When I am craving hot wings, but need something quick and easy, this is what I make. I throw everything into the crockpot and forget about it until about an hour before supper time when I bake the sweet potatoes - an almost completely hands off meal with minimal clean-up.
Buffalo Chicken Stuffed Sweet Potatoes
1 lb chicken breasts, boneless and skinless
1/2 c Frank’s RedHot wing sauce
1T coconut oil
1/2 t salt
1/2 t garlic powder
1/4 t cayenne pepper
4 sweet potatoes
1. Place chicken and next 5 ingredients into the crockpot. Cook on low for 6 hours.
2. Shred chicken and toss in the leftover cooking liquid.
3. Preheat oven to 425°. Wrap sweet potatoes in aluminum foil and bake for 1 hour, or until sweet potatoes are soft.
4. Cut sweet potatoes in half and pile high with buffalo chicken.
5. Top with homemade ranch, pair with a side salad and enjoy!
This week, I threw together a new meal and it couldn’t have been easier. We love the cauliflower rice from and I usually pair it with their Mandarin Orange Chicken or Kung Pao Cauliflower. To change it up, I picked up a 10 piece wing meal from with their General Tso’s sauce on the side. I chopped up the chicken, tossed it in the sauce and plated it with the cauli rice. So easy and delicious! I love taking our go-to meals and changing them up to try new things.

This year, I want to share more of my meal planning tips and recipes with all of you. I know how easy it is to get stuck in a rut when it comes to meal planning and then you have no desire to eat the food that you cooked. I’m hoping that by sharing my meal plans and recipes, you will get some inspiration and see that good food doesn’t mean a multitude of ingredients or complicated steps. Here is our meal plan for the week with two sheet pan meals, a delicious soup and an easy sandwich. Not every week will be this simple, but a busy week calls for easy meals.
