Marinated flank steaks. Had mine on a ceasar salad no croutons.
Marinade:
1/2 cup.soy sauce or coconut amino
2TBSP rice vinegar
3 TBSP swerve brown sugar substitute
3 TBSP avocado oil
4 cloves chopped garlic
1 TBSP Fresh grated ginger
Score flank steak and put in gallon size ziplock bag. Mix up marinade, pour over steak. Refrigerate for at least 4 hours or overnight. Turning over every few hours.
Grill up to your desired doneness.
Asain marinated pork tenderloin and cauliflower rice with onion, peppers and mushrooms.
Asain marinade:
2 TBSP soy sauce or coconut amino
2 TBSP vinegar. Like rice wine or balsamic
2 TBSP avocado oil
2 TBSP brown swerve
Fresh chopped garlic 4 cloves
Fresh grated ginger
1-2 pounds pork tenderloin
Mix all in a bowl or Mason jar.
Pour over pork tenderloins. I marinate overnight for roughly 12 hours.
Grill or bake until done.
Cauliflower rice:
I buy pre-cut cauliflower rice in a bag and microwave for 2 minutes.
Heat a skillet (I use cast iron) and add some avocado oil. Add diced onion, pepper and mushrooms. Make all veggies roughly the same size. All veggies should be the size of the riced cauliflower. Cook a few minutes. Add the cooked cauliflower rice. Add whatever seasoning you like. I did steak seasoning and garlic lovers by Flavor God. Add salt to taste.
Quick easy and delicious.
With Thanksgiving closing in here is a delicious soup for leftovers.
Turkey palmini noodle soup.
Chicken broth (can add Turkey gravy to the broth if you have any leftover. ).
Diced celery
Either shredded carrot or diced carrot. You don't need it but I love the flavor added in.
Chopped Turkey
I add a little onion flakes for flavor
I drained 1 can palmini noodles and cut into bite size pieces
Veggies!
Chaffle bun and burger.

Some everything but the bagel seasoning
1/2 cup mozzarella cheese
Mix together.
Sprinkle some shredded mozzarella cheese on hot waffle iron, pour chaffle mix (if mini maker use half mix), sprinkle more cheese on top and cook about 3 minutes. Put on cooling rack as you make other 1.

Sorry I haven't been around this week. I had cataract surgery Wednesday.
It's amazing how the mind can help us or hurt us! I was terrified for this surgery as it was my first ever and I HATE anything to do with the eye!
I kept telling myself if kids or others with cancer or other issues can handle surgery I could too. I was able to keep myself calm to an extent other than having a migraine.
Mind over matter! Tell yourself you can do this or that even when you feel you can't!

Enjoyed today at the Cleveland metroparks zoo with my 4 yr old granddaughter today. I found the moon cheese in the gift shop by the gummy bears. Even when out at a zoo or park you can find keto snacks. Just look!

Simple beef marinade I use for flank steak or london broil.
2 TBSP avocado oil or olive oil
1/4 cup soy sauce or tamari sauce or coconut aminos
1/2 cup balsamic vinegar or rice wine vinegar (I personally do half of each... 1/4 cup each)
2 TBSP brown swerve
2 tsp onion powder
2 tsp worcester sauce
1 1/2 TBSP chopped garlic
1 1/2 TBSP garlic powder
1 tsp rosemary
Mix all in bowl.
Score flank steak or london broil on both sides. Marinate for at least 4 hours.
When I do 2 flank steaks I double recipe.
Keep moving forward.

Marinaded grilled flank steak and asparagus with garlic and parmesean.
Breakfast this morning was 90 second keto bread french toast.
To the batter i add a splash of vanilla and a little sprinkle of cinnamon and a little liquid stevia.
For the french toast part i whisk an egg, and a little heavy whipping cream, vanilla and cinnamon. Cut the bread in half and do like regular french toast. Topped with Lakanto monk fruit sweetened maple flavored syrup.
