ver-sa-tile mushrooms....mmm so good!!
Thinly slice mushrooms. Add a bit of olive oil and 2 cloves of crushed garlic into a large skillet. Sauté the garlic, add the mushrooms. Add ver-sa-tile.
Tonight we will be eating them on sliced Tri-tip.
It's that time of year!!! Fresh hand mixed batches of B and S rubs are being made now. We will have them ready in a week or so!!!!
ver-sa-tile pumpkin seeds! Put some seeds in butter, sprinkle with ver-sa-tile, 300 degrees for 30 minutes or until they are light brown. Take them out and tempo them from the pan. They will continue you cook if you don't.
Sorry, it's been a while since I posted some photos and new recipes.
This is another one of my favorites.
#4 Low and Slow tri tip roast.
This is really simple.
Coat a tri tip in olive oil and then cover it in Low and Slow. I let it sit overnight in the fridge.
Pre heat oven to 450.
I put the tri tip on top of sliced potatoes, carrots and onions. I added a half a cup of beef broth. I dusted the vegetables in #3 ver-sa-tile.
I put the everything in the oven for 15 minutes at 450. Drop the temp to 325 and cook it until the tri tip has an internal temp of 155. I remove it from the oven and let it sit for 10-15 minutes before I slice it.
Serve it with some creamy hoarse radish. Enjoy!

Here's the B and S Rub No. 2 BBQ, on Tri tip. Cooked for 1 hour and 10 minutes on the Traeger at 325.

Tri tip is the California cut of meat. Some States don't even know what a Tri tip is. Last but not least today is No. 1 Sweet and Spicy. You got it...it works great on Tri tip as well. All four of our rubs on Tri tip!!!!
B and S Rubs No. 2, BBQ!!!!
Yes!!!! I bought a full bag of peeled tri tips from Costco. Peeled, means the large portion of fat on one side of the tri tip has been removed. Thankfully one of the tri tips still had a good layer of fat on it. Perfect for B and S Rub No. 4, Low and Slow. I covered it in Low and Slow, I plan on firing up the oven to 425, cooking it for 20 minutes and then dropping the temperature to 200 until it's medium rare. I'm looking for an internal temperature of 145 or so.

B & S Baby Back Ribs!!!!!
No need to go out and get a rib sampler at your favorite steakhouse.
Get some baby back ribs, cover them in a light coat of olive oil. This time I rubbed half of them with No. 1 Sweet and Spicy and the second half I covered in No. 2 Bbq.
I put the racks in food saver bags and sealed them up for tomorrow.
I post some after pictures.

I bought a whole chicken, halved it.
Covered it in a light coat of olive oil.
Rubbed the halves with No. 3 and Bbq'd them for 1 hour on the Traeger at 375.
Awesome!!!
In addition to making rubs, we love to cook and will be sharing some of our favorite recipes. I just finished a batch of a Christmas family favorite....Peppermint Ice Cream. I like the no cook version, here you go.
Homemade (extra creamy) Peppermint Ice Cream
4 cups heavy whipping cream
1 1/2 cup granulated sugar
1 1/3 cups of half and half
Vanilla extract
Fresh mint or mint extract
8 candy canes
Put the whipping cream into a bowl or stand alone mixer. Turn on low and slowly add the sugar. Once the sugar has been thoroughly mixed in add the half And half. Add vanilla and mint to taste.(I like the vanilla and mint to be really light)
Add the above mixture into your ice cream maker and follow the manufactures instructions.
Grind 5 candy canes in a blender. Turn them into dust.
Once the Ice cream maker has stopped or the mixture has the consistency of soft serve, remove from the ice cream maker and immediately put it in the freezer. I like to use thin plastic Tupperware containers.
Wait 20 minutes and then add the candy cane dust. Thoroughly mix in the candy cane dust.
Let the ice cream freeze for at least three hours. It's best if you let it freeze overnight.
Crush the rest of the candy canes into small pieces.
Scoop out the ice cream and sprinkle with the candy cane pieces before you serve it. Mmm, it's so good.
