This luxurious Cauliflower Soup with parmesan crisp is perfect for every occasion, be it a simple weeknight dinner or a fab dinner party with friends! The secret to the extra creaminess lies in the secret ingredient I add before blending! Read below!
Ingredients 📝
1 Cauliflower head
1 garlic clove
1 onion
Fresh parsley
800ml vegetable stock
Parmesan (grated)
Pumpkin seeds (topping)
Salt & Pepper
Nutmeg
Handful of cashews
Method 👩‍🍳
1. Roast the Cauliflower heads for 30 mins until tender and save some as toppings
2. In the meantime, sauté your onion and garlic till softened. Set aside.
3. Add the stock and roasted Cauliflower and simmer for 20 minutes.
4. Blend and add the *cashews* for an extra creaminess!
5. Season with salt, pepper and grated nutmeg!
6. To prepare the parmesan crisp, grate some on a baking paper and bake in the oven for a few minutes.
7. Plate up and enjoy!!!

Did someone say chewy chocolate chip cookies!? For this start-of-the week treat I used chocolate chunks instead of chips! I chose two of my favourites, a classic bar 🍫 with hazelnuts and some roughly chopped dark chocolate

Breakfast options when visiting Budapest are limitless! When we visited we opted for their signature Shakshuka, with eggs, feta and sausage and their tasty French toast, filled with delicious túró, a Hungarian 🇭🇺 cottage cheese! Absolutely delicious!
Bonus final 📸 some poppy seed, berry and apple rétes from Normafa Park in Budapest, definitely a must try!

Italian inspired dishes are always my favourite! Looking for the perfect date night dinner option? Oyster mushroom & tartufo pasta matched with an excellent Pinot Noir 🍷 Scroll down for the complete recipe!
Here's what you need 🍽
300g Oyster mushrooms
1 large onion
2 garlic cloves
130g Dried pasta shapes
1 packet of Plant based cream
No number for this! 😆 Parmesan shavings
2 tspn Truffle paste
100ml White wine
Slice the mushrooms into bite sized pieces and fry in olive oil until crispy. Turn over to get an even sear. In a separate pan, sauté the onions and garlic and set aside. Once mushrooms are ready, stir in the onions, garlic and add the wine. Finish off with cream and truffle paste and voilà! Your dish is ready to plate! Don't forget to tag me if you make this dish!

Taking a trip down memory lane! These Jam & Cream biscuits were (and still are!) a family favourite! I was inspired by this delicious biscuit to create a Jam & Cream (Jammie Dodgers) Biscuit Cake 🎂
A light vanilla and strawberry 🍓 cake with a vanilla frosting and berry jam in the middle 🧁 topped with none other than Jam & cream biscuit halves! What's not to love? Have you ever tried these tea time favourites? 🍪
