before + afters

there was a time I would stare at them and wonder if there was ever a chance of me getting to an “after”.

I just knew I didn’t have whatever it was I needed in me to get there. It was more than fatloss, it was the journey that I knew I’d need to take to get to my “after”. It felt too big to even start.

I waited until it felt right, I waited until I thought I could do it, I waited until someone helped me. The thing is, the feelings and the help didn’t come until I did it anyway.

It never felt right until after I built up consistency that boosted my confidence.

Then it felt right.

Confidence grew and then I felt strong enough. It started to unlock where I wanted to go, and my new confidence led to me making new friends with the same goals.

then I found the help I needed.

It may seem impossible. It may not “feel” right when you take the first step. But take that second and third step anyway and watch what momentum does.

Ranch Alfredo ingredients ⁠

I garlic clove minced⁠
Shrimp cleaned and deveined⁠
1/4 cup white wine optional⁠
2 Tbls butter⁠
Redmond Salt⁠
Pepper⁠
1 tsp or more Ranch Seasoning by Flavor God⁠
1/2 cup or more cup heavy cream.⁠⁠⁠
In a nonstick pan melt the butter and sauté garlic and shrimp. As the shrimp starts to cook, pour in the wine and reduce to half. Season with salt and pepper, then add the cream. As the cream starts to thicken add the Ranch seasoning and adjust accordingly. Serve over the steak and enjoy!

👉🏻Ingredients for the sweet potato crusts⁠

▪️1 cup fully cooked sweet potato⁠
▪️1 egg⁠
▪️2/3 cup oat flour⁠
▪️1 tablespoon coconut flour⁠
▪️2 tablespoons nutritional yeast⁠
▪️1 teaspoon garlic powder⁠
▪️1 teaspoon apple cider vinegar⁠

👉🏻Instructions⁠
▪️Preheat the oven to 400⁠
▪️In a bowl, wisk together the egg. For the sweet potato, bake at 425 for 50 minutes. Add in the sweet potato and all other ingredients. Mix together well.⁠
▪️Press into a dough in the bowl⁠
▪️Make 2 mini pizzas or 1 regular pizza⁠
▪️Line a pan with parchment paper. Place the dough on a pan and flatten out to about 1/2 inch thick.⁠
▪️Bake at 400 for 30 minutes⁠
▪️Remove, flip and bake 10 more minutes⁠
▪️Remove and add toppings. Bake 5-10 more minutes of making a traditional pizzas!⁠

Mushroom Avocado Toast!🥑⠀⠀⠀
Recipe:⠀⠀
Balsamic Mushrooms:⠀
16 oz cremini mushrooms (450 g)⠀
2 tbsp olive oil⠀
pinch sea salt⠀
1 tbsp almond butter⠀
3 tbsp balsamic vinegar⠀
1 tsp thyme⠀
For toast: 2 slices thick sourdough bread and 1 small avocado⠀⠀⠀
1. Slice cremini mushrooms and add to skillet on medium-low heat with olive oil and a pinch sea salt. Cook mushrooms, stirring occasionally for 10 minutes (letting the mushrooms sweat and release their natural waters).⠀
2. Combine almond butter, balsamic and thyme in a small bowl. Whisk together. Turn skillet to medium-high heat and pour liquid mixture over mushrooms. Continue cooking mushrooms, stirring often until liquid is thickened and mushrooms are golden browned. (5-10 mins)⠀
3. To make toast: Toast two slices of thick sourdough bread. Mash 1 small avocado onto toast and top with balsamic mushrooms. Sprinkle with sea salt and more fresh thyme.⠀⠀⠀

🍣 Eat or Pass? 🥒 cucumber sushi
"Ingredients:
1 cucumber
cream cheese
avocado
Paprika or something similar
Prawns (or salmon, tofu)

Preparation:
Cut the cucumber with a vegetable peeler, dry with a paper towel. The cucumber strips were too long for me, so I cut them in half. Brush the strips with cream cheese. Lay out the avocado, bell pepper and prawns evenly and roll them up into a roll. Sprinkle with sesame seeds as desired. Now you can enjoy it with low carb soy sauce."

Simple + Delicious Spiced Shrimp Taco Bowl 🍤😋
This lineup just feels like a vacation.
The shrimp is spiced with a mix of fennel, smoked paprika, & red chili flakes and a little sea salt. So simple yet so good. I served it along with a big base of butter lettuce, half an avocado, some shredded cheese, and a homemade pico with red & yellow tomatoes, cilantro, red onion, and lime juice. Pulling off the rails helps slow down too, which is a plus, though a lot of people are recently telling me they eat the tails!!
Here is how I made everything:
1.First, I mixed the shrimp with the spices. I took 1lb wild shrimp and drizzled 1 tablespoon olive oil on it and spiced with some crushed fennel seeds (about 1/2 to 1 tablespoon), some high quality smoked paprika (1- 1.5 tbsp), garlic powder (or a ton of fresh minced garlic), a little sea salt, and added drizzle with some olive oil. Massage the spices well and let this sit for 15-30 mins. You can just get started right away if you’d like but letting it soak up the flavors goes a long way.
2.When you’re ready to make the shrimp, get a pan on medium heat, add 1 tablespoon of oil/butter of your choice, and cook on each side for about one minute. Dont over do shrimp as it gets rubbery.
3.Once you’ve got your shrimp done, I started with a big base of greens and added the rest of my ingredients. I added 1/2 avocado, cheese, and the pico. Season the pico however you like to taste, I like a little extra lime juice, fresh jalapeño, and salt and pepper. Pico is just finely chopped onion, tomatos, fresh jalapeño, and fresh cilantro & lime.

I hear so many people say that dairy bothers them and that they feel much better when they cut it out. No doubt, some people do not possess the digestive enzymes to optimally digest dairy and dairy can cause flare ups in many. But there are also many cases where it’s the type of dairy consumed that is the problem.
-
Most packaged dairy from the store is hardly dairy at all. It is highly processed and has had most of its beneficial properties removed during that processing. It is also common for packaged dairy to contain weird fillers/preservatives and added sugar. Especially low fat packaged dairy.

Raw whole food dairy, which can be found at most farmers markets, is real dairy. It still contains beneficial bacteria and nutrients without the additives. Many people who think that they are dairy intolerant find that their bodies handle real dairy much better than the processed stuff.

If you want to keep dairy in your diet but don’t have a farmer or farmers market to source from, there are sources of store bought dairy that have much cleaner labels but even these choices are still processed and thus voided of many beneficial nutrients.

♥️ Shredded chicken taco meat. Add 3 large chicken breasts in the crock pot and top it with 1 tbsp taco seasoning and 1-1.5 cups of salsa. Cook in the crock pot until the chicken easily shreds. Once you shred it allow it to sit for a bit in the liquid to soak up more moisture.
Fry the low carb tortilla in avocado oil and then sprinkle it with dry ranch seasoning before the oil dries.
Top it with your favorite toppings. We had shredded chicken, cilantro, lime juice, sour cream, cheese, sliced avocados and cholula hot sauce.
