Made a simple keto taco salad for lunch. Ground beef with taco seasoning (whatever you have available), avocado, tomatoes, banana peppers, red onions, sharp cheese, sour cream, and of course.. lettuce and spinach 😂 I used Taco Bell hot sauce packets on top haha 😂 This was around 1000 cals (ground beef has a lot of cals 🥲).

🥑Cilantro Lime Chicken🥑 I LOVE the flavor of fresh cilantro and when it’s combined with lime and chicken, you just can’t go wrong. The robust flavors will keep you coming back for more, but I want you to figure that out for yourself.👉 Ingredients:

⭐️6 boneless skinless chicken thighs
⭐️1/4 cup chopped cilantro
⭐️1/4 cup lime juice
⭐️1 tablespoon lime zest
⭐️2 tablespoons olive oil
⭐️3 cloves garlic minced
⭐️1 teaspoon chili powder
⭐️1 teaspoon cumin
⭐️1 teaspoon kosher salt
⭐️1 teaspoon black pepper To Assemble Bowls
⭐️1 cup corn fresh or frozen
⭐️1 red sweet pepper
⭐️1 can black beans drained
⭐️1 cup shredded cheese
👉Avocado sliced (or guacamole)
⭐️Sour Cream
⭐️Salsa
⭐️Cilantro Lime Rice

👉Instructions:
1.Marinate: In a large bowl, whisk the lime juice, lime zest, cilantro, olive oil, garlic, and spices. Add the chicken and combine until the chicken is coated in the marinade. Cover and chill for 30 minutes or up to overnight.

2.Cook: Heat a grill or heavy-duty pan to medium-high heat and lightly oil it. Add the chicken and grill for 5-7 minutes on each side or until cooked through. Remove from heat and cover to rest for at least 5 minutes before slicing.

3.To the same pan (use foil or cast iron pan if on the grill), Add the sliced peppers and saute for 3-4 minutes or until tender. Remove the bell peppers and onion from the pan and add the corn and saute for 3-4 minutes or until warmed through.

4.Assemble: To a medium serving bowl, Add about ½ cup of cooked rice (we love this cilantro lime rice for burrito bowls recipe HERE), chopped romaine lettuce, grilled chicken, cooked bell peppers & onion, beans, corn, sour cream, avocado, and your favorite salsa.

Baked Sage Chicken Meatballs

2 oz fresh italian bread, diced
½ cup warm water
2 tbsp butter
1 shallot, minced
4 garlic cloves, minced
1 tsp granulated garlic
¼ tsp crushed red pepper
1 ½ lbs ground chicken thigh
¼ cup grated parmesan cheese
2 tbsp chopped fresh sage
2 tbsp chopped fresh parsley
½ tsp kosher salt
Parmesan Orzo

2 tbsp butter
8 sage leaves
1 shallot, thinly sliced
1 cup orzo
1 cup dry white wine
1 small handful fresh thyme sprigs, tied in kitchen twine
1 ½ cups chicken stock
⅓ cup heavy cream
2 oz fresh spinach (approximately 2 cups)
¼ cup grated parmesan cheese, plus more for serving
freshly cracked black pepper
