The cuties in the picture above you’re seeing are Shahi Paneer and Butter Naan. Shahi means Royal or specifically “Of Royal” in India and some other countries. And believe me it is creamy, not too tangy but just a little, and lip-smacking. It is made from Cottage cheese, loads of tomatoes, cashews and necessary Indian spices. And giving perfect company is Butter Naan or Naanbread as it is known in the wider world. Made from white flour baked/cooked and garnished with coriander and butter, of course. On the side is some salad. The combo is quite popular in restaurants to kiosks to fine dines in India. But here, this was made in my humble abode. Mom’s recipe. And boy it was delicious. This is one of India’s most loved street foods. So loved that it has many names across the country. In Delhi, it is called Golgappe(round water balls). Other names are panipuri, pani ke batashe. You can find this delicacy easily in any Indian city. Due to Covid-19, street food was off the table for us. So we made it at home. It is easy to make and it sort of leaves a flavour blast in your mouth when you eat it. The round balls are made of semolina and are fried. Before eating a ball, it is filled with boiled and chopped potatoes, boiled chickpeas with a sweet chutney of tamarind and then it is topped with tangy cold water made from mint, asafoetida, red and green chilli. A dash of chat masala and salt in the end and you’re done. All of this is had in one go. So much fun. A plate of it has 6-8 of such water balls. Don’t miss it if you ever get a chance to eat it. I don’t. Do make sure it is from a hygienic place though. 😋😊

Nope, that’s not fish. This is the vegetarian man’s chicken. Ok, no more puzzles. This is fried Soya Chaap. These are added to finger-licking curry/gravy made of the best spices. Many outlets in India offer this dish with paper-thin Rumali Roti(bread). Rumal is Hindi for Handkerchief, just so you’re confused. I made this at home and even at this stage with a little Chaat Masala it was just as delicious as a kebab. It’s easy to make and full of protein. Inspiration: My mummy 😊

I thought of having a burger today but then I wasn’t sure where to order from since I’m still doubtful of going out these days. And then, just like that, I thought why not make them at home. And yes, for this too I have my Mummy’s recipe. From the filling to patties, there’s a special taste that I haven’t seen in any of the popular burger joints. These may not look as good aesthetically as the fast food joints but believe me they were finger-licking good. The filling is of veggies with some Harissa and Mayo sauces. Patties are made of beans.

Every society has its evils. And where there are evils, there emerges a force so strong, which wipes off all negativity. In India, we celebrate that force (Shakti in Hindi) during Navratri while worshipping nine forms(avatars) of Goddess Durga. Navratri is celebrated twice in a year where people fast and in most parts of India don’t eat non-vegetarian food. Well, that means Biriyani is off the menu. But there’s an alternative. Veg Biriyani. From my mom’s recipe, this is Vegetarian Biriyani. Made up from assorted spices, cottage cheese, basmati rice and other things. You can see cinnamon, cloves too there. Preparation takes an hour and a half and I promise, you’ll not miss Chicken or Mutton Biriyani after having this.

It felt like it was about to rain. There were clouds over my head and this was reason enough to cook something crispy and 😋 In India, we say baarish hai to pakore to bante hai. But I made bread rolls according to my mother’s recipe and the result was delicious.
