200TH POST GOES OUT TO MY FILIPINO PANCIT!!! One of the very first Filipino dishes i ever taught myself to make when i was a wee young babberz 🇵🇭🇵🇭🇵🇭 Pancit is basically veg rice noodles, but like veg rice noodles x100. Ofc these ones are made with my mega babes since day 1: DATU PUTI duo pack, plus loads of my lover boy Mr Toyomansi. If you’re an OG follower of mine you’ll know these were the second star (to me obvs) in early my cookin vids. Without these saucy fellas, i probs wouldn’t be half the umami-bombshell that feeds you all so well today 😜 ⁣

I am pretty feckin proud of the things i’ve achieved this year. I’ve worked harder than i ever have, been more disciplined, kept focused, hustled every single day and i’ve truly loved every minute of it. Even the back-breaking delirious spring rolling till midnight. Seeing all the happy faces and hearing all the mega lush words about my food makes me warm inside. Cooking brings me so much joy and peace. Has done since i was a kid and always will. ⁣

Didn’t think i was gunna get soppy and be a proper ewy cliche, but honestly thank you SO much to each and every one of you absolute shiny legends that have believed in me, supported me and just generally hyped me the F up!! We may not have the biggest following but i tell ya what!! We bloody have the BEST!!!!! ⁣

This usually has pork belly/shoulder in but shockingly i skipped the porky delights last night for just the tofu, as ya gal has had a very meaty weekend. Queue the Michael Scott “thats what she said!” ⁣⁣with added snort of laugher.

This meal was always gunna be an absolute winner from the start as i’d spent 6hrs that morning making chicken bone broth. I looooooove leaving a pot of bone broth simmering away in the background of my day, as it proper makes me feel super adulty. PLUS the THRILL i get from using up every inch of my leftovers and creating something even more delicious. . . Raaahhh that s**t is mad! 😂 Along with that beauuuuuty of a bone broth, we got gochujang (korean red pepper paste), gochugaru (korean red chilli flakes), garlic, onions, spring onions, sugar, sesame oil, kimchi, tofu AND THATS IT!!! ⁣⁣

Spicy, saucy seabass (reduced to £1 absolute billy bargs m8) steamed in a pengy sauce of calamansi soy, sugar cane vinegar, ginger, garlic, lime, xtra hot chilli-sesame flakes, fish sauce & that sweet sticky runny honey 🍯 always finished with a w***y wrist-full of coriander cuz its legit my fave herb and u probs already knew that didn’t u, lol. ⁣I always use the stems cuz they have sooooooo much fragrant flaves AND u use up the entire thing aka zero waste!! My absolute faaaaave rice roll - cheung fun 🤩 steamed in a pork bone broth with garlic, hoisin, oyster sauce, brown sugz, chilli-sesame flakes & a generous spoon of msg (da best of da best, @ me bro me if u dont believe). Also wazzed in some enoki mushrooms (well obsessed with their texture) and kai choi, then finished with spring onions and crispy fried onions for that lil crunch crunch.
