Teri's Food Therapy

Check out this great recipe for Green Peas Pelau but with a slight twist. A great complex carb alternative for those shying away from rice. Get the recipe below

1 1/2 cups Quinoa rinsed
2 1/4 cups Water
1 1/2 cups Green Pigeon Peas
1 cup Coconut Milk
2 tbsps Olive Oil
1 small Carrot diced
2 small stalks Celey chopped
1/2 small-med Onion chopped
2 cloves Garlic minced
1 tbsp Ginger grated
1 med Pimento chopped
2 tsps Browning
Salt & Pepper to taste

METHOD

To a saucepan on high heat add rinsed quinoa and water, allow it to come to a boil then lower heat to med, cook for 15 mins (or until water has cooked off) cover with lid and let sit for at least 10 mins.

To another saucepan on med-high heat add olive oil, then in oil saute garlic, ginger, pimento and onion and cook for 1 min until fragrant and onions are translucent.

To the sauteed veges add peas, carrots and celery and mix well, then stir in coconut milk. Cover with a lid bring heat to low and cook for 20-25 mins until peas have softened.

Ensure all the liquid has not cooked off from peas you want at least a small amount to remain in the pan after the noted cooking time then add salt and pepper.

You then add the cooked quinoa and browning to the peas and stir well. Turn off the heat and cover with a lid for 5-10 mins to allow remaining liquid to be properly absorbed.

Serve hot with your fav stew, veges and salads.
ENJOY.
