Ingredients:
2 cups of flattened rice (poha)
1 small onion, chopped
1 small potato, chopped
1/4 cup of roasted peanuts
1 green chili, chopped
1/2 teaspoon of mustard seeds
1/2 teaspoon of cumin seeds
1/2 teaspoon of turmeric powder
Salt to taste
2 tablespoons of oil
A few curry leaves
Fresh coriander leaves for garnishing
Lemon wedges for serving
Instructions:
Rinse the flattened rice under running water until it softens.
Drain the water and keep it aside.
Heat the oil in a pan on medium flame.
Once the oil is hot, add mustard seeds, cumin seeds, and curry leaves.
Let them splutter for a few seconds.
Add chopped onion, potato, and green chili to the pan.
Sauté them until the onion becomes translucent and the potato is cooked.
Add turmeric powder and salt to the pan and mix well.
Add the softened flattened rice to the pan and mix well.
Cook for 2-3 minutes until the flattened rice is heated through.
Add roasted peanuts and mix well.
Turn off the flame and garnish with fresh coriander leaves.
