Mustard apricot pork tenderloin

710 calories

4 tenderloins
2 tbsp apricot jam
4 tbsp of Dijon mustard
2 tbsp of fry seasoning
2 tbsp of chicken stock concentrate
6 tbsp of Parmesan cheese
12 ounces of potatoes
12 ounces of green beans

•Preheat oven to 450 degrees
•Slice potatoes 1/4 thick rounds
•Pat pork dry
•Oil baking sheet
•Combine potatoes with olive oil, 1tbsp of fry seasoning, alittle salt and some pepper
•Lay out on pan and roast for 10 mins
•Meanwhile toss beans in olive oil, garlic •Parmesan seasoning, and black pepper.
•Sear pork on both sides 4-8 mins, then off heat and put on pan with beans.
•Once potatoes have roasted 13 mins with cheese. Return to oven.
•To make sauce use 1/3 cup of water, jam, mustard, and stock concentrate. Whisk together in pan on medium heat. (3-5 mins)
•Turn off heat and add 1 tbsp of butter. Season with black pepper.
•Let pork rest for 5 mins.

Serve plate and enjoy!

New York, shrimp, and Brussels w bacon

800 calories

Marinate steak how you want. I let them sit all day in fridge and set out hour before I’m cooking. Get your grill ready

Fry bacon, then sage grease and add Brussel sprouts.

Bag of shrimp in skillet(cast iron) add Cajun seasonings, alittle lemon juice and a bunch of butter. 450 for 15 mins

Sauté shrooms with butter and minced garlic

Combine and serve!

Grilled bbq chicken with green beans and turnip greens!

I set chicken out of fridge for 30 mins, and I then seasoned them with meat tenderizer, garlic powder, black stone all purpose, and anything else that sounded good lol

Then got charcoal hot and ready and placed chicken on grill for about 15-18 mins. Then I added some bbq sauce on top and finished cooking till inside was 160 degrees.

One can of green beans with one beef boudin and some garlic powder and crush red peppers and let boil, and can of turnip greens(don’t judge) and they are already seasoning.

This is a great meal for these warm nights!

Crispy chicken with carrots and potatoes

4-5 carrots sliced
1/2 lb potatoes quartered
Scallions chopped
1 tbsp fry seasoning
1/2 cup panko
1/2 ounce Frank’s seasoning blend
1 tbsp of butter
4 chicken breast
*I did 2 chickens one way and other two with “keto chicken batter”*

Oven on 425

I used swerve brown sugar, cinnamon and olive oil to coat carrots

Olive oil and any seasoning you like on your potatoes

Place both on same pan and bake on 425 for 20-25 mins

Dry chicken

Melt 1 tbsp of butter in microwave, then add panko, fry seasoning, and franks blend.

Coat on two breast, or all 4

Then I used keto chicken flour for the other two(left chicken in photo)

This was very good!

Pecan crusted chicken

This was SOOOO GOOD!

I got the recipe off of a hello fresh meal someone gave me to try out. It is 550 calories.

Ingredients:
1 ounce of pecans
1/2 cup of panko breadcrumbs
2 tbsp of fry seasoning
4 tsp honey
4 tsp Dijon mustard
4 tbsp mayonnaise
4 chicken breast
2 tbsp butter
2 tbsp olive oil

Preheat oven to 450 degrees.

Chop pecans finely

Melt butter in microwave, then add pecans, panko, 1 tbsp of fry seasoning, alittle olive oil, black pepper

In a separate bowl combine honey, mustard, and mayonnaise

Dry chicken, put rest of fry seasoning on both sides

Put pecan mixture on both sides on chicken and and a drizzle of sauce on top

Bake 15-20 mins

Drizzle the rest of the sauce on top and serve with whatever side you’d like. I sautéed asparagus with butter and seasonings!

Mushroom Gravy Pork chops

Pack of thin pork chops
Any seasoning you like I did garlic Parmesan
Can of green beans
Can of corn(I cheated a little)
Box of whole mushrooms
Jar of beef gravy
Butter and minced garlic

Cook pork chops on both sides, then set aside

Have corn and green beans cooking the way you like them (I just add black pepper and butter to the corn, then two beef boudins and some crushed red pepper to beans)

Sautéed mushrooms in butter and minced garlic and juices left from chops

Add chops back in same pan with mushrooms and jar of beef gravy and let simmer

Serve and enjoy!

Breakfast omelet

3 eggs
Meat of your choice
Sausage, chopped ham, bacon
Onions, spinach, bell peppers

Don’t forget your cheese!!!

