This is the perfect sidekick, a familiar parachute, as we take some time off to meditate on and celebrate all our hard work. We encourage you to take some time to expand your minds and hearts with us this weekend.
Beyond the Veil of Form releases at noon, Fri 8/30 to kick off the holiday weekend, via the Williamsburg beer garden at 302 Metropolitan Ave. Draft pours will be available in the beer garden until we’ve drank it all.

EL MURAL

Mexican-style lager or “clara” brewed with nixtamalized ancestral corn sourced from our old friends
This is a beer that is almost 10 years in the making. In what seems like another life, while our brewer was working at Blue Hill, he met a young iconoclast named Jorge Gaviria. At the time, Jorge had a vision, and he would dream [out loud over shift drinks] about seeking out and meeting the farmers who were growing [preserving] Oaxaca’s heritage corn varieties. —And sure enough, he turned his dream into reality: forging relationships with growers; bringing the corn into the US; teaching young cooks how to nixtamalize it, mill it and make fresh tortillas. He wrote a book, called Masa, and was nominated for a James Beard award for the effort. Now here we are, almost a decade later, so proud of him.
El Mural is a love letter to Jorge, the single-origin farmers they work with and all of the hard work that goes into preserving these precious and delicious corn varieties. Light, crispy and refreshing, the beer boasts delicate, floral, aromatic fresh-tortilla notes that intermingle beautifully with the noble hop varieties and linger in the finish around its crispy bittering staff. Spunded and naturally carbonated, this might be the beer we are most proud of. We can’t wait to share it with you.

UPDATE: SOLD OUT! We are sold out of Temple of Saturn cans. Thank you to everyone that came out to support. This was a fun one. The beer will be available on draft in our beer garden until it’s not.
We will be closed from noon-3pm this Sun 8/18 for a private party. Service will resume in the beer garden tomorrow at 3pm.

HOPPER
American Pilsner [4.9%]

pilsner malt and Simcoe on water
This is American Pilsner brewed with 100% NY grown pilsner malt; cold-conditioned during a late-addition dryhopping stage on hand-selected Simcoe until fully matured. –Luminous, crisp and refreshing.
As we contemplated the next iteration of American Realism, curiosity got the best of us, yet again. During the last hop harvest, we were fortunate to perform a sensory evaluation with our friends on a very special lot of Simcoe. It turned out to be one of the best hops we had ever touched in our lives and we’ve been waiting for just the right moment to showcase it.
This continues our little test-kitchen brewing company’s ongoing exploration of locally grown base malts. It feels imperative that we treat these beers simply, allowing the subtle character of the grain to express itself.
Hopper releases alongside Temple of Saturn at 5pm today, Fri 8/16, via the Williamsburg beer garden at 302 Metropolitan Ave.

Citra, Nectaron on barley, wheat and oats
Two titans of the world’s special flavor and aroma hop varieties [one venerated; one new] orbit each other in a dance fit for a Kubrick film. Witness citrus and stone fruit as they go station to station. This is pitch-perfect Citra, a modern stalwart, proudly sourced and selected from our friends working in harmony with Nectaron. –The perfect pairing for devouring a ripe peach.
We’ve been extremely excited to work with Nectaron hops, a triploid aroma hop variety from New Zealand that tends to showcase intense stone fruit [hence the name], tropical fruit and citrus notes. They were developed over 17 years by Dr. Ron Beatson, known as New Zealand’s Godfather of Hops, in collaboration with New Zealand’s Plant & Food Research.
Inspirational credit for the hexagonal oculus in the artwork is due to who, over a few long conversations [and beers], pointed us towards the hexagonal storm of Saturn and its relationship to sacred geometry.

Young, unfiltered Pilsner brewed with 100% NY grown pilsner malt, thieved from the cellar [“keller”] early, before fully matured. This is “beer-flavored-beer” pure and simple; a window into the fermentation tank; a glimpse at how lagers express themselves early on, as they come of age. A straightforward grain bill–constructed of Excelsior pilsner malt—delivers a soft, yet crisp, refreshing beer with light crackery notes and subtle hints of honey and jasmine.
This begins our little test-kitchen brewing company’s ongoing exploration of locally grown base malts. It felt imperative that we treat this beer simply, allowing the subtle character of the grain to express itself, uninterrupted and without embellishment.
