What in the smothering?!?! Finger licking smothered pork chops. Juicy and flavorful.

Tapping into one of my favorite dishes. Stew curry chicken and buss up shut. I’m not a dhalpari (roti) gal. Was finger lickin good!

Cajun chicken pasta for dinner. Hubby said he also wanted deviled eggs for tonight’s Usher concert (aka Super Bowl…lol) so I obliged.

This is titled “When a Trini Makes BBQ Pork”. One thing we do is we season our meats. We make our herb green seasoning and it contributes to the overall deliciousness of our dishes. I made this BBQ for dinner this week. Yes, I first sauté my meat in the Instapot and finish in the oven. Meat falls off the bone.

Shepherds Pie anyone? Delish!!!

One of my favorite things to eat…. Lasagna! Hubby doesn’t eat ricotta so I substituted it for cream cheese and mozzarella. Add some spinach. Man oh man.

First time trying Rasta pasta… and of course I had to put a Trini twist….Added lightly brown stewed chicken with cabbage and carrots. Delish!

Food Truck Fridays…we are out here today in Kings Mountain State Park.

What’s on your menu? Today I made… sticky bbq pork ribs, pasta salad, baked beans, creole flavored corn on the cob and beef hot dogs. Lots of compliments!

Lake Wylie we are out here at Bethel Elementary baseball fields. Come and get some food. We’re here til 3pm or sold out. sandwich

New item alert…..fried Mac n cheese balls. Coated in chips and Panko. I like mine with marinara sauce. How about you?

Casserole time! Philly cheesesteak casserole (no bread) and breakfast sausage casserole. Both were extra cheesy and extra delicious !

What’s on y’all stove? This may be on my menu when I do specialty days. Chicken stir fry for us tonight. I made a couple of casseroles and a dip too. I’ll post those later. Stay tuned!!!

In the spirit of TBT…this is a throwback to Thanksgiving dinner 2022. Some of the dishes of the night. If you haven’t had my Mac n cheese, you’re missing out!

First time cooking like this in months! Good stuff tho. Mac and cheese, roast with potatoes and veggies, Parmesan crusted chicken, baked beans and a side salad. Delicious!

First time cooking in months. I’m going to be out of commission for a while but will try my best to resume cooking and displaying as soon as possible. In the meantime, this carbonara is giving me life…visually and taste-wise!
