Chilli cashew sauce
Ingredients:
Olive oil
5 red chillis
6 garlic cloves
1 bag of Cashews
Pinch Chinese five spice
Pinch or salt
Pinch of sugar
Pinch of chilli flakes
Lemon juice (1/4 of a lemon)
Process:
Soak cashews in hot water.
Chop chilli and garlic.
Heat up a pan and add a generous amount of olive oil.
Add the chilli and garlic and fry for a couple of minutes, add spices salt and sugar.
Cashews should soak for at least 15 min.
Drain the cashews add them to a food processor along with the chilli garlic mix, add the lemon juice and water to help it all come together.
Blend until smooth and then enjoy!

Mix everything together until you can place it in a pan to cook on both sides until golden

Sweet potato curry with turmeric rice
Ingredients for 5:
3 cups of rice
2 garlic cloves
Teaspoon of turmeric
1 tablespoon of salt
For the curry:
2 large sweet potatoes
2 onions
Curry powder
Garam masala
Salt
Chilli flakes
1can of coconut milk
How to:
Cut the potatoes and onions into cubes.
Add the coconut milk in your pot on medium heat. Add in the onions and spices and wait till the onions soften.
Add the potatoes and add bowling water until the potatoes are covered. Put the lid on and cook for around 20/30 minutes or until potatoes are soft.
Whilst you wait start cutting some garlic and put it in a pot with a teaspoon of oil. Add in your rice and toast the rice with salt and turmeric. Slowly add water and cover. Add small amounts of water at the time and wait for the rice to Absorb it. This will make the rice fluffy and not sticky. Do not stir the rice!
Once all is cooked serve and enjoy!

This is perfect for a light lunch or dinner when you are trying to lose weight. I personally have as much as I want because it’s very low in calories. -

Mushroom spinach and onion risotto🍚😋the recipe is a big package of mushrooms, one large onion, half a bag of spinach, 4 cups of rice, 4 veggie stock cubes, salt, pepper, cumin, 15 mixed nuts blended with half a cup of oat milk. Add the veggies first then add the rice and spices, make your veggie stock on the side and add it in bit by bit. Keep the lid closed and when it’s almost done add your milk mix it in and close the lid again until the rice absorbed all the stock. Then turn off the heat and let the rice steam in the pot for 10 minutes. Serve with soya cream, spring onion and a bit of shiracha
