Amazing lunch at in Perth today. It was all delicious and possibly the first time I've ever said there was too much chocolate on my dessert ππ
Marvellous Melt chicken sandwich and Hayburger (no photo) to begin. The seriously chocolatey Best of Both Croffle and Cookie Dough with warm white chocolate sauce π π
The croffle was especially good!
The ultimate club sandwich! Haven't had this for quite a while but it was the perfect post run lunch and a great way to use up the deli sandwich meat in the fridge.
I call this our Barcelona Club Sandwich. It's really simple just layer up mayo, spinach or lettuce, deli chicken and ham, battered chicken, bacon and a fried egg. Today I topped mine with a luscious duck egg from Arngask Farm

A nice wee crop of sweet red peppers. All from one little plant, and I'd already had a few off it. Think I'll definitely grow these again.
I'll use a few over the weekend then slice and freeze the rest.
Roast veg & cheese toastie.
Really simple and a tasty way to get in a portion of veg at lunchtime.
I did a quick roast of the veg in the air fryer for 15 minutes, then onto the bread with cheese and popped in the toastie machine.
I used cherry tomatoes, precut frozen peppers and mushrooms. I'd probably swap out the mushrooms for something else next time. They were nice but ended up more dried than roasted! π

Turns out it's all in the cutting. Flour the pastry/ cookie cutter first, then, most importantly, don't twist it as you press down or lift up!

I don't know what to say really, but watching the news of the war in Ukraine is devastating. I've been following and read about the efforts of so this is my attempt at Halushki.
There are lots of fantastic Ukrainian recipes online, this one appealed to me, dumplings, bacon, mushrooms and butter, what's not to love! It was delicious and the dumplings were much easier to make than I'd thought. I'd definitely recommend it π

Pork stuffing sausage rolls π
These are made with pork sausage stuffing, with apple and cranberry. I kept seeing it in the supermarket but didn't really have a dinner planned to have it with, so went with these sausage rolls!
They were pretty tasty though I might add a touch of grated cheese to the mix next time π§ π

Stovies! A traditional Scottish dish made with meat and potatoes cooked in stock.
When I make stovies I alway use minced beef, or a mix of pork and beef mince, with potatoes carrots and peas. The potatoes are a mix of small chunks that will cook down to almost a mush and a large chunks for that satisfying bite.
Corned beef and sausage stovies are also amazing!
It's hard to make stovies look attractive but they are tasty! π
Scone and jam, cuppa βand the heating up full is just what's required this cold afternoon.
I've still to perfect the shape of a textbook scone, as can be seen from the second pic with its dome top! π The taste is definitely there though π
Pea & Ham soup! If youβve never tried pea soup you really should, this is delicious ππ₯£
This is the simplest, tastiest soup you will ever make. If you're a newbie to soup making I'd definitely recommend trying this, there are only five ingredients including the stock and virtually no chopping. Perfect for a cold winters day, which where I am is guaranteed this weekend π₯Άπ

Peanut butter and banana baked oats!
Baked oats are quickly becoming a favourite for breakfast. I'm keeping the recipes fairly simple, as too much chopping and faff of a morning really isn't me! π₯±π΄
More recipes coming soon. For now though, here are the details for my current favourite
πΎ 40g oats
π₯ 1 tbsp smooth peanut butter
π 1/2 banana sliced
π¦ 250ml water
πΈοΈPreheat oven to 200Β°c / 180Β°c fan
πΈοΈStir the oats, water and PB together in a bowl with a fork. The fork helps to break up the PB.
πΈοΈPour into an individual sized casserole dish or oven safe bowl.
πΈοΈPlace the sliced banana on top then pop into the oven for 25 minutes.

Haggis Pan Haggerty!
Okay, so this isn't the sexiest looking plate of food you'll find on Facebook today but it is delicious.
It's based on a traditional dish from Northumberland but with the addition of haggis, which gives it so much flavour as the spices disperse during cooking.
Haggis isn't usually added but seemed like a good pairing so we gave it a try and loved it! This is an absolute favourite over the colder autumn and winter months.

Afternoon snacking at it's best and simplest. Soft, peppery Black Crowdie on oatcakes.
The crowdie is delicious and I notice their website suggests adding to steak. I'll definitely be trying that! π
For those interested this snack comes in at approx. 140 kcals, 6g protein, 14g carbs (of which 0.5g sugars) and 7g fat.
25g of Black Crowdie and 2 rough oatcakes.
Homemade lentil soup. It's definitely time for all those winter warmer recipes and this is a favourite of mine.

Today is World Porridge Day!
I love porridge for breakfast and as we head back into winter it will most likely become a daily staple again. Steaming hot and served with a large dollop of peanut butter or a healthy drizzle of honey. Currently I'm in love with the Cloverlea Apiaries -'The Friendly Bee Company' lemon & ginger infused honey on my porridge π
Though according to F. Marien McNeill in The Scots Kitchen, It's lore and recipes, which I'm currently reading, it should be served with a separate bowl of cream or milk! "Each spoonful of porridge, which should be very hot, is dipped in cream or milk, which should be quite cold, before it is conveyed to the mouth."

Using up the last of the greenhouse tomatoes π
Made myself this simple panzanella to have with lunch.
It's a nice and simple dish to make up the night before. I used a couple of slices of bread that were left from a loaf I'd made, tomatoes, finely chopped red onion, garlic and of course olive oil.
Beetroot & Carrot Tarte Tatin. This is a savoury twist on a French classic desert.
It's a perfect way to use up those beetroot and carrots from the garden. Or, simply to treat yourself to a delicious veggie meal that's a little different than your standard veggie tart.
Serve as it is or, for that added something sprinkle on crumbly cheese when it comes out of the oven. With the heat of the tart the cheese will start melting into the veggies just as its served ππ§

Roasted tomato and spinach toastie π

I usually have this as roasted tomatoes on toast but thought I'd mix it up and make it a toastie!
Easy to make, just half or slice the tomatoes and roast in the oven for approx 20 mins or under the grill for 10 - 15mins. No added oil needed. Once done, add any herbs or greenery as you prefer and make your toastie π

New bread tins for my birthday means lots of bread baking π©βπ³π
I've been wanting these tins for a while but a lovely voucher from my sister was the perfectly timed gift to treat myself. These tins give a shorter, higher sided loaf than the standard cake loaf tin I have been using. Ideal for making sandwiches.

A bit about me and my page
Iβve set this page up to share my knowledge of nutrition. I recently passed my nutrition exams, I've been studying with BTN on their Practical Academy for the past year (2019) and prior to that completed their Foundation Academy. I'd say I've had an interest in food and nutrition for about the last 10 years but I came to the realise that I probably didn't know as much as I thought or as much as I'd like to, the more I read the more I was interested. I decided to do some formal training, really only with the aim of furthering my own knowledge and for my own benefit. However, I've learned so much and really enjoyed it that I wanted to share what I've learned and help others to improve their nutrition and health. Hopefully you'll find it interesting and perhaps find something useful that you can use in your own day to day life.
