โ For garnishing: 1 pinch ground cinnamon

1๏ธโฃ Peel the oranges and remove the pith. Slice the peeled oranges anywhere between 0.2โโ (5 mm) to 0.4โโ (1 cm) thick.

3๏ธโฃ Cover with cling film and place in the fridge to chill and macerate for at least an hour.
4๏ธโฃ Arrange on dishes and give a last sprinkle of cinnamon. Serve cold.

1๏ธโฃ Heat 1 tablespoon oil in a large nonstick skillet over medium-high. Sprinkle chicken with ยฝ teaspoon pepper and ยผ teaspoon salt. Add chicken to pan; cook until done, about 4 minutes per side. Remove chicken from pan (do not wipe out pan).
2๏ธโฃ Add remaining 1 tablespoon oil to pan. Add mushrooms and thyme sprigs; cook, stirring occasionally, until mushrooms are browned, about 6 minutes. Sprinkle flour over mixture; cook, stirring constantly, 1 minute.
3๏ธโฃ Add stock to pan; bring to a boil. Cook until slightly thickened, 2 to 3 minutes. Remove pan from heat. Stir in butter, remaining ยผ tablespoon pepper, and remaining teaspoon salt. Add chicken to pan, turning to coat. Discard thyme sprigs before serving. Sprinkle with chopped thyme, if desired.

โ ยฝ cup fresh mozzarella pearls, drained and patted dry

1๏ธโฃ Preheat oven to 400 degrees F.
2๏ธโฃCombine 2 tablespoons oil, garlic, ยผ teaspoon salt and ยผ teaspoon pepper in a small bowl. Using a silicone brush, coat mushrooms all over with the oil mixture. Place on a large rimmed baking sheet and bake until the mushrooms are mostly soft, about 10 minutes.
3๏ธโฃ Meanwhile, stir tomatoes, mozzarella, basil and the remaining ยผ teaspoon salt, ยผ teaspoon pepper and 1 tablespoons olive oil together in a medium bowl. Once the mushrooms are softened, remove from the oven and fill with the tomato mixture. Bake until the cheese is fully melted and the tomatoes have wilted, about 12 to 15 minutes more. Drizzle each mushroom with ยฝ teaspoon vinegar and serve.

โ 1/3 cup extra virgin olive oil
โ 1 finely chopped large onion
โ 12 ounces of stemmed & chopped chard
โ 12 ounces of stemmed & chopped spinach
โ 1 thinly sliced jalapeรฑo or serrano pepper
โ 2 very thinly sliced medium gloves of garlic
โ 1/2 cup low-sodium no-chicken or chicken broth
โ 6 large eggs
โ 1/2 cup crumbled feta or goat cheese
๐ฏ๐๐พ๐๐บ๐๐บ๐๐๐๐
1๏ธโฃ Heat oil in a large skillet over medium heat. Sautรฉ the onion until soft but not browned. Add the chard an spinach, a few handfuls at a time.
2๏ธโฃ Stir often until wilted. Add jalapeรฑo (or serrano) and garlic and stir until the garlic turns soft (2 minutes).
3๏ธโฃ Add a pinch of salt & pepper and add the broth and butter; cook, stirring, until the butter melted and some of the liquid is absorbed, 1 to 2 minutes.
4๏ธโฃ Crack eggs over the vegetables in the skillet. Cover and cook medum-low-heat until the whites are set, 3 to 5 minutes. Remove from the heat and sprinkle with cheese. Cover and let stand for 2 minutes before serving.

Fresh tuna with Spanish Manzanilla Olive tapenade. Try this recipe yourself at home ๐งโ๐ณ

โ 10 Spanish Manzanilla olives
โ 1 teapspoon of minced capers
โ 1 teaspoon of lemon juice
โ 1 teaspoon of sherry vinegar
โ 1/4 teaspoon of fresh thyme
โ 3 leaves of fresh basil
โ 2 anchovy minced fillets
โ 5.5 ounce Tuna steak (sushi-grade, Pacific Albacore for example)

1๏ธโฃ Mix the minced Spanish Manzanilla olives with the capers, lemon juice, sherry vinegar, thyme, anchovies and minced basil in a small bowl.
2๏ธโฃ Place a cast iron pan over high heat and let it heat until it is very hot.
Then, the tuna:
3๏ธโฃ While the pan is heating, season both sides of the tuna with pepper and salt. Just before adding the tuna to the pan, pour the oil into the centre of the pan and place the tuna on top. Sear for 1.5 minutes, flip over and sear for another 1.5 minute.
4๏ธโฃ Remove the tuna from the pan, let it cool slightly and slice the tuna into 12 equal pieces.
5๏ธโฃ Place one piece of tuna on top of each cucumber slice, top with some tapenade, a little basil leaf, and some black pepper. Ready to serve.
