the cutest mini carrot cake is going out to the wonderful Kim tomorrow, along with some cookies!!
this 6 inch carrot cake’s recipe includes pineapple and coconut, adding the perfect sweetness and texture, and it’s topped with a (generous) layer of my not-too-sweet cream cheese frosting!
