Boursin lasagne

If there is one recipe on my grid that you need to try it’s 100% this one 🤤 it was incredible. A small change made such a difference in flavor.
Ingredients.
8 lasagne sheets
500g 5% beef mince
150g diced smoked bacon
1 onion (finely diced)
2 medium carrots (finely diced)
2 peppers (sliced or diced)
2 cloves garlic (finely grated)
1tbs tomato purée
1tbs Italian mixed herbs
1 beef stock cube
500g passata
2tbs light butter
2tbs plain flour
300ml milk (warmed)
1tsp mustard (optional)
60g cheese
60g cheddar
Salt and pepper to taste.
Method.
Fry off the onions, carrots and peppers until soft then add the garlic. Add your smoked bacon and allow to cook for a few minutes, then add the beef mince and cook until brown. Add the tomato purée, stock cube, herbs and passata and allow to cook on a low heat for at least 30 min (longer the better). Meanwhile pop the butter into a separate saucepan and melt. Once melted add in the flour and stir into a paste. Add the warmed milk in bit by bit, stirring constantly so no lumps are formed. Once your sauce is thick add in the mustard and the Boursin, stir until the cheese has melted and then season to taste. Layer the bolognaise and lasagne sheets and then top with the béchamel and the cheese. Put it into a pre heated oven for 30-40 minutes or until cooked through and golden. Serve and enjoy.

Brussels sprouts were sautéed with diced speck, garlic, fresh parsley, and a fig balsamic glaze (you can use some balsamic vinegar and pomegranate molasses if you like)

Marinated a packet kale slaw mix with tahini, garlic, lemon (s&p and some water all blitzed )

And topped with roasted tin chickpeas that I tossed in some evoo, cumin, smoked paprika, S&P

Served with some pesto asparagus and tomato puff pastry parcels as well as some cheese and prosciutto breadsticks.

🥕carrot cake overnight oats🥕⁣
🌟ingredients🌟⁣
- 70g finely grated carrot⁣
- 60 g oats ⁣
- 1 tbsp chia seeds⁣
- 175-200 ml almond milk⁣
- 3 tbsp soy yogurt⁣
- 3 tbsp maple syrup⁣
- 1 tsp cinnamon⁣
- pinch of nutmeg⁣
- pinch of cardamom⁣

🌟method🌟⁣
1. Add the grated carrot into a small bowl and microwave for about 2 mins or until soft. ⁣
2. Add all the ingredients into a jar/bowl and mix well. ⁣
3. Leave in the fridge overnight (Or at least a few hours). ⁣
4. Add your fav toppings and enjoy! ⁣

We all absolutely loved this dinner, it was so full of flavor.
Creamy garlic, lemon and thyme chicken
Ingredients.
4 chicken breasts (I butterflied mine so they cook quicker)
1-2tbs chicken seasoning
1 onion (finely diced)
3 cloves garlic (finely grated)
Juice of half a lemon
1tsp thyme
300ml chicken stock
120ml elmlea light singe cream
Small handful of chives
Method.
Start by seasoning and then frying off the chicken breasts, once browned take the breasts out and pop them in the oven to finish cooking. (around 20-30 minutes depending on how big they are) Add the onion to the frying pan. Once the onion is soft add the garlic, thyme and the lemon juice, cooking for a few minutes before adding the stock and the cream. Turn the heat down and simmer for 10 minutes and then pop the cooked chicken back into the sauce and add in the chives. Serve and enjoy.

Creamy tomato and sausage spaghetti

Love a quick and easy pasta dish and this one ticked all the boxes. Only took just over 10 mins to make and it was so delicious 🤤.
Ingredients.
300g spaghetti/pasta
8 sausages (chopped)
1 onion (finely diced)
2 cloves garlic (finely grated)
1tsp sage
1tsp thyme
2 tbs tomato purée
200-300ml pasta water/hot water
1 chicken or pork stock cube
120ml light single cream.
Fresh herbs to garnish (I used parsley)
Method
Start by putting your pasta on to boil. Then fry off your sausages in a pan, breaking them down into smaller bits. Add in your onion and allow to soften. Once soft add in your garlic and cook for a minute then add in your herbs and tomato purée. Cook out for a couple of minutes and then add the pasta water and stock cube.. reduce this down a little and then add in the cream. Add in your cooked pasta and mix around keeping it on the heat until the sauce sticks to the pasta. Serve and enjoy.

