What’s your favorite varietal? ⁠

It’s hard for me to choose as there is so much to love, but if I had to choose from a producing stand point, it’s…you guessed it, Pinot Noir because I like a challenge. Second, would be Cabernet because it’s the opposite of Pinot Noir. The way I describe it is Cab is like a 1970 Cadillac with cushy springs, just going along and letting you guide the slow but comfortable journey. Pinot is like a brand new Ferrari with two blown out tires and broken windshield. You try to point it where you want it to go and hope for the best, correcting it all along the way for the fast and wild ride that it is. ⁠

Also, can’t live without some Sparkling/Champagne, Dry Reisling in my life. Haven’t found a place for Pinot Grigio tho…it has no soul⁠.

Let’s talk about this crazy MLF-er.⁠

Malo-lactic fermentation (MLF) is a secondary bacterial fermentation carried out in most red wines and some white and sparking wines…⁠
MLF converts the harsher malic acid (think citrus type acid) into lactic acid (think milk and cream). While there are also changes to pH and total acidity, the process is known to create a rounder, creamier texture. In reds, this helps with balancing the structure while in whites, it can add richness and a buttery type note.⁠

Pinots are the toughest grapes to grow, but the most dynamic flavor expression in the wine. ⁠

I love pinot noir (Boen, Belle Glos, Elouan pictured left to right from our Napa Valley Quilt), and I love a challenge. Pinot is a thin skinned, and tight cluster variety that grows in cool and often moist areas. This presents the issue of mildew and rot which must be watched closely. It is also a high nutrient must, meaning the yeast assimilable nitrogen (YAN) is high which allow the yeast to thrive and possibly run through fermentation too quickly. While these seem like quite a challenge, the reward is well worth it. The way that Pinot can transcend a vineyard site is beyond any other variety, making it the most memorable grape to work with IMO. ⁠

Best regions to plant Pinot Noir…Santa Maria, San Lucia Highlands, Russian River, Rogue Valley (Oregon) – But beauty is in the eye of the beholder⁠

Soil – should be tilled at least every other row⁠
Weeds – Hoe them out if you need to⁠
Shoots/Leaves – green (not yellow) with tendrils growing⁠
Pests – little bites turn into big problems…keep them at bay⁠
Shirt - make sure it’s stylish⁠

I get asked a lot about barrel use. 100% New French Oak? Percentage of Old & New? Whiskey Barrels? Toast levels? Steam bent?⁠

It’s complicated. There is no recipe, but more of an attitude we carry of “just try it”. It evolves every year and every wine needs something different. Overall, my favorite barrel 53 gallon, 3 year aged, new tight grain French oak, medium plus toast, steam bent with toasted heads. It’s not perfect for every wine, but it’s a good starting point.

Step into the laboratory, I’m about to get on this blend. ⁠

Turbidity is the word of the day with this young Rose. When going through the blending processes it all starts with aromas, followed by flavor and texture, and last is color. It’s progressive, so I start blending with a broad array of lots for each program and slowly narrow it down until we reach beauty. This process can take hours per day over the course of weeks.⁠
