Directions:
---For the dough:
1 cup warm water
1/2 tbsp yeast
1/2 tbsp jaggery OR sugar (to help bloom yeast)
2 tbsp oil
Some salt
2 cups flour
Knead till smooth, cover, rest till double in volume.
Roll out the dough, cut in circles.
Add filling in center, & pinch the sides together.
Makes about 12 to 13 pies.
Brush the top with beaten egg + a tbsp milk
Bake in preheated oven 190c 15 to 20min, till slightly golden.

-Cooked minced meat
-Fresh coriander leaves

Directions👇🏻
➡️For wheat tortilla:
-2 cups whole- wheat flour
-pinch of salt
-1/2 tsp baking powder
-2 tbsp cooking oil
-water as req.
Make a soft dough, cover rest 10to15min
Divide in 6 portions, roll each into circle with the help of rolling pin, cook on a pan on medium flame until puffs up.
➡️Sauce:
-2tbsp oil
-2tbsp flour
Cook in a pan till golden,
-1tsp each red chilli pwd, garlic n ginger, oregano, paprika, cumin pwd, vinegar
-2tbsp ketchup
-2 cups water / ckn stock
Cook until thicken
➡️Filling:
-splash of oil
-chopped onion & capsicum (or any veggies of choice)
-boiled n shredded chicken
-salt n spices
Sauté for just a few seconds
➡️Assembling:
Take tortilla, add filling n sauce roll (recipe makes 6 tortilla rolls)
Line in an oven safe dish, pour over leftover sauce, cover the top with lots of cheese
Bake till the cheese melts.
Sprinkle parsley on top.

➡️For the dough:
-1 tsp yeast
-1/4 cup lukewarm milk
-2 tbsp cooking oil
-1 cup flour (could use either wheat OR white, any of your choice)
-1/2 tsp salt
-Water 1-2 tbsp
Knead for a few minutes to make a soft smooth dough.
Cover- let rest until rise
➡️Filling:
In a pan, cook
-3 cloves of chopped garlic in a splash of oil.
-1 cup chopped Spinach *blanch for a few minutes than use
-Salt, b.pepper, ginger pwd, fresh corinder, a tsp lemon juice, 2 tbsp each- Cream cheese, mayo, and fresh cream
Combine all the ingredients
➡️Assembling:
-Roll out the dough into a square.
-Cut as shown in the pic. (makes 8 serving)
-Add filling at one side, roll into a croissant shape.
-Cover, and let the rolls rise again for about half an hr.
Finally..... brush the top with whisked egg & sprinkle on nigella seeds.
*Bake in preheated oven, 180 c 20 to 25 min.

Mini Pita Bites
Directions👇🏻
➡️For the dough:
-1/2 cup lukewarm water
-1 tsp sugar
-1 tsp yeast
Mix - cover - rest for 5 min
Than add in
-2 cups flour
-Salt about 1/4 tsp
-1 tbsp cooking oil
Knead for 2 to 3 min (make a soft dough, use water if needed)
Cover and let rest, until double in volume.
Roll into a thin sheet, prick with the help of fork, & cut into small circles. (Makes about 15 )
Now, cook on a pan/tawa on medium to high flame, till it puffs (No need to add any oil or butter). Just cook all the pitas like this and Put in an air tight container for a few minutes so they remain soft.
➡️For the filling:
Marinate chicken pcs with salt, b.pepper, lemon juice, ginger garlic paste, yogurt.
Once marinated for an hour, cook the chicken in very little oil.
Turn off the flame, an add paprika power, 2 tbsp mayo, chilli sauce and bbq sauce. And give it a mix.
Finish up by putting the Filling on pitas, Topped with some veggies
(I used cabbage n capsicum; you could take any of your choice).

Ingredients:
-1cup Strawberries
-1/2 cup sugar
-1 litre water
-4to5 tbsp lemon juice
Blend
-Crushed ice to serve
Serving: 5 to 6 glasses

For crust:
▪️2+1/2 cup flour
▪️1+1/2tsp baking powder
▪️6tbsp cold butter
Mix until resembles breadcrumbs.
▪️Cold milk as needed.
▪️Chill the dough.
▪️Divide in 2 portions, roll and transfer into heat proof dish.
▪️Add filling, cover with other layer of pie crust.
▪️Seal the edges, and deco with desired design.
▪️Egg wash, sprinkle red chili flakes and dried herbs.
▪️Bake in preheated oven 180c 30to40 min or until golden brown.
For the Filling:
In a pot,
▪️Splash of oil
▪️Cumin seeds
▪️Chopped Onion, Garlic, ginger (saute)
▪️Chicken pieces
▪️1/4cup peas
▪️1 diced Potato
▪️Coriander leaves
▪️Few tbsp yogurt
▪️Mustard paste
▪️Salt, chilli powder, turmeric, and other spices.

Ramadan series '23~ Vermicelli bites
Recipe👇🏻
▪️200 g thin vermicelli (crushed)
▪️2to3 tbsp desi ghee
Cook on low flame until golden.
▪️Add some chopped nuts, coconut, 1/2 cup condensed milk.
▪️3to4 tbsp whole milk
Cook for a few minutes.
▪️Transfer into a tray.
▪️Let it set, than cut in bite size pieces.

Ramadan series '23~ Bread Disc
Directions👇🏻
▪️Remove corners of bread.
▪️Cut in circles, as shown in the pics.
▪️Spread mayo, and any filling of your choice.( I used shami kabab)
▪️Stack the discs on one another.
▪️Again put some filling on top, with cheese, and parsley.
▪️Brush the sides with oil.
▪️Bake in oven 8to10min on 180c OR on tawa, until golden n crispy.