Lemon-poppy seed oats🍋🥰🥣 (recipe below👇🏻) I’m really into lemon flavored foods lately😛 such an underrated flavor🙌🏻 who agrees?🍋😏⁣

Had this bowl at like 7 am which I think is a record😂 usually it’s more like at 12🤪😴 woke up at 3 am so maybe that’s why I was hungry by 7😬⁣

✨toppings✨⁣
Banana, nectarine, blueberries, strawberries, vanilla chia pudding, peanut butter and puffed quinoa🍓🫐🍌🍑🥜⁣

🍋lemon-poppy seed oats🍋⁣
🌟ingredients🌟⁣
- 60g quick oats ⁣
- 300ml water (or milk) ⁣
- Juice of half a lemon ⁣
- Lemon zest (as much as you’d like! I used a little less than half a lemon) ⁣
- 2-3 tbsp maple syrup (or other sweetener) ⁣
- Pinch of salt ⁣
- 1 tsp poppy seeds⁣
🌟method🌟⁣
1. Add all the ingredients into a pot, mix well and bring to a boil. Turn down the heat and let it simmer while stirring for about 5-10 mins. ⁣
2. Optional: mix in an extra little splash of milk at the end to make it extra creamy😏⁣

Steak rolls with a cheesy peppercorn sauce

What a treat this was 🤤 even the kids loved the pepper sauce and the rolls were a massive hit too. We’re big sourdough lovers in this house and I will definitely be buying these again.
Ingredients.
2 steaks (I used rump)
4 rolls
Salt and pepper to taste
1/2 onion (finely diced)
1/2 tbs mushroom ketchup/Worcestershire sauce
1/2 tbs butter
1/2 tbs flour
100ml Hot beef stock
100ml milk (warmed)
30g cheddar
Method.
Start by seasoning and cooking your steak (to your liking) then remove from the pan and set aside to rest. In the same pan fry off your onions until soft, add in your mushroom ketchup and the peppercorns next add in your butter and allow to fry off for a minute. Then add the flour, mix well and let it cook out for a minute or so before slowly adding in the stock. Add the stock and milk bit by bit stirring constantly until the sauce is thickened. Let it reduce down slightly and add in your cheese. Check it for seasoning. Slice your steak, add it to the roll and top with the cheesy peppercorn sauce. Serve and enjoy.

Creamy chocolate chia pudding😍🍫 (recipe below👇🏻) I absolutely love chia pudding!! I find the texture really fun but I know some people hate it🤪😂 but you need to make it right to make it nice😏⁣

- 35g chia seeds ⁣
- 1 tbsp cacao powder⁣
- 200ml plant milk ⁣

- 2 tbsp maple syrup (or any other sweetener you prefer) ⁣
🌟method🌟⁣
1. Add all the ingredients into a jar. Shake it well. ⁣
2. Mix again after 10 mins to avoid any big chunks. ⁣
3. Leave it in the fridge overnight or for a few hours. ⁣

One pot creamy chicken, bacon and tarragon rice.

Haven’t had this in a couple of months and we all really enjoyed it last time I made it so decided to pop it on this weeks meal plan. Such a tasty, easy dinner.
Ingredients.
500g chicken (diced)
150g smoked lean bacon
1 onion (finely diced)
2 cloves garlic (grated)
2tbs tarragon
1tbs white wine vinegar
250g uncooked rice
120ml light single cream
600ml chicken stock
Salt and pepper to taste
Method.
In a large frying pan with a lid, add your chicken and cook for around 5 minutes or until browned. Add your onions, bacon, tarragon and cook until the onions are soft and bacon is cooked, then add the garlic. Add the white wine vinegar and cook for a few minutes, then add the uncooked rice. Once the rice is all mixed in add the cream and the stock and cook on a low heat with a lid on for around 15-20 minutes or until the rice is cooked through, add more liquid if necessary. Once cooked, taste and season if necessary. Serve and enjoy.

