Keto Bacon, egg, & cheese sliders 😋👀
RECIPE BELOW!!
INGREDIENTS
6 hard-boiled eggs peeled
6 thin slices of cheddar cheese
3 slices of cooked bacon
½ Avocado
½ teaspoon Lime juice (or lemon juice)
½ teaspoon cumin
Salt and black pepper to taste
Toothpicks
DIRECTIONS
1. Place ½ of an avocado into a food processor.
2. Add in ½ teaspoon of lemon or lime juice as well as salt and pepper to taste. Blend until smooth.
3. Slice each hard-boiled egg in half lengthwise.
Place one slice of thin-cut cheddar cheese on the bottom half of the egg.
4. Top with ½ a slice of cooked bacon.
5. Place a dollop of the avocado mixture on top of the bacon.
6. Put the other half of the egg face down on top to create a little sandwich. Secure the egg bite with a toothpick inserted down the center.
7. Repeat steps 4-7 with the remaining eggs.
8. Top each egg bite with salt and pepper to taste, and serve.

Gnocchi mushroom and Avocado bowl
⏩ INGREDIENTS:
Gnocchi (cauliflower gnocchi)
“Cauliflower gnocchi from Trader Joe’s is vegan and can be used for this recipe in place of the stuffed gnocchi!”
Mushroom
Onion
Cherry tomatoes
Spinach
Avocado
Olive oil
Garlic powder
DIRECTIONS
Cook gnocchi stovetop in olive oil. Follow my “GNOCCHI” highlight for step by step instructions (just skip the nutritional yeast step).
Put cherry tomatoes in a baking dish & drizzle olive oil on top. Bake in the oven at 400 for 30-40 min (move them around halfway through). I have a tutorial in my highlight for this too😇
Cut up onion & steam with the mushrooms in a pan with a splash of water. Once tender, add in olive oil & garlic powder & sauté. Add in spinach when those are done bc it cooks v fast! Serve everything with mashed avocado💚

Dinner Idea anyone??

Bruschetta Chicken Casserole! 🍅🧀

✨INGREDIENTS

1 lb chicken breast or tenders cut into bite sized pieces
1 tbsp avocado or olive oil
6 ripe Roma tomatoes, chopped and lightly sprinkled with sea salt
3 fresh garlic cloves, chopped
1 c shredded mozzarella cheese
1 tsp dried oregano
2 tbsp balsamic vinegar
Sea salt/pepper to taste
Fresh basil optional
Cooking spray

✨DIRECTIONS

-Preheat oven to 375 degrees
-Heat oil in skillet on medium-high heat
-Add chicken, salt and black pepper
-Cook, stirring occasionally until golden brown on sides and almost cooked through
-Transfer chicken to an 8 x 8 baking dish (sprayed/brushed with oil)
-Top with chopped tomatoes, oregano, garlic and drizzle of balsamic vinegar
-Sprinkle with mozzarella cheese
-Bake uncovered 18-20 minutes, just until the cheese is melt and sauce bubbling at the bottom of the dish
-Remove from oven and let set for 5 min
-Garnish with basil and ENJOY! See less

Keeping it simple tonight!
Served with Steamed Broccoli

One Skillet Crack Chicken 😃

6 Boneless Chicken thighs
2 TBLS Olive oil
8oz Cream Cheese
1 Cup Heavy Whipping Cream (hwc)
2 Tbls Ranch Seasoning powder
6 pieces cooked & crumbled Bacon

- Heat oil in a frying add Chicken
- Cook 5 mins each side until browned
-Remove Chicken and set aside
- Keeping the drippings in the pan Turn temp to medium low
- Add Cream cheese, hwc, Ranch seasoning . Cook until all melted and combined. Add Bacon, place chicken back into the pan and simmer until chicken is done about 5 to 7 mins or Temps at 165°

Egg and cheese with guacamole wrap with small side of coleslaw. Wraps are crepini zero carb egg wraps with cauliflower. You need to use at least 3 of them per wrap or they fall apart, but they are only 8 calories per wrap. Very filling. Total food in this is 2 eggs, some shredded cheddar/mozzarella blend, half an avocado, butter for the pan and about 6 wraps and coleslaw with full fat mayo and truvia.😋
