We’re half way through keto Thanksgiving recipe week, and today we’re talking about turkey! 🦃

You might be thinking, “isn’t turkey naturally keto?”

Yes. But often times the pre-mixed spices made herbs we purchase to season the turkey have hidden sugars in them. 🙉

The great news is this recipe from tells you how to make your own homemade garlic butter seasoning 🤤

Make sure you save this post for the recipe!

* One 12-14 pound whole turkey giblets + neck removed, rinsed + patted dry
* 6 fresh sage leaves divided
* 5 fresh thyme sprigs divided
* 2 sprigs fresh rosemary
* 3 medium onions cut into wedges
* 5 medium carrots cut into 2" inch pieces
* 4 celery ribs cut into 2" inch pieces
* 1 lemon halved
* 4 cups low-sodium chicken broth
Garlic Herb Butter:
* 3/4 cup unsalted butter at room temperature
* 1-1/2 Tablespoons chopped fresh rosemary
* 1-1/2 Tablespoons chopped fresh sage
* 1-1/2 Tablespoons chopped fresh thyme leaves
* 1 Tablespoon chopped fresh parsley
* 5 cloves garlic minced
* 2-3 teaspoons sea salt
* 1 teaspoon black pepper

1. If your turkey is frozen, allow 2 to 3 days for it to fully defrost in the refrigerator. Remove giblets & neck, rinse & pat dry.

2. MAKE THE GARLIC HERB BUTTER: In a medium bowl, combine butter, rosemary, sage, thyme, parsley, garlic, salt, and black pepper and stir together until smooth and combined.

3. BUTTER THE SKIN UNDER THE TURKEY: Carefully loosen the skin from the turkey breast with your hands lifting and separating the meat. Do the same for the neck as well as the thighs and legs. Gently rub half of the butter under the skin using your hands and fingers and place 3 sage leaves and 2 thyme sprigs under the skin. Tie the legs together and tuck the wings underneath the turkey, using small skewers to secure, if necessary.

4. BRUSH THE OUTSIDE OF YOUR TURKEY WITH REMAINDER OF BUTTER: Place 1/3 of the onions, celery, carrots, 2 sage leaves, 2 thyme sprigs, 1 rosemary sprig and lemon halves inside the cavity of the turkey. Place turkey, breast side up in a large roasting pan. Melt the remaining butter in the microwave and brush an even layer over the skin of the turkey. Arrange remaining carrots, celery and herbs in the pan around the turkey. Pour chicken broth to the bottom of the pan (will be using liquid to baste turkey).

5. COOK YOUR TURKEY: Preheat your oven to 425°F and position the rack on the lower third of the oven. Once the oven is ready, place the roasting pan in the oven and cook for 45 minutes. After 45 minutes, reduce the oven temperature to 350°F and continue to roast until a meat thermometer (inserted deep into the thigh but away from the bone) reads 180°F and juices in the thigh run clear when pierced with a fork, about 2 to 2 1/2 hours (or longer depending on your oven), basting with pan broth & drippings every 30 minutes. Cover loosely with foil if turkey browns too quickly. Remove turkey from the pan and onto a baking sheet and let rest for 15 minutes before carving. Strain and reserve pan juices for gravy, if desired, and discard vegetables.

To wrap up our keto Thanksgiving Keto side dishes today, we can't forget...the mashed potatoes! 🥔

With a potato substitute of course 😋

So creamy and full of flavor you won't even be able to tell the difference. 😉

INGREDIENTS

1 head Cauliflower (florets only, stems completely removed)
3 cloves Garlic (minced)
3 tbsp Butter (measured solid, then melted; can also substitute olive oil or ghee for dairy-free)
1 tbsp Full-fat coconut milk (or heavy cream for non-paleo)
3/4 tsp Sea salt (adjust to taste)
1/8 tsp Black pepper (adjust to taste)
1 tbsp Chives (chopped)

DIRECTIONS

Boil a pot of water with a tablespoon (14 g) of salt. Add the cauliflower, and simmer until very soft (about 5-6 minutes). Drain well.

Meanwhile, place the garlic, melted butter, and milk/cream into a food processor or high power blender.

Note: If you want to, you can saute the garlic first to mellow the flavor a bit.
When the cauliflower is done cooking, drain well. Squeeze out as much extra water as possible. You can do this by wrapping the cauliflower in a towel and twisting, or by pressing a bowl down over a strainer.

Add the cauliflower to the food processor or blender. Process until smooth, scraping down the sides with a spatula occasionally. Add salt and pepper to taste, and puree again. If it's thicker than you like, thin out with more milk/cream.

Stir in the chopped chives.

Enjoy!

INGREDIENTS

▢3 cups fresh green beans (sliced into smaller pieces)
▢2.5 cups button mushrooms (sliced)
▢2 onions (sliced)
▢1 garlic cloves (minced)
▢1/2 cup cream cheese
▢1/2 cup chicken stock
▢1/2 cup cheddar (grated)
▢1/4 tsp nutmeg
▢to taste salt and ground black pepper

INSTRUCTIONS

1- Preheat the oven to 200ºC/400ºF

2- Boil the green beans in well salted water until fork tender. Approximately 10 minutes. Drain the water and set aside. (IMPORTANT: The water for boiling the green beans should be WELL salted – think sea water salty).
While the green beans boil, sauté the onions, mushrooms and garlic until caramelized. Season with salt, pepper and the nutmeg.

3- Add the chicken stock and be sure to scrape all the bits from the bottom of the pan.

4-Add the cream cheese and allow to melt and warm up. Taste test and add salt if needed.

5- Mix in the green beans until everything is evenly combined and transfer everything into a casserole dish.
Top with cheddar and pop into the oven until the cheese is melted and bubble. About 10 minutes.

