I received extra pumpkin in my fruit and veg order this week so I whipped up a batch of pumpkin soups and these two dishes today!

Pumpkin risotto with bacon and pumpkin loaf.

Whipped up some nut and seed butter today!
Delicious 😋

I made something interesting today, Black Tahini.
I plan on using this to make black banana bread.

Tonight I made a simple recipe. Meatballs in tomato sauce. The recipe calls for only 400g mince but I wanted to make extra to save for the next day so I used 1kg.

I tweaked the recipe and made smaller sized meatballs and increased the cook time by 10min and they turned out perfectly!

Sauce was cooked at the same time as the meatballs and I did the pasta separately in the pot to save time but I could have done the pasta before or after in the thermy 😄

Here’s my 2nd bowl in action. One bowl has my pancake mixture in it that I was about to fry and in the other bowl I’m making a smoothie for the kids. It saves time and cleaning. At the end of brekky, I simply chucked both bowls in the dishwasher. 👏🏻

One of my favourite things about my Thermomix is that my son loves getting involved. He will browse Cookidoo (Thermomix’s online recipe library) and choose dinners and snacks he would like to make and then helps me out with the cooking. He’s more likely to eat something he’s help make too 😁

Another quick mid week dinner. 15min prep, 30min cook. Popped into my thermo server ready for the family. I just grabbed some tortillas and sour cream. 🙌🏻

I used nutritional yeast to create a dairy free/vegan version of this dish.

Fresh, homemade Focaccia bread 😄

Today’s baking adventure… Carrot Cake Muffins for my Grandma 😄
I could have used this recipe to bake a cake instead but muffins are quick easy to grab. These are super moist and fluffy!

Banana and oat mini muffins ready to pop into school lunches for Mr 7 and as snacks for the toddler.
10min to prepare, 18min in the over. Done ✅
(Nut free also)

Ginger beef and sugar snap peas (I used snow peas) with jasmine rice.

Quick, easy, tasty, healthy dinner. Done and ready for tonight 😻

Whipped up a batch of dairy free chocolate custard with the help of my little man. There is a ‘thicken’ setting on the Thermomix that easily heats and stirs while you are hands free! Easy!

There are plenty of dairy free recipes available too for anyone avoiding dairy 😁

Cooking chicken stock today. It’s so much nicer to use fresh made, pure stock in your recipes rather than store bought cubes. Chicken, meat and vegetable stock adds so much flavour. You can easily make your own stock pastes in the Thermomix!

Thai peanut chicken and coconut rice.
Dinner is done and keeping warm in my Thermo server bowls 😄
And the only thing I have to wash up is the Thermomix, a cutting board and one knife!
