We will be showcasing our Philippine bean lineup with guest beans from Kalsada and Out of Office Roasters during the tasting session. We’re also proud to support two Philippine Specialty Coffee Competition 2023 Auction winners from Lanao del Sur and Ilocos Sur.

This time from Top 7 Arabica Winner, farmer Rogelio Balacuit from Lanao del Sur with a farm elevation of 1478 MASL. With a cupping score of 84.56, this Catimor-Natural variety showcases tasting notes of Fruity, Caramel, Grapefruit, Lime, and Nutmeg.

The Top 12 Robusta Winner is from Concepcion, Gregorio del PIlas, Ilocos Sur. Marielle Gannad's farm has an elevation of 800 MASL. With a cupping score of 82.41, this Robusta-Natural variety showcases tasting notes of Molasses, Cedar, Caramel, and Hazelnut.

Our third installment of this Balai Cacao collab comes in this unique infusion of Cacao Nibs and Bohol Asin Tibuok in this Artisanal Chocolate Bark.

The cacao nibs and chocolate used in this pack is grown, harvested and made masterfully by Balai Cacao. It is also drizzled with the rare artisanal salt called Asin Tibuok that is only made by a few families from Alburquerque, a town at the southern coast of Bohol.

If you’re looking for an interesting souvenir from Bohol, hoarding these jars might not be a bad idea at all!

In our pursuit of crafting a signature drink for our coffee bar, we’re excited to bring this nostalgic yet modern take on the humble sikwate that we’re calling the Bohol Dark Cacao Latte.

What makes this a really special cup of coffee is the fact that the dark cacao chocolate used in this drink has been grown, harvested and made masterfully by our own Boholano artisan partners from Balai Cacao.

A drink that we think best represents Bohol’s fine craftsmanship with coffee beans also proudly roasted in Bohol.

These Chocolate Bark and Chocolate-Covered Mangoes are part of our ongoing collaboration from our friends Balai Cacao.

We have 2 offerings at the bar that uses sweet Cebu mangoes:
(1) Chilli Mango Chocolate Barks (mixed with Cebu Dried Mango Bits and Chilli Flakes)

(2) Chocolate-Covered Dried Mangoes

Fair warning: Highly addictive and with a really good chance of consuming the whole jar in just one sitting 😆

We have some really good bar update! We now serve two types of espresso-based coffee that you can choose from depending on your mood for the day.

Our first bean hopper holds one of our mainstays which is a blend of two Arabica origins. This house blend pairs well with our milk based beverages.

Our second bean hopper holds our head roaster’s choice of seasonal Single Origin Philippine coffee that may vary from week to week and is on limited offering until supplies last.

Kalsada has always been at the forefront in championing Philippine Specialty Coffee and we’re proud to be roasting this Fine Robusta batch from their partner farm, Sitio San Roque. This farm has so much to be proud of as two of their lots were part of Blue Bottle Coffee’s very first Philippine Coffee release this year.

We lovingly bake our own old school fudgy brownies that definitely brings out some childhood nostalgia. For us kids, this takes us back to some of our favorite baking memories when our mom whips up this delectable afternoon snack. Pair it with hot Long Black or Iced Brown Sugar Cold Brew.

For the non-chocoholics, our Blondies might tickle your sweet tooth fancy - moist on the inside with a hint of crunch on the outside. This is our personal favorite especially when paired with some Salted Caramel Latte or Flat White.

Another Filipino coffee farmer that we’re happy to highlight is Ma’am Erlinda B. Dao-Ayan who came back to the PCQC 2022 competition and placed 6th for her natural-processed Robusta with a grade of 81.53, also from Ilocos Sur.

We’re proud to have participated in the Philippine Coffee Quality Competition (PCQC) Auction this year and we’re lucky to carry this microlot from coffee farmer Juana B. Bitongan of Ilocos Sur. We know it’s a challenge to consistently produce quality coffee but our farmers show that it is possible. Ma’am Juana’s natural-processed Robusta comes 9th in the competition this 2022 with a grade of 80.56. Drop by the bar and support Philippine Coffee through her coffee beans.

We will be hearing from Tere Domine, country director and co-founder of Kalsada Coffee. She is one of the most prolific individuals in the Philippine specialty coffee industry whose contributions cannot be discounted. A true convert who used to not enjoy coffee and whose background seems far-fetched from the industry, Tere now heads the farm operations of her team, bringing an interdisciplinary take on the coffee terrain. With her vast trainings and being a licensed Q Grader herself, she works closely with farmers and together, they learn and implement innovative ways to improve volume and quality. She dreams to have a coffee research center in the Philippines someday. Tere enjoys all things fermented.
