I hope you guys are having a great Saturday so far! I am prepping @ambitiouskitchen Gluten Free Peach Crisp to put on the grill tonight! Since I am only cooking for two, I just made half the recipe. Also about to whip up the salted coconut milk caramel to put on top after it bakes on the grill. I highly recommend doubling it and using the left for an iced caramel latte š I love making a crisp for dessert because I can make it ahead of time and pop it in the fridge until I am ready to bake it. Long Ferment Sourdough Bread
Sourdough bread became all the hype in 2020 and I am here for it! I have been gluten free for over 5 years and discovered I can tolerate sourdough bread as long as it has a long fermentation and uses organic and non GMO flour.
I am not celiac, but have had a number of health issues. One of the lifestyle changes that helped tremendously was going off of gluten completely. Fast forward to 5 years later, I have seen significant healing (still a journey though) and can enjoy this bread in moderation with NO symptoms.
I follow the recipe from @tartinebakery but transfer to the fridge to do a long cold ferment. I highly recommend getting their cookbook!
Also, doing a long fermentation is not just good for those with a gluten intolerance it is good for everyone! A long ferment makes the bread more digestible and helps neutralize physic acid.
Moral of the story, make some sourdough bread this weekend!

Have you heard of adrenal fatigue? The feeling of being āburnt outā or exhausted can be caused by adrenal fatigue which occurs as a result of chronic stress (which more than 1 million Americans suffer from) and adrenal insufficiency.
The adrenal glands, which sit on top of your kidneys, release a number of important hormones and are in charge of producing cortisol. Cortisol is often referred to as the stress hormone and plays a part in regulating blood sugar and energy.
When the body is stressed out, the adrenal glands release cortisol, which responds to a slower immune system and a change in blood pressure. Chronic stress and/or anxiety can over tax your adrenal glands and may cause them to not be able to produce enough cortisol. This is called adrenal insufficiency. Adrenal fatigue is a milder form of this.
Common symptoms of adrenal fatigue are body aches, chronic fatigue, nervousness, digestive issues, headaches, low blood pressure, weight gain or loss, and hair loss. In severe cases depression, vomiting, diarrhea and hyperpigmentation can also occur.
I was diagnosed with adrenal fatigue when I was 21 and have been battling it ever since. I was put on a steroid and was on it for almost 5 years to help support my adrenals. Recently, I discovered through a saliva test that my cortisol levels are super low in the afternoon/evening (this is when I get bad crashes). One of the things my practitioner recommended to do around lunch/early afternoon time is make this adrenal cocktail. It is super easy and very yummy! 3 ingredients that I guarantee you have in your kitchen.
* Ā½ cup fresh or organic orange juice
* Ā¼ teaspoon teaspoon cream of tartar
* Ā¼ teaspoon teaspoon pink Himalayan sea salt
Orange juice is a great form of vitamin C which is essential for your adrenals. The adrenal glands is where the highest concentration of vitamin C is stored in the body. Your adrenals then rely on vitamin C to make hormones, including cortisol. Cream o

Having to do low fodmap for 4 months has been an adjustment and having @thefodmapfactor to go to for recipes and tips have been super helpful! Granola Details Ingredients: 1 cup unsweetened dried coconut flakes Ā½ cup chopped pecans Ā½ chopped hazelnuts Ā½ sunflower seeds Ā¼ cup cocoa powder Ā¼ cup sunflower seed butter Ā¼ cup maple syrup 1 teaspoon vanilla extract Ā¼ teaspoon fine sea salt Optional: Ā¼ cup chocolate chips Directions: 1. Preheat the oven to 325 degrees F and line a cookie sheet with parchment paper. 2. In a large bowl, add all the ingredients except for chocolate chips (if doing). 3. Mix together until combined. 4. Spread on the cookie sheet and bake for 15 minutes. 5. Remove from the oven and stir the granola, making sure the granola is still touching (that is how you get clusters). 6. Put back in the oven for 5-7 minutes or until the granola is slightly browned. 7. Remove from the oven and put the granola back in the bowl and stir in the chocolate chips (should begin to melt). 8. Almond Fudge Brownies
#Flourless, #Vegan, and #Paleo Brownies. These are incredibly fudgy but with a nice crisp edge. Pair with vanilla ice cream and my goodness, they are insane.
They are super easy to make, and sure to be a crowd pleaser! They freeze well so it makes an easy go to dessert when you do not want to make anything. I generally keep a few pieces in the fridge and then store the rest in the freezer. We are still snowed in here in Nashville, so my weekend plans include these brownies and some Netflix.
