IT’S HARD TO BEAT A FROZEN MARGARITA ON A HOT DAY. REFRESHING, FROSTY, AND DELICIOUS, IT’S THE PERFECT GROWN-UP SLUSHY.
INGREDIENTS
1 cup (250 mL) tequila
½ cup (125 mL) triple sec (orange liqueur)
¼ cup (60 mL) agave
¾ cup (175 mL) fresh squeezed lime juice
6 cups (1.5 L) ice
DIRECTIONS
Add all the ingredients to the Deluxe Cooking Blender in the order listed.
Replace and lock the lid. Press the wheel to start blending on the CUSTOM BLEND setting increasing to speed 9 for 20 seconds, or until the ice is broken down.
Yield:

I am creating a party for my birthday bash. You will want to be a part of this one. Giving free items away .....
Barbecue Chicken
2 tbsp (30 mL) olive oil
2 medium onions
¼ tsp (1 mL) salt
1 cup (250 mL) ketchup
½ cup (125 mL) water
1 tbsp (15 mL) Smoky Barbecue Rub
2 tsp (10 mL) apple cider vinegar
1½–2 lbs. (700 g–1 kg) boneless skinless chicken thighs
1½ cans (15 oz./425 g each) black beans (about 2½ cups/625 mL), rinsed and drained
1 lime
Dressing for Coleslaw
¾ cup (175 mL) Greek yogurt
¾ cup (175 mL) low-fat buttermilk
1 tbsp (15 mL) apple cider vinegar
2 tsp (10 mL) sugar
1 tsp (5 mL) Dijon mustard
½ tsp (2 mL) salt
¼ tsp (1 mL) black pepper
Coleslaw & Toppings
1 bag (14 oz. or 397 g) coleslaw mix
1 can (14 oz. or 398 mL) pineapple tidbits, drained
1 cup (250 mL) fresh cilantro leaves, plus additional for garnish
Optional: Fresh avocado slices
DIRECTIONS
Set the Quick Cooker to SEAR and press START. Heat the oil in the inner pot for 3 minutes.
Slice the onions using the No. 2 setting on the Simple Slicer, then cut them in half. Add the onions and salt to the inner pot. Cook for 3–5 minutes, or until the onions are softened, stirring occasionally. Press CANCEL.
Add the ketchup, water, rub, and vinegar; stir. Add the chicken.* Place the wire rack into the inner pot with all three feet touching the bottom.**
Add the black beans to the Ceramic Pot. Juice the lime into the ceramic pot with the Citrus Press. Cover with the stretch-fit lid. Place the ceramic pot into the wire cradle and lower it onto the wire rack. Lock the lid and select the CHICKEN/POULTRY setting. Adjust the time to 7 minutes and press START.
Add the dressing ingredients to the Measure, Mix & Pour® and shake well to combine. Place the coleslaw mix into a medium bowl. Top with about half of the dressing and stir in the pineapple. Grate the cilantro into the bowl with the Herb Mill; stir to combine.
When the timer is up, press CANCEL. Press the steam-release button to manually release the pressure. Remove the ceramic pot and transfer the chicken to a bowl*. Chop the chicken with the Salad Chopper.
Set the Quick Cooker to SEAR and press START. Let the sauce reduce for 4–5 minutes. Add the chicken and stir well.
Add the coleslaw, chicken, and beans to a serving bowl. Top with avocado slices and additional cilantro.

ONE-POT CHICKEN DINNER

INGREDIENTS
1 whole chicken (3 1/2-4 lb/1.6-1.8 kg)
Canola oil for spritzing
3 tbsp (45 mL) Bell Pepper & Herb Rub (or any Rub or Seasoning Mix of your choice)
Herbed Rice Variation Garlic Mashed Potato Variation
2 large carrots, peeled and coarsely chopped with Food Chopper
1 medium onion, coarsely chopped with Food Chopper
1 cup (250 mL) uncooked converted white rice
2 cups (500 mL) chicken stock or broth
2 garlic cloves, pressed with Garlic Press
1 tbsp (15 mL) Bell Pepper Herb Rub (or any Rub or Seasoning mix of your choice)
2 lbs (1 kg) “B” size unpeeled Yukon gold potatoes
6 garlic cloves, peeled
½ tsp (2 mL) salt
¼ tsp (1 mL) pepper
DIRECTIONS
Remove and discard giblets and neck from chicken cavity. Trim excess fat from chicken with Professional Shears, if necessary.
Place chicken onto Flexible Cutting Mat; lightly brush with oil using Chef's Silicone Basting Brush. Completely coat outside of chicken with 3 tbsp (45 mL) rub.
Prepare Herbed Rice or Garlic Mashed Potatoes.
For Herbed Rice, place carrots, onion, rice, stock, garlic and 1 tbsp (15 mL) rub in Rockcrok® (4-qt./3.8-L) Dutch Oven; mix well. Place chicken, breast-side up, into Dutch Oven.
For Garlic Mashed Potatoes, Place chicken, breast side up, into Rockcrok® (4-qt./3.8-L) Dutch Oven. Arrange potatoes and garlic around chicken (see Cook’s Tips).
Microwave, covered, on HIGH 25-30 minutes or until internal temperature reaches 165°F (74°C) in thickest part of breast and juices run clear.
Remove Dutch Oven from microwave. Let stand 10 minutes (temperature will rise to 170°F/77°C). Remove chicken to Large Grooved Cutting Board; carve.
For Herbed Rice, stir before serving with chicken. For Garlic Mashed Potatoes, add salt and pepper; mash with Mix ‘N Masher. Serve with chicken.
Yield:
4-6 servings
