Easy vegan recipes for busy people. Ingredients based in the U.K.
|Vegan Greek style Pastitsio pasta bake|
Ingredient list:
•Oumph Mince
•Napolina whole wheat Spaghetti [half or full pack depends on your tray size]
•Tesco Free From white lasagne sauce
•1 Large aubergine
•Violife Original Grated
•Olive oil
Method:
1. Slice the aubergine, lay on baking tray. Brush on plenty of olive oil both sides and bake in the oven at 200C turning half way, until brown.
2. Boil the spaghetti for 12-13 minutes in water as per manufacturer instructions.
3. Sauté the mince in 2 tablespoons of olive oil until brown, while the pasta is boiling & aubergine is cooking.
4. Once pasta is done, drained and add a bit of olive oil and stir together in the pot.
5. Lay the pasta on the lasagne oven tray then spread evenly.
6. Add the aubergine slices making a layer
7. Add the mince & spread evenly
8. Add the white sauce
9. Lastly spread out the grated cheese
& bake in the oven for 35-40 minutes at 200C fan assisted oven.
Once done, let it stand for 10
Minutes then Enjoy ~
