Here is the recipe for the Pulled Lamb Leg:
Ingredients:
1 Lamb leg (no bone, around 3 lbs)
For the marinade:
2 tbs ground garlic
1 tbs tomato paste
1 tbs hot sauce (I make my own)t
1tbs Ras el hanout ( an Algerian mix of 7 spices)
1 tbs dijon mustard
1 tsp paprika
1 tsp black pepper
1 tbs salt
1/2 cup olive oil
1 cup warm water
Steps:
1. Display the lamb lamb on a board
2. Combine all the ingredients except water
3. Give the lamb leg a massage with the marinade (the combined ingredients), and put in the fridge for several hours. The meat should absorb all the ingredients.
4. Few hours later, add a cup of warm water to a pressure cooker
5. Add the marinated lamb leg into the pressure cooker
6. Close the lid
7. Set on very low heat for 2 hours (you can open the pressure cooker in between to check if the meat is done)
8. After 2 hours, the meat should be well done as in the video below.
Enjoy!
