Sigh, does anyone else have to deal with this annoying little bastard each year? Yeah me too, thought I’d dodged it our first year here by shoving him in the glove compartment in the car. Only for my daughter to kick it open on the way back from school mid December …. After some quick thinking we had a ‘car elf’🙄 Anyhoo, it’s part of our festive joy now and so I thought I would come up with a cute card and poem with two delicious gingerbread cookies from the elf as part of his arrival back in to our lives!!! The countdown to Christmas is on! People who try my shortbread always want more, so I have decided to offer a very special gingerbread tree cake this year. Perfect for those of you who aren’t keen on fruity cakes and puddings (like me)! Layered with a subtly spiced buttercream it is a great show stopper for afternoon tea or a party treat as well. It will comfortably feed 15-18 guests.

Of all my cakes this one by far gets the most love. So I have decided this Christmas I will be offering a Christmas version of this! With a chocolate cake and peppermint buttercream filling it is sure to be a big crowd pleaser and an amazing alternative for those of us who aren’t fond of the traditional fruit cake!
