Cilantro cauliflower rice shrimp bowl
-Cook frozen shrimp with flavor gods fiesta seasoning. Add water as needed if they start to stick to pan. Squeeze of lime when nearly done cooking.
“Rice”
1 cup of garlic flavored frozen riced cauliflower mixed with fresh chopped cilantro and a squeeze of lime juice
Serve shrimp on top of riced cauli with 1/2 cup of hot rotel
And I added a little salsa verde Bolthouse salad dressing on top of shrimp

6 Portabellos cleaned
10oz blazing buffalo chicken deli sliced
2 oz low fat cheese
Load em up and bake at 400 for 12 minutes

With the happiest of tears I’m making this post! I have been on BP meds for 16 years! One after another until there were 5 a day! Atenolol 100mg (2/ day 50mg) amlodopine 10mg, HCTZ 37.5 mg, triamterene 25mg and a depression pill here or there and some gout meds.
Friday I took my last BP pill.... my BP is holding steady! I haven’t been this healthy in decades!

Vulnerability post: So this is what life looks like from one year to the next. A year ago today I started my healthy living / weight loss journey with my health coach Jodi Deppert Ghelli. I have navigated through every holiday, birthday and numerous vacations, date nights, etc. oh and don’t forget a QUARANTINE! I am down 80 lbs (86 was my lowest before quarantine) so I’m back on track and refocused but have zero regrets. I have NEVER stuck to anything for a year! This is my new “normal” My health is so dramatically improved year over year it’s insane. My risk factor a year ago for Covid would have been alarmingly much higher than it is now. I am on one small dose of BP medication as opposed to 4. I can walk around with ease including stairs! My energy is through the roof. This journey had saved me and God willing adding more years to my life. If you or someone you know wants to talk to me about how to change their story, please private message me 🧡
Ever try Palmini Pesto!? Yum!!! This dish is so versatile! I had lean turkey meatballs but chicken would have been just as good or I could have used ricotta cheese for totally vegetarian option! 🧡

If you have not tried palmini pasta (hearts of palm actually) you are missing out!! A cross between pasta and spaghetti squash texture. I found mine on amazon and I’m trying crockpot method to get maximize softness of the noodle. I’ll report back later.
2 cans of palmini pasta
1/3 jar Raos sauce
1 packet lean turkey meatballs from Frys-Kroger
Drain pasta, rinse with plenty of water then soak in unsweetened almond milk for 30 mins, drain

Spicy Orange Slow Cooker Chicken- 4 servings
Chicken breasts (6 oz per serving)
Walden farms maple syrup 4 tablespoons
Crushed garlic 1 tsp
Cayenne or Sriracha to taste *
Orange extract 1 cap
2 tablespoons soy
4 tsp sesame oil
Mushrooms or zucchini 2 cups
Broccoli 2 cups
Serve over cauliflower rice 1/2 cup per serving is
Cook on low 4 hours

‼️How my life has changed so much in less than a year!‼️
Just got my annual bloodwork back from my Dr and she is so happy for me. I have not had any gout flares or inflammation pain in at least 5 months. I went from barely being able to walk to living life my way! Dancing several nights a week, going to the park with my grandkids, standing normal periods of time, running up and down my stairs several times a day with ease! These may be small accomplishments to most but they were life changing for me! Health is the most valuable thing we have.
