For my Crockstar friends! Tried something new the other night, the chicken enchilada casserole, but instant pot style!
3/4cup chicken broth
Bag of ingredients from Crockstar
Large tortillas
Chicken breast
Taco seasoning
Pour chicken broth in the pot. Trim chicken breasts and place in pot. I squeezed out about 3/4 of the ingredients from the Crockstar bag on top of the chicken, then sprinkled some of my homemade taco seasoning on top for a little extra flavor.
Put lid on pot, set to seal, and cook high pressure for 10 min. Set oven to 350° for preheat.
When chicken was done, I did a 3 min no pressure release then released the remaining pressure. Carefully remove the lid and shred the chicken, I used my hand mixer. I used tongs to grab the shredded chicken and put it in the tortilla then sprinkled with cheese before rolling and placing in the Pyrex dish. After all the tortillas were in, I used a big spoon and poured some of the leftover chicken juice on the enchiladas, after that I topped with the remaining ingredients from the Crockstar bag. Then I sprinkled cheese over the top and some more taco seasoning.
Bake for 20 min at 350° and serve with your favorite enchilada toppings.

Another delicious pot roast thanks to my instant pot! Cut in half, seared on both sides then high pressure cooked for 90min with 10npr. Falling apart tender! Then we had a beautiful lightning show provided by mother nature. For the full recipe scroll down a few posts and you should find it.
Snowy day here so decided to make a soup, this recipe is delicious!
One of our favorites, baby back ribs! There are a lot of different flavors you can use but we just go simple. 1 cup of water (can use broth, apple cider vinegar, etc) in the pot. Remove the membrane from the back of the rack (my least favorite thing to do!) then flip the rack over and season. Again there are a lot of ways you can season but we just sprinkle with Head Country dry seasoning. Place rack in pot on top of trivet, meat side out. Put lid on the pot, set valve to seal and cook manual high pressure for 25min with 15-20min no pressure release. While it’s cooking, line a large baking sheet with foil. Once done, release the rest of the pressure. Carefully open the pot and set lid aside. Remove ribs from pot, they will be falling apart 🤤. Lay the ribs out on your foil sheet. Baste with favorite bbq sauce or add a dry rub. We use a local favorite, Johns Barbecue Sauce. Place tray in broiler for about 5min on low. Just keep an eye on it, once the sauce is bubbling and caramelizing, remove the pan from the oven. Enjoy!
Spaghetti, quick and delicious! 🍝
~1lb ground beef
~Chopped onion (amount depends on your preference, I used a few tablespoons)
~1 tsp Italian seasoning
~pasta
~jar of spaghetti sauce (we use the 45oz Prego sauce)
~1 cup water and sprinkle of salt
Sauté the ground beef with the onion and italian seasoning. Once the meat is done turn the pot off. Remove the meat from the pot and drain. Add water to the empty pot, sprinkle with salt. Break pasta in half and layer in the water. I used two large handfuls of pasta. After the pasta, add the meat evenly on top of the pasta. Next pour the sauce on top of the meat. Do not stir! Place lid on pot, set to seal and cook on manual high pressure for 4 min. When done do a 5 minute no pressure release. After 5 minutes release what pressure is left and remove the lid. Stir and enjoy!