Strawberries, raspberries, and blueberrys all have no sugars.

Don’t forget your low carb milk!

Chicken Parmesan Casserole

2lbs of chicken
Bag of Brussel spouts (2 if cooking for 4 people)
2 cups of no sugar marina
2 cups of mozzarella cheese
1 cup of Parmesan cheese
2 cups of cali flower rice
1/2 onion
Olive oil
4 ounces of cream cheese
Garlic powder
Italian seasoning
Black pepper

Cook chicken with seasoning, set aside and cut into pieces

Add chopped onion in same pan, cook for two mins then add the cauliflower rice. Soften.

Then add the cream cheese and seasonings and make into a smooth mixture

Stir in marina, chicken, and 1 cup of Parmesan and mozzarella cheese

Top with the last 2 cups of cheese and broil on high for 4 mins.

Taco stuffed bell peppers

2 lbs of meat
8 bell peppers
Taco seasoning
2 cups of cheddar cheese
1 cup of sour cream
1 can of rotel
1/2 onion

Cut off tops of bell peppers, clean with water and set aside upside down

I took the tops and chopped them up and threw stems away. Add chopped top, beef, and taco seasoning to pan and cook. After beef is almost all brown add your chopped onion. Simmer.

Add cheese, rotel, and sour cream.

Fill bell peppers and top with cheese

Bake at 350 for 20 mins

Enjoy!

Pork chops and Brussels sprouts

I cheated alittle, but the seasoning I used Weber brown sugar bourbon on these pork chops.

Pat pork chops dry, season both sides and cook in pan till atleast 160 degrees.

I used whole Brussel sprouts and halved and quartered them and used olive oil to fry. Coated with garlic powder, pepper, rosemary, and left over brown sugar bourbon on them!

Beef and onion tacos

1lb of shredded beef
1/2 of onion
Taco seasoning
Tortillas

Cook your beef with any taco seasoning you’d like. Soften your onion, add meat and cheese, and anything else you’d like in your low carb tortilla and top with queso cheese if you’d like!

Crock pot taco chicken

1 lb of chicken
1 pack of taco seasoning
1 jar of salsa

Lay chicken on bottom
Cover with seasoning, then jar of salsa
Cook on low for 6 hours
Use a blender or two forks and shred
Put in tortilla(I used zero carb) and top with cheese and sour cream if you’d like!

Steamed shrimp at Ho***rs!

These are soooo good!

You can eat out healthy, just make sure no breads, pasta, or starches!

Keto crock pot chili

1lb of beef
Minced garlic
1 green bell peppers
1/2 onion chopped
2 tbsp chili powder
1/2 tbsp black pepper
1/2 tbsp celery salt
Couple of shakes of Worcestershire sauce
4 oz can of diced green chilis
1 cup of tomato sauce
1/2 cup of tomato paste
1 can of beef broth

Literally throw all of that in the crock pot. Low for 6-7 hours

Top with cheese! Throw some hot dogs and enjoy!

Tuscan chicken and shrimp with side of roasted broccoli and cauliflower

This is my favorite dish to make!

1lb of chicken
1lb of raw shrimp
Package of leaf spinich
1/2 jar of roasted sun dried tomatoes
1 cup of heavy cream
1/2 cup of chicken broth
1 cup of mozzarella cheese
1 cup of Parmesan cheese
2 tbls of minced garlic

Cook chicken and shrimp with desired seasonings set aside.

Same pan add minced garlic, sun dried tomatoes and soften.

Add heavy cream and both cheeses and get to a low boil

Add spinach and let sit for 8 mins

I got the bag of broccoli and cauliflower for an easy side. (Kroger) they come seasoning and I baked at 450 for 20 mins. They were soooo good! You can even mix them in to the sauces!!

Easy breakfast at Cracker Barrel

Just meats and eggs!

Sausage, bacon, spicy chicken sausage and eggs how ever you like it.

Or you can go all out like my grandma with a sweet tea and pancakes 😂

BROCCOLI CHEDDAR STUFFED CHICKEN

Ingredients
4 small chicken breast
3/4 cup broccoli*, chopped
1/2 cup shredded cheddar cheese
2 ounce cream cheese, softened
2 teaspoons cajun seasoning

Instructions
Preheat the oven to 400 degrees F
In a small bowl combine the broccoli, cheddar cheese and softened cream cheese, set aside.
Slice each chicken breast lengthwise so that the breast folds open (be sure not to slice all the way through)
Spread the broccoli cheddar mixture on one side of the chicken and fold the other side over, secure with a toothpick.
Lightly sprinkle the cajun seasoning on each side of the chicken.
Place in a greased baking dish. Bake 25-30 minutes until the chicken is cooked through.