One pot Boursin and smoked sausage pasta

Had some Boursin left over from last weeks dinner so decided to make this delicious dinner. It went down so well, we all absolutely loved it and will definitely be having it again.
Ingredients.
300g pasta (uncooked)
160g smoked sausage
1 onion (finely diced)
2 cloves garlic (grated)
2tsp garlic granules
60g cheese
500ml milk (warmed)
600ml hot chicken stock
80g extra mature cheddar
Handful of fresh chives
Salt and pepper to taste
Method
Start by frying off the smoked sausage and onion until the onion is soft then add the garlic and garlic granules. Cook for a minute and then add the Boursin, stir it in until it’s melted then add the uncooked pasta, milk and stock.
Cook on a medium heat for around 5-10 minutes stirring occasionally, then pop a lid on and cook on low for another 5-10 until the pasta is cooked through and the sauce has thickened. Stir through the chives and check for seasoning then top with the cheese and pop under the grill or in the oven to melt. Serve and enjoy

COFFEE YOGURT BOWL☕️🤍

250g yogurt (half normal half skyr)
1 tsp instant coffee powder
1 tbsp maple syrup

toppings✨

domino cookies

mix all the ingredients together until smooth! enjoy with your favorite toppings!🥰

I make these I tell myself I should make them more often because they’re just so good and so easy but somehow I always forget😩😂 do you prefer crepes or pancakes?😏🥞⁣

🥞Vegan crepes🥞⁣
(Makes about 6 thin crepes)⁣
🌟ingredients🌟⁣
- 125g all purpose flour (whole-wheat works too) ⁣
- 1 tbsp sugar⁣
- Pinch of salt ⁣
- 20g vegan butter (you can use vegetable oil as well) ⁣
- 260ml soy milk ⁣
🌟method🌟⁣
1. In a big bowl combine the flour, sugar and salt. ⁣
2. Gradually add the soy milk and melted vegan butter while whisking (to make sure the batter is smooth and doesn’t have lumps). ⁣
3. On a hot pan lightly greased with oil/butter pour some batter with a ladle and then spread it evenly in the pan. Once it’s golden brown flip it with a spatula and cook for another 2-3 mins. ⁣

Ingredients.
300g pasta (uncooked)
2 salmon fillets
1 red onion (thinly sliced)
2 tbs light butter
2 tbs plain flour
300ml milk (warmed)
80g extra mature cheddar
3-4tbs reduced fat pesto
1tsp mustard (optional)
Salt and pepper to taste
pasta water (enough till you get the right consistency)
Method
Pop your pasta on to boil. Meanwhile, fry off the salmon and pop it to the side. In the same pan fry your onion until the onion is starting to soften. Add in your butter, and once it’s melted add the flour, mix together, and allow to cook out for a minute. Pour in the warmed milk slowly, bit by bit, stirring constantly. Once the sauce has thickened, add in your mustard, cheese, pesto and then season to taste. Add in your cooked pasta and mix, then add in the pasta water until you get the perfect creamy consistency. Flake through the salmon and mix together. Serve and enjoy.

Cheesy Mexican loaded potatoes

Ingredients.
500g chicken (diced)
1 onion (finely diced)
2 cloves garlic (grated)
2 peppers (diced)
1-2tbs Mexican seasoning
120ml light single cream
200ml chicken stock
120g cheese ( I used a mix of cheddar and Red Leicester)
Chilli and fresh coriander to garnish. - you could always add sour cream, guacamole and salsa too.
Method.
Quarter your new potatoes or cut normal potatoes into cubes, season with 1/2 Mexican spices and salt and then pop in the air fryer/oven for around 20 minutes or until crisp.
Add your chicken and half the Mexican seasoning to a large frying pan and cook for around 5 minutes or until browned. Add in your onions and peppers and cook until the vegetables are soft, then add the garlic. Add the cream and the stock and cook on a low heat for around 5-10 minutes or until the sauce has thickened. Once the potatoes are cooked top them with the creamy chicken mix and sprinkle over the cheese. Pop it under the grill until bubbling and golden. Serve and enjoy.

