If you live in the Southwest suburbs of Chicago, you've gotta check out Avocado Theory in Tinley Park. They offer a variety of avocado based meals, but also offer gluten free and vegan options! I ordered the GF Avocado Zoodles dish with vegan pesto, and my friend had the Vegan Lover's Salad with homemade falafel and quinoa. They also make their zoodles from scratch, they're not packaged. Delicious!! Avocados are loaded in healthy monounsaturated fat and fiber. They should be a staple in everyone's diet! Sorry for the hair shot at the end. 2 Ingredient Pancakes! It's this little girl's 5th birthday and she requested banana pancakes, which I used to make for her when she was little (and I didn't really cook much in those days!). They are very simple: just bananas and eggs. For every one medium banana, you use two eggs. I also stirred in some vanilla and cinnamon which is completely optional, and topped off with chocolate chips. You get fiber and potassium from the banana, and protein, fat, vitamin D, and biotin from the eggs (among so many other benefits!). #2ingredients #pancakes #birthdaygirl
