will need the following.
Extra large flour tortillas
Cheese strings, cut in half long ways. You will need 4 of the cut pieces for each pizza.
Tooth picks
Pizza sauce
Preferred toppings, mozzarella, pepperoni etc.
Preheat the oven to 400. For four pizzas you will need a large cookie sheet.
Heat the tortilla for about 15 seconds in the microwave. Take out and place one half of the string cheese on the side and roll tortilla over it, securing with the toothpicks. It may take two or three per side. Do this on all for sides of the tortilla. Then add about a tbs of sauce and smear around. Next add cheese and other toppings. Repeat until all four tortillas are done. Place in oven and cook until golden brown. Take out and place each pizza on a cutting board. Remove all toothpicks. Cut cross ways twice. Now time to eat.