Ramadan series '23~ Creamy Spinach pasta with Garlic bread sticks
Recipe👇🏻
➡️ For the pasta sauce:
▪️2tbsp oil
▪️Chopped garlic n onion, sauté
▪️2tbsp flour
Cook on a low flame until golden brown
Slowly whisk in
▪️1 cup milk
▪️Salt, white pepper, oregano, and dried herbs
Cook till slightly thicken.
Fill a separate pot with water, let it boil, add in
▪️250g raw spinach (chopped).
Blanch for 2to3 min, remove extra water, and mix with the prepared sauce.
▪️Add 2to3 cups boiled pasta, and cheese.
Let cook for few minutes, and serve.
➡️ For the Bread sticks:
▪️2to3 Brown bread slices; slice them into thin strips
Mix together👇🏻
▪️4tbsp oil OR butter
▪️4to5 cloves minced garlic
▪️Coriander leaves
▪️Salt
▪️B.pepper
Apply on bread, cook on griddle (low flame) until golden n crispy.

Ramadan series'23~ Quiche
Recipe 👇🏻
For the dough (crust):
▪️1 cup flour
▪️3tbsp cold butter
▪️Pinch of salt
▪️2 to 3tbsp cold water
▪️Half egg
1st rub the butter in flour, than add other ingredients.
Refrigerate for 30min.
Roll out, transfer into 5'inch pan. Prick the bottom with fork.
Bake for about 15min in an oven OR a pot (180c)
Now, pour the Filling, bake again for 30min until golden.
For the Filling:
In a bowl, mix
▪️1+1/2 egg
▪️1/4 cup milk
▪️2 tbsp fresh cream
▪️Salt, b.pepper, coriander leaves.
▪️Sautéed Onion, Garlic, and you fav veggies.

Directions:
▪️1/4cup lukewarm water
▪️1tsp yeast
▪️1tsp sugar
Mix these and let the mixture rest for a few minutes
▪️2 cups flour
▪️Pinch of salt
▪️1tbsp oil
Knead to make a soft dough, cover, rest till it becomes double in size.
Divide into 4 portions.
Roll each into oval shape.
▪️Add filling (pizza sauce+ cooked chicken+ onion+ capsicum)
Close the ends and pinch to seal the buns.
▪️Brush milk on top, add some cheese n veggies.
Bake at 180c 15 to 20min, till golden brown.

Fresh, flavourful, and naturally sweet strawberries makes a perfect addition to Summer desserts.
Sharing today, the recipe of Classic Victoria sponge cake; Known as The Queen of all cakes.
It's a very popular British cake. A light and airy sponge, layered together with luscious cream and strawberry jam.
1) Start-off by whisking together
▪️1/2 cup butter(room temp.)
▪️1/2 cup castor sugar
▪️2 eggs (1 at a time)
▪️1 tsp lemon juice
▪️And a splash of Vanilla essence.
(The mixture should look pale and fluffy)
2) Now, sift in
▪️3/4 cup flour
▪️1 tsp baking powder
And fold with a spatula (don't overmix)
3) Pour the batter in 6inch cake mold. Bake at 180C (30 to 40 min).
Let it cool and divide in 2 layers.
(For homemade strawberry jam. Add equal quantity of strawberries and sugar in a pot. Let it cook till it gets thick. Mash well as use).
4) Spread whipped cream and strawberry jam between layers. Put some strawberry slices on top.

Made with a Super easy homemade dough and without Oven.
Only 3 ingredients needed...
Here's the recipe👇🏻
* 2 cups flour
* 1tsp baking soda
* 1 cup yogurt
_Knead for 2 to 3 min to make a smooth dough.
_Cover and rest for just 10 minutes.
_ Divide into 2 portions (this recipe will make 2 medium size pizzas)
_Roll into circle
_Grease Tawa with a little bit of oil.
_Than place the rolled dough on it, (keep the flame low).
_Let it cook till bubble start to appear, and dough puffs up a little.
_Flip to other side, and add pizza sauce, your favourite toppings
And (of course) some cheese too.
_Place a lid on it, and cook for another 5 to7 min till cheese melts, and crust is slightly golden from the bottom.

Chocolate volcano cake
Recipe:
For cake
*1/2 cup oil
*1 cup powdered sugar
*2 eggs
*1 tsp coffee
*1 tsp baking powder
*1/2 tsp baking soda
Whisk them together
Than sift in
*1+3/4 cup flour
*1/4 cup cocoa powder
And
*1 cup buttermilk
Pour the batter in greased bundt cake pan.
Bake at 180°c for 40 to 45 min. Then let it cool completely.
Chocolate glaze:
* 1cup milk
* 1tbsp cocoa powder
*1tbsp cornflour
*4 tbsp sugar
*40 g chocolate chips
*2 to 4 tbsp fresh cream
Cook these for a few minutes until smooth.
Pour it over the cake, and dust the top with some cocoa powder.
"Lab e sherin"
It is a custard and fruit based dessert. Served mostly on special occasions.
So, go ahead and know how to make this refreshing delicious dessert.
- 1 litre milk, boil
- 1/4 cup coloured vermicelli
- 3to4 tbsp sugar
-1 pack of cream
Cook for about 10min
-Than add 2tbsp vanilla custard powder mixed with milk.
Cook the mixture until thicken.
Chill completely
-Mix in some fruit cocktail OR fresh chopped fruits, chamcham and khoya balls.
-Garnish the top with nuts.