Low carb spaghetti

6 egg lite (yellow package at Kroger)
Jar of sugar free marinara (Raos)
Meatballs, sausages, or chicken can be added for Protein

Cut up egg lites how ever u want to(thick or thin)

Get a small pan of boiling water going, and put half the package in the boiling water for 1-2 mins to soften up. Drain, and repeat for other half.

Warm up your sauce, and cover and top with Italian seasoning or parsley

This is a quick meal, and a close sub for pasta. But it’s definitely not pasta 😂

Top with Parmesan cheese if you’d like!

Fried pickles

Use a muffin pan add spray butter

Add a little bit of shredded cheddar cheese then add ranch seasoning then top with a pickle slice and add a little more cheese.

Bake at 350 for 6-8 mins

These are sooooo good! Let cool a bit before taking out of pan unlike I did and made them look messy lol I was so eager to try them!

Mississippi Roast with green beans

You can do your roast how ever you want. In a crock pot or stove

Crock pot is easiest:

3 to 4 pounds boneless chuck roast
16-ounce jar peperoncini peppers, including 1/4 cup juice
4 tablespoons of butter
Packet of Anjou seasoning
Packet of ranch seasoning
Garlic powder
Oregano powder
Onion powder
Thyme
Black pepper


Place meat in crock pot
Top with butter first, then everything else listed above. Then cook on low for 7-8 hours.

Shred meat, and serve!

Green beans cooked with bacon, onion powder, garlic powder, and crushed red pepper.

Low carb chili cheese dogs

Hot dogs
Keto buns(found at Walmart or Kroger)
Shredded cheddar cheese
Hot dog chili(make sure under 5 carbs)

Cook your hot dogs how you like(boil, microwave, grill, or even over a fire)

I heat up my buns with a little butter and broil them in the oven or over a fire.

Heat up your chili how you want to

Then add together and enjoy!

Sautéed shrimp with cheesy mushrooms and chorizo broccoli

1 lb of raw shrimp
1 box of whole white mushrooms
1 head of broccoli or bag of florets
1 pack of chorizo
1 jar of queso or velvetta cheese
Olive oil
Minced garlic
Heavy cream
Mozzarella cheese
Butter

Sauté shrimp with olive oil and seasoning you like.

Sauté mushrooms with olive oil and add minced garlic then add 1 cup of heavy cream and 1 cup of mozzarella cheese and come to a low boil. Keep flipping mushrooms in pan.

Oven to 375 and put broccoli in baking dish with butter for about 15 mins. Cook chorizo in pan, drain the grease. Get pan out of oven and add chorizo and jar of cheese dip. Or add chunks of velvetta cheese. Baked for another 10-12 mins to a boil.

Air fryer chicken nuggets

1 egg
1 can of chicken (drained)
1/2 cup of shredded cheddar
Any seasonings of your choice

You can make it spicy, or garlic and herd, lemon, Cajun, anything you want!

1. Mash all ingredients in a bowl and get it all mashed together
2. Separate into balls
3. Air fry on 400 degrees for 8-10 mins, flipping half way!

Enjoy with ketchup or ranch! Or of course any sauce! Even tossed in buffalo!

Creamy mushroom pork chops

1 pack of thin pork chops (4-5 pieces)
2 jars of Rana portobello sauce (Kroger)
Green beans

Coat chops in seasoning and sear on both sides until 130 degrees. I used garlic pepper from black stone, black pepper, garlic powder, crushed red pepper, and basil. I also added minced garlic in the pan for extra flavor. (Optional) once cooked to 130 degrees, I added the two jars of sauce and let that come to a low boil. About 5 mins.

One can of any style green beans you’d like. I use cut beans from green giant. I added 2 beef boudins, garlic powder, black pepper, and crushed red pepper.

You can do steam broccoli, asparagus, cali flower Mac and cheese, or any other healthy veggies!

If you want to go out tonight, any meat and greens are ok! Just stay away from potatoes and starches(Mac and cheese)

My go to is Prime rib, sautéed mushrooms and asparagus.

You can also do grilled chicken with broccoli and a salad. Just no croutons! Have to watch some dressings, but don’t stress over it.

Any meat that is grilled(no breading at all) and any greens.

It’s not the easiest to eat healthy when you go out, but just check out the menu online before hand to make it easier!

EASY Shrimp fajita tacos with side of mussels

Both of these can be found at Kroger.

