So we took a hiatus from One Pot Wonder. In all honesty, it was extremely hard with food prices, energy and work commitments to generate anything near the amount of money needed without charging 30 quid a serving. We have managed our 5k target through other means (Mark Talbots off-roading enthusiasm/ ingenuity knows no bounds). I had a moment of inspiration recently after a shoddy buttermilk chicken effort at a restaurant in the lakes, tonight I took to the kitchen to make my own version. Buttermilk chicken with coriander, chilli and homemade chipotle sour cream mayo. Feeling inspired - any suggestions for a side🍗👩‍🍳

Christmas charity Raffle!
Running a Christmas Raffle for St Mary’s hospice.

Generous donations from local businesses are coming in and already at over £100 in value. We will be adding more gifts and vouchers over the next few weeks and updating the list as we go.

These will make fantastic Christmas gifts for people and we will draw Saturday night the 9th December.

Most of our Thai curries we have been making at the moment contain Shrimp Paste as part of the authentic flavours. We are looking into fully vegan friendly options and testing some flavours to try and get a really tasty curry without the animal products. I have a feeling a Green Curry with Aubergines will be on the cards soon. Here is one I made with Tofu whilst camping last year (no-one wants raw king praws in their backpack)

Everest Base Camp St Mary's Hospice April 2024 26/05/2023

So the numbers have been calculated. We did 29 portions over last night and this morning. Plus a few people rounded up as a generous donation so we took in £141. The ingredient costs and extra containers were £91. We haven’t taken into account setup costs for the kitchen, equipment, labour or delivery costs. Profit margin was therefore only £1.72 per portion. Won’t be giving up the day job anytime soon BUT long story short is that we made £50 that has been donated to St Mary’s via our just giving page. Thanks for the orders, comments & feedback. We look forward to doing it again soon. By all means you can just donate if you wish.

The BioPak pots didn’t work so well last night so will be contacting the manufacturer as we have 580 of them left! 😂 They were bought with best intentions of being more eco friendly but unfortunately we had to resort to plastic for todays offering. We want to be a responsible business but can’t have soggy pots again!

Well first night of trading done. One of the most stressful things we have ever done. Managed not to fall out too much in the kitchen. We managed to fulfil all orders and deliver them personally to everyone around Barrow and Walney. 16 portions of King Prawn Panang curry and Sticky Rice. All paperwork filled out too. Thanks you all for the support. Another batch to do tomorrow for the NHS workers at Furness General Hospital and then I will add up the takings and costings and donate the difference to Charity.

Thanks for the support and the orders for food tonight and tomorrow lunch. That’s all I can manage food wise this week as away the weekend but we are also doing a Grand National Winners fund raising card. £5 a horse. 50/50 split between the winner and Hospice! Please let me know which horse you would like. First come first served.

Seems Prawn 🍤 Thai Panang Curry is more popular than Beef 🥩 Bolognaise. So if I can get 6 people below to say yes I will do Thai Curry with Jasmine Rice for delivery Thursday evening rather than Bolognaise for the same price £8 as a one off special. Let’s have your votes.

So our profile photo at the moment is our slow cooked Bolognaise sauce. It might not be an authentic Bologna recipe but with a soffitto base (onion, celery and carrot), beef mince, tomato passata and red wine it is certainly packed with flavour. I have done it with mushrooms too in the past but that could offend the purists! I may do a batch on Thursday. Pot of Bolognaise sauce 630ml (same size as Chinese take away) enough for two people ready to eat for £7 or I can supply cooked pasta for two (180 grams dry) for £1 delivered in Barrow or Walney. That’s £8 for a home cooked meal for two delivered to your door. There will be enough for 6 people so first come first served for 🚚 📦 Thursday Evening! All profits to St Mary’s Hospice as part of our Everest Base Camp trek next year with LMG Treks & Expeditions

Proud to announce we are using BioPak packaging for all our meals. This special container is made from BioCane which is sugarcane pulp. It’s carbon neutral, biodegradable, composable can be put in the freezer, microwave or even the oven. Bought in a bill of 600 units so should keep us going for a while!
