Dinner today was all about fresh and simple.
I had fresh sweet onion, fresh tomato, mashed potatoes made from fresh hold potatoes, fresh squash (sautéed), fresh strawberries, and leftover lentil loaf.
I love the season of fresh fruits and veggies.
Dinner yesterday was so easy and it was quite delicious.
I boiled green beans and topped them with chili lime seasoning, air fried a bag of frozen sweet potatoes at 425 degrees for 20 minutes, and had a can of brown lentils topped with diced onions.
So good!
Back to the basics for me today. I had roasted broccoli and air fried potato chunks for lunch today. I topped the broccoli with a store bought BBQ mustard sauce.
Cauliflower “steaks” are going in the oven for dinner tonight.
I am currently working on changing up my diet a little because I think some things have been bothering me, which is why you haven’t seen a lot from me lately.
If you’re looking for potato toppings, avocado and everything bagel seasoning are great!
Dinner last night was quinoa with diced onion and salsa as well as roasted veggies. Super easy and quite delicious!

Dinner tonight was roasted broccoli, roasted sweet potato cubes, and air fried tofu. Delish!
This picture is not the greatest, but I promise that it was the best tasting, simple thing that I could have made for dinner. I opened a can of fat free refried beans and heated them in the microwave. I then microwaved a bag of frozen jasmine rice and topped it with salsa.
This dinner took about 5 minutes to make and it was very satisfying. Good food doesn’t have to be complicated. Keep it simple and it will be easier to stay on track.

A tasty dinner for me tonight…
I had a sautéed onion, jasmine rice topped with salsa, and hearts of palm spaghetti with a can of fire roasted tomatoes and date syrup.

Let’s make dinner
This was me having dinner after work on my way to the gym today. I sipped on tomato soup and had a banana on the go. Yum, yum!
Last night’s dinner was heavy on the veggies and light on the starch.
I had roasted butternut squash and Brussels sprouts, roasted okra, hearts of palm noodles with tomato sauce and topped with balsamic vinegar/nutritional yeast, rice with corn and salsa, and a few lentil balls.
The best part, I didn’t eat all of it and have leftovers for lunch today. 🙂
I went to Trader Joe’s for the first time in several months. Their oat milk is the best store bought plant milk available. The only ingredients are oats and water. If you haven’t had it, you’ve got to try it if you’re near a Trader Joe’s.
Simple…it’s what’s for dinner. I air fried a bag of frozen sweet potatoes, carrots, and zucchini at 450 degrees for about 35 minutes. I sautéed a bag of frozen diced onions, bell peppers, and celery along with a bag of frozen green peas, and spiralized zucchini. I added balsamic vinegar to the sautéed veggies, though they were delicious without it.
That’s it! Easy peasy. 😁
Yesterday’s breakfast was delish! I made waffles from oat flour, water, and 2 red delicious apples blended in my Vitamix blender. I topped the waffles with blueberries and strawberries that I heated in a pan to make a “syrup”.
It’s Sumo season again! My favorite Sumo oranges are back. They are ugly, but they are the best oranges. They are easy to peel, not messy, and are so sweet and juicy. Don’t pass these by in the store. You definitely want to try them.
More cruise food…
Roasted cauliflower, beet hummus, gazpacho, and a green juice.
You asked for cruise food photos and here they are so far. These have all been vegan, but not necessarily healthy vegan. They have definitely had oil in pretty much all of the dishes. I’ve had two salads as well, but didn’t take photos of them.
We are getting on a cruise ship today, but I had breakfast at the hotel this morning. I had oatmeal that was topped with fruit, shredded coconut, and pistachio.
Greens for lunch! I had sautéed kale and an onion with 1/2 cup jasmine rice mixed in. Yum!

Christmas morning breakfast time!
I made waffles using oats, almond milk, almond milk yogurt, apple butter, cocoa powder, and water.
I normally make a syrup topping with fruit, but I didn’t want anything sweet this morning because I wanted to enjoy my freshly made juice.You could also top the waffles with date syrup.
My freshly made juice includes kale, celery, carrots, pink lady apples, and mandarin oranges.

Merry Christmas! I hope you all have a wonderful time with your family and friends during this season. Create memories and don’t worry if the dishes are washed or if the house is cleaned. Cherish each moment with all of those close to you as you never know what tomorrow may bring.

What is on your menu?
A nice veggie soup is comforting, especially when you don’t feel well. I made veggie soup in the InstantPot this weekend. It was super easy to make. I put two bags of frozen veggies, a can of chickpeas, a can of tomatoes, and some date syrup in the InstantPot and cooked for 4 minutes. Then, I released the pressure. It was tasty and the warmth helped soothe my throat. Hopefully I’m on the other side of all the stuffiness and coughing.
My favorite…air fried potatoes! I cut these potato rounds from previously cooked russet potatoes that I had cooked in my InstantPot. I air fried them at 450 degrees for 23 minutes. They made a great dinner tonight.
What’s for dinner? A bowl of pinto beans and diced onion for me. Yum!

Happy Thanksgiving! I ended the evening with a bowl of jasmine rice topped with chili powder, nutritional yeast, dried onions, chives, and hot sauce.
