What kind of cheese should you use for a classic Italian 'Caprese' salad?
Italians use FRESH mozzarella (fior di latte or buffalo) for this dish. Outside of Italy, look for 'water packed' mozzarella that is creamy. Whatever you do, don't use dry mozzarella or rubbery mozzarella for this dish! If it is easy to shred or grate, it's not the right mozzarella ;)