Keto Thanksgiving Recipe Week Continues! 🎉

Yesterday we focused on appetizers, today we're whipping out the side dishes that will keep your guests asking for more!

Check out this amazing cauliflower casserole recipe 🤤

🧀 INGREDIENTS 🧀

2 medium heads cauliflower , chopped into small florets (about 3-4 cups)
1/3 cup chopped celery
2 teaspoons olive oil
4 ounces cream cheese , softened at room temperature
1/3 cup sour cream
1/2 teaspoon fine sea salt , or to taste
1/4 teaspoon freshly cracked black pepper , or to taste
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup Monterey Jack cheese , shredded and divided
1/3 cup cooked and crumbled bacon , (leave out for vegetarian)
1/2 cup sharp cheddar cheese , shredded
1/2 cup crumbled Parmesan cheese crisps , optional for topping (I used Whisps) or can also use pork rinds
2 tablespoons chopped fresh green onions , for topping
1 tablespoon chopped fresh parshley , for topping

🥄 DIRECTIONS 🥄

1) Preheat oven to 400F degrees F. Lightly grease a 9x13 casserole pan and set aside.

2) Spread cauliflower and chopped celery in a single layer onto a large baking sheet. Drizzle with olive oil and roast for 20-25 minutes, or until tender.

3) Meanwhile, in a large mixing bowl, combine the cream cheese and sour cream. Beat until smooth. Season with salt, pepper and add garlic powder and onion powder. Fold in half of the Monterey Jack cheese and half of the bacon bits, if using.

4) Once the cauliflower is tender, stir into the cheese bowl until combined.
Transfer the cauliflower to prepared casserole pan and spread into an even layer.

5) Sprinkle with remaining Monterey Jack cheese, cheddar cheese and crumbled bacon. Top with crumbled cheese crisps (or crumbled pork rinds), if using.
Bake in the oven for another 10-15 minutes, or until cheese has melted.
Top with green onions, parsley and serve hot.

Here is another great appetizer idea for Thanksgiving from 🙌.

🥓 Ingredients 🥓

* 6 dill pickles
* ¼ cup + 2 tbsp (3 oz) cream cheese, softened
* ¼ cup + 3 tbsp shredded cheddar cheese
* ½ tsp dried dill
* ¼ tsp dried parsley
* ¼ tsp garlic powder
* ¼ tsp onion powder
* 12 small bacon slices

Ranch:
* ½ cup mayonnaise
* ¼ cup sour cream
* 2 tbsp heavy whipping cream
* 1 ½ tsp apple cider vinegar
* 2 tsp dried dill
* ¼ tsp garlic powder
* ¼ tsp dried parsley
* ¼ tsp onion powder
* ⅛ tsp pepper
* ⅛ tsp salt

✅ Instructions ✅

Preheat oven to 350 degrees. Line baking sheet with parchment paper.

Pickle Poppers: Slice large dill pickles in half lengthwise. Scoop out seeds of each pickle half with small spoon or teaspoon measuring spoon.

In a mixing bowl, mix together cream cheese, shredded cheddar, and spices. Spoon mixture into dill pickle halves, wrap each with bacon as tightly as possible to avoid mixture spilling out, and transfer each to prepared baking sheet.

Transfer baking sheet to oven to bake until bacon is just crispy, about 25-30 minutes, flipping each over after 15 minutes to ensure bacon crisps up on all sides.

Ranch: While poppers bake, in a mixing bowl, mix together all ingredients. Set aside.

Final Steps: With pan of poppers still in oven, turn oven broiler on and broil until desired crispiness of bacon is reached, about 1-3 minutes, watching carefully to ensure poppers do not burn.

Remove pan from oven, allow poppers to cool slightly, before serving with prepared ranch.

INGREDIENTS

Mini mozzarella balls (Bocconcini)
Genoa salami
Fresh basil leaves
Black olives
Green olives
Grape or cherry tomatoes
Roasted red peppers
Optional: Balsamic vinegar reduction

DIRECTIONS

1) If you are planning to use a balsamic vinegar reduction, you can start by adding about 1/2 cup of balsamic vinegar in a small saucepan over low heat. Boil the vinegar until it’s reduced to a thick glaze, while you assemble the skewers.

2)Take a skewer and thread through a tomato, basil leaf, mozzarella ball, a piece of salami folded in half, then in thirds, black olive, roasted red pepper, another mozzarella ball, another basil leaf, another piece of salami and finish with a green olive.

3) Repeat the process for the remaining 9 skewers, then set them on a platter and serve.
Optional: drizzle the balsamic vinegar reduction over the top and serve. Alternatively, you could drizzle with homemade pesto or plain extra virgin olive oil instead.

6 slices bacon⁠⠀
8 ounces cream cheese, softened⁠⠀
½ cup sour cream⁠⠀
5 ounces fresh spinach, wilted in bacon grease⁠⠀
2.5 ounces parmesan cheese, grated⁠⠀
1 ½ tablespoons fresh parsley, chopped⁠⠀
1 tablespoon roasted garlic⁠⠀
1 tablespoon lemon juice⁠⠀
Salt and pepper to taste⁠⠀
⁠⠀
👩‍🍳 DIRECTIONS 👩‍🍳⁠⠀

Fry the bacon in a pan until crisp. Set the bacon on paper towels while keeping the grease in the pan. Preheat your oven to 350F.⁠⠀
Add the spinach to the bacon grease and allow to wilt completely.⁠⠀
In a bowl, add all the ingredients together (including excess bacon grease). Mix this together well.⁠⠀
Divide mixture between 3 standard ramekins, then bake for 25 minutes. Broil for an additional 3-4 minutes.⁠⠀
Let cool slightly and enjoy!⁠⠀
