Slice Italian sausage links down the center and split open and then add one mozzarella cheese stick and pinch the top closed as much as you can. Lay in a casserole with your favorite marinara sauce on the bottom and a little on top of each sausage link. I sautéed chopped onions, peppers and garlic in olive oil and put on top of each sausage with a little grated Romano cheese and baked uncovered in a preheated 400 degree oven for 35 mins. Take out and top each one with a little shredded mozzarella cheese and bake for 7-10 more mins until bubbly. You can even broil for a couple mins. I served with a side salad and some gluten free pasta with some ripped basil on top. Definitely an easy and delicious dinner. Good enough to be eaten alone.
If you like Spinach, Artichoke dip you will love this. I mixed up some frozen spinach with a can of artichokes that I chopped, then added fresh chopped garlic, a little onion, a handful of mozzarella, and Romano and I had some Swiss so I threw a little of that in and not quite half of a block of cream cheese that I chopped up. Salt/pepper/garlic/oregano to taste and spooned on top of the portobello’s that I drizzled with olive oil and then I baked on 400 for about 20 mins. Gluten Free and Fast!

The Atco Lions has an annual Cold Weather Drive every year for Onyx Behavioral Healthcare Center on Jackson Road in Atco. This year it was run by Past President Anthony Zito, Past Secretary Carol Zito, Vice President John Shendock and Lion Tamer Phyllis Shendock. Together they collected all the accessories you see pictured and on Saturday with assistance from Secretary Ginny Wooster they handed everything out to the residents.
The Atco Lions Club recently presented the Renzulli Family a check to provide aid to them after a recent house fire that damaged their home. The club donated $500.00. An additional $700.00 was personally donated by several Lions Club members making the checks grand total, $1200.00. Other members also sent their donations privately to the family.

Out with the Old and in with the New! On June 16th we celebrated at our dinner meeting the countless hours of volunteering that the past officers have done and welcomed the new officers for the 2022-2024 term. All officers and committee chairs old and new received pins, awards and or plaques for their dedication to the club. Thank you to Filomena’s in Berlin for always providing a great meal and to Lion Arthur Orsi for your expertise in helping make this a great event.
