These exquisite lemon polenta cakes are flourless, light and deliciously lemony, each topped with lemon buttercream and a Limited Edition Baci® Perugina® Dolce Vita® chocolate.

Lemon Polenta Cakes Recipe (with lemon buttercream)

Makes 12

What you need:

For the cakes

220g unsalted butter
220g caster sugar
50g greek yogurt
100 g ground almonds
70 g ground pistachio
150 g fine polenta
1 teaspoon baking powder
pinch of salt
zest of 2 lemons
3 tbsp lemon juice

For the buttercream:

230g unsalted butter
500g icing sugar
Juice of 2 lemons
Baci®Perugina® Dolce Vita® chocolates. 

What to do 

1. Preheat the oven to 180°C. Grease and line a silicone cupcake tray. 

2. With an electric hand whisk, beat the butter and sugar until pale. 

3. Add the eggs one at a time, beating after each addition, and then mix in the greek yogurt. 

4. Add the ground almonds and ground pistachios and mix gently for a few seconds. Add the fine polenta, baking powder and salt and fold in gently. 

5. Next add the zest of 2 lemons and the lemon juice. Mix to combine. 

6. Divide batter evenly between the cupcake tray and smooth the surface. 

7. Bake for 20-25 minutes or until a skewer inserted just comes out clean 

8. Meanwhile make the buttercream by whisking together the butter, icing sugar and juice of two lemons. 

9. Once cool, turn out the cakes, pipe with the buttercream and top with Baci® Perugina ® Dolce Vita® chocolates.

Baci® Perugina® Mousse Recipe

Ingredients:

⭐ 8 Baci® Perugina®
⭐ 113g Dark Chocolate
⭐ 113g Whipping Cream
⭐ Cocoa Powder to decorate
⭐ 1 Orange

Method:

1. Melt the chocolate in a double boiler or carefully in the microwave. Grate the orange skin in to the cream and let it marinate for 30 minutes.

2. Whip the cream until soft and firm, add the melted chocolate slowly, a bit at a time mixing in it very gently. Finely chop the Baci® Perugina® and add to the mousse, mixing very gently.

3. Place the mousse in 4 silicone moulds and set in the freezer for 1 hour. Place the mousse in 4 plates and decorate by sprinkling with the cocoa and placing a Baci® Perugina® proudly on top.