Zero carb tortillas. Also found at Kroger.

The shrimp fajita mix comes in a bag, and you cook the shrimp half way, add the peppers and onion, then add sauce and bring to a low boil.

This is a spicy meal. Keep that in mind.

Mussels are in a black box. You put them in a pan and let them boil with some butter. They are so good! Takes about 12 mins to finish.

Keto blue berry muffins

These are perfect for a snack, breakfast, or when your craving “something sweet”

Oven preheat to 350
In a small bowl mix 1 1/2 cups of almond flour, 1/2 cup of granular erythritol, and 2 teaspoons of baking powder.

In a medium bowl whisk 2 eggs, 3/4 cup of sour cream, and 1/2 teaspoon of vanilla extract. Then slowly add the flour mixture and get that well blended. Then slowly add in blueberries. 1/2 cup or so.

Grease and fill the muffin pan about 3/4 full. Put in over for 25-30 mins until the toothpick comes clean.

Let muffins cool and enjoy!

No carb mini pepperoni pizzas

Kroger has mini zero carb white tortillas. You can also get “everything bagel and tomato basil”

Place tortilla down, add sugar free marina, 4 pepperonis, and some mozzarella cheese. Sometimes I add garlic powder and Italian seasoning for flavor as well. You can do this with cooked sausage, onions, bacon, bell peppers, or anything you like on your pizza. Place in air fryer 370 for 5 mins. Check half way through. Does not take long for these to warm up!

Air fried catfish

Bag of catfish thawed
I cracked two eggs in a bowl and add 1/2 cup heavy whipping cream as my egg wash. You can buy batter mix or make your own. 2 cups of almond flour, crushed red pepper flakes, garlic powder, lemon seasoning, paprika, and anything else you’d like. Dip in egg wash and batter, then fry on 370 for 10-12 mins. Flipping half way. Temp should be atleast 145 internally.

Turnips greens
These were in a can. You can make your own, but not season for them yet. But there’s different flavors you can get. Just watch that salt!

Green beans
I use just regular green giant cut beans. Sometimes I add bacon and onions. Always add garlic power, crushed red pepper, and 2 beef boudin cubes for extra flavor.

Sautéed mushrooms
Whole box of whole mushrooms. I pull the stem out. Then add to pan with some olive oil. Once half way soften, I add some butter and minced garlic and finish cooking till tender.

Low carb Taco Soup

*Brown 1 lb of ground beef. Drain any grease. Add taco seasoning. Brown 1/2 white onion. Add 1 can of rotel, 1 can of diced green chiles, 1 block of cream cheese, 2 cups of shredded sharp cheddar, 4 cups of beef broth, 1 cup of heavy cream, and some garlic power.

* This can be done in a deep skillet, or in a crock pot. Low for 6 hours. (Add cream cheese and cheddar cheese in the last hour) or high for 4 hours.

*Also, Kroger and Walmart have different types of keto bread. Some with 0 carbs. You can make grilled cheese to dip in your soup.

* Top with sour cream and jalapeños if you’d like.

* I did not add any salt to this. But you can.

Lemon and rosemary Cornish hen
•bacon and onion Brussel Sprouts
•cheesy cauliflower bake

*I injected then hens with a buttery Cajun sauce. Covered them in garlic powder, thyme, Italian seasoning, rosemary, and anything else that sounded good. Stuffed inside with fresh rosemary and sliced lemons. More sliced lemons on top. Baked for 45 mins on 300 degrees. Then for 30 more mins on 350 degrees. Until the temperature hit 165.

*Cooked a couple slices of bacon. Set aside on napkin to get most of the grease out. I cut whole Brussels in half and quarters. I seared them on both sides. And sautéed half a white onion. Added minced garlic. Took about 15 mins total to finish everything.

*1lb bag or 1 head of cauliflower I boiled for about 7 mins to soften up. I cooked 3-4 more slices of bacon. Set aside again on a napkin. I then added 1/2 a white onion and minced garlic. With some crushed red pepper and black pepper. Then in a bowl mixed 1 cup of almond flower and 1 cup of “carb master” white milk. Once onions are soft I added to the flour and milk mix in and got that to a low boil. Then added 1 cup of shredded Parmesan cheese, and 2 cups of Sharp shredded cheddar cheese. Let that get mixed together. Topped with parsley, basil, and rosemary. Put in oven at 350, for about 10 mins.

*I do not add any extra salt to anything in any of my meals. You can, but I believe there is enough salt in seasoning, and food itself.

*I do not measure out much of anything, I eyeball most of my measurements 😂
