What’s for dinner?
I had an impromptu pepper steak stir fry. Ribeye with onion, bell pepper, garlic, ginger, soy sauce, rice wine vinegar and a splash of chili oil. Served with leftover rice. It was delicious!!

I ordered the Kitcheneez keto package so that we could try some different options for flavors for my husband who is keto. One of the packets was a carnitas spice blend, which was fortunate because we had just bought a pork roast to make carnitas 🙂
This spice blend smelled so good and flavored the meat so well. I didn't add any additional salt to the crockpot but did add two poblanos and a few jalapenos along with an orange (hubby accidentally bought a blood orange) and two limes. It's tax season and I work in a tax office, so it's so easy to just live on fast food during this busy time of year. At least, that's what I did last year. It ended up with me hurting my feet and feeling just blah.
This year, I've been focusing on being more mindful and preparing food that is easy to make and made from healthy ingredients. I've also been thinking more about what foods I can grow and create at home. I started growing sprouts again. It's so easy and you can do it in a mason jar with a mesh lid. I use them as lettuce on my daily lunch wrap that includes baked chicken and hummus on a Flatout wrap. It's so yummy!

I had never heard of strawberry brownies until a friend of mine joined Kitcheneez. I was intrigued, to say the least, and just had to try them. I wish I'd taken a picture of the mix itself because it was very high quality. I noticed there were freeze-dried strawberries in it. I made a glaze with half lemon juice, half water, and some confectioner's sugar. They aren't too sweet and have a bit of a tangy bite to them. I've been trying to eat oatmeal for breakfast this year. I make mine with regular rolled oats, dried cranberries, walnuts, brown sugar, and pumpkins spice. Now that the weather is warmer, I don't want such a hot and heavy breakfast. This weekend, I made a batch of baked oatmeal as part of my meal prep to see what happened. It has my standard ingredients plus some apple. It's delicious!

Hello everyone! It has been a long time!
Due to our lives being crazy, Sam and I haven't had time to cook together. We are planning to do some of this later in 2022. We may cook together once a quarter, or so.
I will also be posting some things here from time to time. I have recently signed up with Kitcheneez which is a company based in NC. They have some great mixes that make our cooking lives easier. I am committed to making sure this group is not just sales-focused. We will still be posting some original content. But, I do want to share my new obsession with you. More on that, coming soon :)
