Instant rava appe
It is also known as paniyaram. Its always my go to dish amongst all south indian recipe. Its a very easy, quick recipe while it taste too good. Main ingredients are sooji or rava, vegetables of ur choice i have used onion, green pepper, carrot, coriander, chilli-ginger paste, shredded coconut, yogurt & all dry masala along with south indian tempering.

Bucatini pasta with hint of pesto & garlic sauce
I thought it’s spaghetti but i was wrong. It’s spaghetti like pasta, bit thicker & hole in the center. .
I made it with pesto sauce which has basil leaves, garlic, usually contains pine nuts but can substitute with any kind of nuts, then olive oil, parmesan cheese, salt, few drops of lemon, some green chilies (usually it doesn’t have chilli but i like spicier version) then blend it until smooth paste.

Spices are backbone for any recipe because of its aromatic smell & unique taste. I have used black pepper, oregano, dried basil leaves & coriander leaves in this recipe.

Weekends to me are always about something heavenly delight on the plate for dinner and there couldn't be anything better than a North Indian Dish. This weekend I tried Amritsari potato stuffed kulcha and Amritsari style chole ( Chickpeas ) served with cold boondi and cucumber raita sprinked with red chilli powder and fresh mint. The entire dish is served with freshly cut zucchhini and Onion on the side with some squezzed lemon on top, salt and black pepper. Amritsari Kulcha is a complete meal in itself as it is stuffed with potatoes but its combination with chole is delicious in its own way. I baked this kulcha in oven but tava with high flame also works the best.

Medu vada with sambhar & cocount coriander chutney
Medu vada is an amazing south indian dish made up with urad dal & nothing else. I have added finely chopped green pepper, shredded carrot & green chilli. You can add choice of vegetables. It’s very simple to make but very tricky during part of frying as it has hollow centred part & has to deep fry into hot oil. I got very scared to fry first thereafter i got mastery into it. Definitely It was not a first attempt though😜. I kept trying until i made it. I think that’s what apply to all area. Hard work!! & never give up.
So urad dal is highly used lentil in most of south indian dishes & it has lot’s of fibre helps to improve digestive system, protects heart, boost energy & so many benefits. Ofcourse I can’t ignore frying part but sometimes cheating on diet is ok🤫 if u get to eat delicious south indian dish.😋

Kanda kairi pakora with aloo pakora, fried chilli & raw mango
It was raining all day & weather was cold enough to crave for pakora. I was waiting since long time for rain just to enjoy pakoras 😋
Kanda pakora is one of my favourite pakora & raw mango adds tons of flavour in it. I have tried chef .brar recipe. It tastes yum. Worth to try it for sure.

In frame:- Beetroot quinoa pulao
Healthy alternative with lots of nutrition. Beetroot is a popular superfood rich in iron, calcium and vitamins. If you hate eating beetroot alone then do try it with quinoa. I have made quinoa pulao with spices & added beetroot for healthy option.
Ingredients:-
1 cup quinoa
1/2 cup finely chopped beetroot
1 small chopped onion
1/2 cup chopped green pepper
Handful of finely chopped spinach
Finally chopped chilli garlic
Saute in oil with onion, green pepper, beetroot, spinach until lightly cooked then add quinoa & add red chilli powder, coriander powder, garam masala, pulav masala, salt as per taste & sprinkle some lemon juice. Serve with spring onion and coriander leaves.
