I am hoping to make a difference in my community to help stop the spread of Covid 19.

Strawberry Butter Bread
Ingredients:
For the Bread:
3/4 cup granulated sugar
1/2 cup milk
1/2 cup oil
1 large egg
1 teaspoon vanilla extract or almond extract
2 cups all-purpose flour
2 teaspoons baking powder** (see notes)
1/4 teaspoon salt
2 cups diced strawberries
2 tablespoons all-purpose flour
For the Glaze:
2 cups powdered sugar
2 tablespoons melted butter
1/3 cup finely diced strawberries
1/2 teaspoon vanilla extract or almond extract
1-2 tablespoons heavy cream or milk** (optional)
Instructions
Preheat the oven to 350 degrees.
In a medium bowl, stir together the sugar, milk, oil, egg and vanilla. In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries. Fold the floured strawberries gently into the batter.
Pour the bread batter into a greased 9"x5" bread pan. Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
To make the glaze, combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Mix until it is smooth.
Once the bread is cool, spread the glaze on top of the bread. Slice and serve.
Notes
*I often add an extra teaspoon of vanilla or almond extract to the bread batter (along with the wet ingredients) for an extra boost of flavor. I do this especially if I'm not putting the glaze on top. The bread has the most flavor when you add the strawberry glaze!
*We have added up to 2 1/2 cups of diced strawberries to the batter. The bread stays together the best when you use about 2 cups.
**We like the strawberry bread as written, but if you'd like a higher rise on the bread, reduce the baking powder to 1 teaspoon and add 1/2 teaspoon of baking soda. This will change the texture slightly, but some like it a little better.
**We didn't need any milk or cream to make the glaze spreadable, but it may depend on the juiciness of your strawberries. The glaze will be very thick and look like it is not mixing up, but if you keep mixing, it should create a nice creamy pink glaze as shown below. If it doesn't, add milk or heavy cream 1 tablespoon at a time. The glaze will soften as it sits too since the sugar pulls out juices from the strawberries. Keep this in mind when adding milk and don't add too much!

Who's ever heard of a Pig Shot?!🐽

This would be a fun appetizer for some big football games tonight! 🏈

Ingredients

1 pound smoked sausage or kielbasa sausage, cut into ¾ inch chunks
12 ounce thick cut bacon
4 ounce cream cheese, room temperature
¼ cup sour cream
1 jalapeno, stem, seeds removed, diced
½ cup sharp cheddar cheese
¼ cup of sugar free Honey BBQ sauce (I love G Hughes)
Jalapeno slices

Instructions

Preheat the oven to 375°.

Cut bacon in half and wrap each piece of smoked sausage with a strip of bacon.

Place into a muffin pan or use a toothpick to hold together and place on a baking sheet.

In a medium bowl, mix cream cheese, sour cream, diced jalapeno, sharp cheddar cheese and seasoning together until combined.

Add mixture to a quart size baggie and clip the corner.

Squeeze cheese mixture onto the top of each sausage.

Add a sliced jalapeno on the top and then brush each pig shot with the honey BBQ sauce.

Bake in the oven for 40-45 minutes or until the bacon is crispy.

Carefully remove from the oven and enjoy.

SALT & VINEGAR POTATO PEEL CRISPS! ✨
Next time you’re peeling potatoes*, chuck the washed peels in a bowl of water with a good splash of a light-coloured vinegar, then forget about ‘em in the fridge overnight.

The vinegar not only infuses into the flavour of the final product, but also helps to dry out the skins, while the fridge time helps to make them starchier, so that no matter the type of potato, it’ll behave like a chipper.

Drain, pat dry, toss in a tablespoon of olive oil and a generous pinch of salt flakes, then bake at 200C (180C fan) for 15-20 mins, giving them the odd toss.

* Even if you’re not usually a pre-peeler for mashing or bobbing about in soups, this might just tip you over. 😉

An amazing woman!

“This is my great-grandma, Christina Levant Platt at age 100, weeding her garden. She was born into slavery. Her “owner” was a wife that taught my great grandma to read and write secretly, which was illegal and quite dangerous at that time for both of them. She learned to read the Bible.

She had 11 children, she lost two, one son was one of the first black attorneys in US. She sent the 4 boys to college in Boston. Exceptional in those days.
She passed 5yrs before I was born but I love her as if I knew her. Family tells me she would say “ I put prayers on my children’s children’s heads”.
This apparently worked💜

Around April 12, 1861, Christina was at the 1st battle of the CIVIL WAR, in Fort Sumter at Charleston Bay, South Carolina, working in the cotton fields.

She said “the sky was black as night” from cannonball fire. She saw a man decapitated by a cannonball.
She was the water girl for the other slaves as a young girl and “ the lookout” for the slaves in the fields for the approaching overseer on horseback as they secretly knelt and prayed for their freedom.
She would watch for the switching tail of the approaching horse and would alert the slaves to rise up and return to picking cotton before he saw them.

She eventually married a Native American from the Santee Tribe. John C, Platt.
After freedom, Christina insisted upon taking her children north as she knew they would not get a good education in the south, and that’s all she cared about. She died at age 101 in 1944, where she and her husband had built a home in Medfield, Massachusetts, the first black family to move there.

With great respect, I honor my great grandmother.

So much more I could say about this miraculous woman. She gave me much strength in my hard times.
Whenever I thought I was having a hard day, I would think of her and shrug it off.

Dick Hoyt the embodiment of resilience and perseverance gave his son a wonderful life.❤️ He loved his son very much and wanted him to see the world, he did just that .