I made the same pancakes last year and everyone told me my bunny looked like a corgi😭 does it look like a corgi again?😂🐶⁣

I used banana & blueberries for the paws🫐🍌🐾 and a dollop of yogurt sprinkled with shredded coconut for the tail🐰🥥⁣

🥞Fluffy vanilla protein pancakes🥞⁣
(Makes around 2 servings)⁣
🌟ingredients🌟⁣
- 70 g flour⁣
- 40 g vanilla protein powder⁣
- 1 tsp baking powder⁣
- pinch of salt⁣
- 225 ml plant milk⁣
- oil for cooking⁣
🌟Method🌟⁣
1. Start by combining all your dry ingredients in a bowl.⁣
2. Add the milk and mix well. (Depending on your protein powder you might need to add more/less milk)⁣
3. Cook them on a pan with a little bit of oil and flip them when bubbles appear on the pancake.

We’ve not had this in a couple of months and the kids have both asked for it quite a few times so thought I’d pop it on this weeks meal plan. It’s such a delicious dinner, just can’t Boursin.
Ingredients.
500g chicken (diced)
50g chorizo (diced)
1tbs garlic granules
1/2tbs paprika
1 onion (finely diced)
2 cloves garlic (grated)
250g uncooked rice
60g cheese
300ml milk (warmed)
500ml hot chicken stock
80g extra mature cheddar
Salt and pepper to taste
Method.
Fry your chicken in a large frying pan with a lid, season with the garlic granules and paprika and cook for around 5 minutes or until browned. Add your onions and chorizo and cook until the onions are soft and chorizo is cooked, then add the garlic. Add in the Boursin and cook until it’s melted in, then add the uncooked rice, the milk and the stock and give it a quick mix. Cook on a low heat with a lid on for around 15-20 minutes or until the rice is cooked through, adding more liquid if necessary. Once cooked, taste and season if required, then sprinkle with the cheddar. Pop it under the grill until golden and bubbling and garnish with fresh parsley. Serve and enjoy.

BANANA BREAD OVERNIGHT OATS🍌💛

banana bread overnight oats✨

60g oats
100ml almond milk
100g greekstyle yogurt
pinch of cinnamon

toppings✨
banana
blueberries
maple syrup
puffed amaranth
slice of banana bread
cinnamon apple spread

mix all the banana overnight oats ingredients together and let them sit in fridge overnight or at least half an hour.

One pot Cajun sausage and prawn pasta

Another one pot pasta and another winner 🤤 we all absolutely loved it and was such a nice change to have prawns, the kids loved them but Steve’s not a fan so I did him some chicken 😂.
Ingredients.
20-30 prawns
160g smoked sausage
1 onion (finely diced)
2 cloves garlic (crushed)
1tbs tomato purée
1-2 tbs Cajun seasoning (depends on taste)
500ml hot chicken stock
500ml warmed milk
300g pasta
60g cheddar
Salt and pepper to taste
Fresh parsley to garnish
Method.
Season the prawns in half of the Cajun seasoning and then fry. Once cooked remove the prawns from the pan and cover with foil until later. Into the same pan add in your onions and sausage, when the onions are soft add in the garlic, tomato purée and the rest of your seasoning. Cook for a minute or so and then add in the pasta, stock and milk and give it a good mix. Cook on a medium heat for around 10 minutes stirring occasionally, then pop a lid on and cook on low for another 5-10 until the pasta is cooked through. Pop the prawns back into the pasta and stir through the cheese until melted then season to taste. Serve and enjoy.
