Ingredients
- 1 1/2 tsps baking soda
- 1/4 cup butter
- 1/2 cup cocoa
- 1 1/2 cups confectioners' sugar
- 1 egg
- 2 cups flour
- 1 cup marshmallow fluff
- 1 cup milk
- 1/2 tsp salt
- 1/2 cup shortening
- 1 cup sugar

Nanaimo Bars
Ingredients
- 1/2 tsp Butter Extract
- 4oz 100% Cacao Unsweetened Chocolate
- 32g (1 scoop) Chocolate Protein Powder
- 30g (6 Tbs) Regular Cocoa Powder (unsweetened)
- 160g (1/2 cup + 2 Tbs) Coconut Butter
- 1/2 tsp Coconut Extract
- 1/4 cup + 3 Tbs Light Coconut Milk
- 28g (2 Tbs) Coconut Oil, soft
- 48g (1/4 cup) Powdered Erythritol
- 1 tsp Hazelnut Extract
- 14g (2 tsp) Molasses
- 1/2 cup Plain, Nonfat Greek Yogurt
- 26g (3 Tbs) Dried Nonfat Milk
- 48g (1/2 cup) Rolled Oats (old fashioned, gluten free if you like)
- 1/2 teaspoon salt
- 1/4 tsp Stevia Extract
- 128g (4 scoops) Vanilla Custard Protein Powder
Preparation
Put the greek yogurt into a medium-sized mixing bowl and add the powdered erythritol, stir until erythritol dissolves.Fold in the protein powder with a rubber spatula. When the mixture is thick and sticky, add the coconut oil and fold it in.
Add the dried milk and fold that in too (the mixture should be very sticky, so don't touch!). Scoop into the brownie pan and try to level as best as you can with the rubber spatula (it doesn't have to be perfect, it will naturally settle into a level layer). Refrigerate while you make the ganache layer.Directions (for the ganache layer): Melt the chocolate in a microwave-safe bowl at 30-second intervals, stirring in between each one, until melted.
Whisk in the coconut milk. When the mixture is even and lighter in color, whisk in the stevia and carefully stir in the powdered erythritol.
Pour into the brownie pan and spread by gently shaking the pan back and forth until the ganache reaches the corners. Refrigerate until chocolate is firm, then slice and serve!

Ingredients
- 1 cup chocolate sprinkles
- 1 (14 ounce) can sweetened condensed milk
- 1 tablespoon of unsalted butter
- 3 tablespoons unsweetened cocoa
Preparation
In a medium saucepan combine cocoa, butter and condensed milk.Cook over low heat,stirring until thick for about 10 minutes. The mixture is ready when it starts to pull away from the bottom and sides of the pan when you stir.
Remove from heat and let rest until cool enough to handle.Form into small balls and roll each ball in the chocolate sprinkles
Chill until ready to serve.

Nanaimo Bar
Ingredients
- 1/2 cup finely chopped almonds
- 5 tablespoons cocoa
- 1 cup coconut
- 2 tablespoons vanilla-flavored custard powder
- 1 egg, beaten
- 1 1/4 cups graham wafer crumbs
- 2 cups icing sugar
- 4 squares squares semi-sweet chocolate (1 ounce each)
- 2 2/3 cups sugar
- 2 tablespoons unsalted butter
Preparation
Melt first 1/2 cup butter, sugar and cocoa in top of double boiler.
Add egg and stir to cook and thicken.
Remove from heat. Stir in crumbs, almonds and coconut. Press firmly into an ungreased 8" x 8" pan.Cream 1/2 cup butter, cream, custard powder, and icing sugar together well. Beat until light.
Spread over bottom layer.Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

Tuxedo cake
Ingredients
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1/4 cup butter
- 1 cup buttermilk, shaken
- ¾ cups good cocoa powder
- 1 cup freshly brewed hot coffee
- 100g dark chocolate
- 2 Eggs, beaten
- 1¾ cups all-purpose flour, plus more for pans
- 1 tablespoon honey
- 1 teaspoon kosher salt
- 125 g milk chocolate (or dark)
- 1 cup Sugar
- 1 teaspoon pure vanilla extract
- ½ cup vegetable oil
- 100 ml whipped cream
- 50 g white chocolate (optional)
Preparation
Preheat the oven to 350 degrees F. Butter two 8-inch x 2-inch round cake pans. Line with parchment paper, then butter and flour the pans.Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.

Crispy Baked Green Bean Fries
Ingredients
- 1 1/2 cups almond meal
- 1 Tbsp black pepper
- 1 tsp cayenne pepper
- 3 eggs (lightly beaten)
- 1lb fresh green beans (snapped)
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
Preparation
Heat oven to 42
Prepare a cookie sheet, and then line the coated green beans onto the sheet.
Bake in oven for 12-15 minutes, turning the beans, and then baking for another 5 minutes. (Start checking the coating after the first 12 minutes periodically to make sure that they are not burning.)
Remove from oven when they have reached a lightly crisp golden brown color.

Baked Sweet Potato Fries
Ingredients
- 1 -T margarine or butter, melted
- dash nutmeg
- 1/4 -t seasoned salt
- 4 smalls sweet potatoes (about 1 lb)
Preparation
Spray a 15 x 10 x 1 inch baking pan with nonstick coating. Scrub potatoes; cut lengthwise into quarters, then cut each quarter into 2 wedges. Arrange potatoes in a single layer in pan.
Combine margarine or butter, salt, and nutmeg.
Brush onto potatoes.
Bake in a 450 oven 20 minutes or until brown and tender.

Buttered Plantain Fries and Seasoned Avocado
Ingredients
- 1 Avocado
- 1/2 cup of melted butter
- A handful of chopped chili pepper
- 1 clove of garlic chopped
- chopped Onions to garnish
- 1 plantain
- salt
- 2 tablespoons of vegetable oil
Preparation
Peel and Slice your plantain into thin stripes and set aside.In a pan, pour in your butter and oil and heat slowly.Toss in your plantain and allow to brown on all sides.Mash your avocado, season with salt and stir in your chopped pepper, garlic and onion.
Serve as a starter.

Baked Sweet Potato Fries With Yogurt
Ingredients
- Smoked chipotle peppers, dried and ground
- Oil, to coat
- Plain Greek yogurt
- Roasted pepitas" sunflower seeds"
- Sea Salt
- 2 Sweet potatoes
Preparation
Wash and slice sweet potato length wise.Coat with oil.
Sprinkle on the sea salt and ground chipotle peppers.On a baking sheet, roast sliced potatoes with skin at 400 degrees.Turn slices around ever 5 minutes or so until browned on all sides.
Garnish with yogurt and pepitas "sunflower seeds."

Pumpkin Soup
Ingredients
- 4 cups diced peeled pumpkin pulp
- Boiling milk
- Pepper freshly ground to taste
- 3 carrots, diced
- 3 ribs celery, diced
- 1 onion, finely chopped
- 1 bay leaf
- 6 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon nutmeg
- 1 tablespoon sugar
Preparation
Place pumpkin, carrots, celery and onion in large kettle.
Add the bay leaf and broth. Bring to a boil. Cover and simmer about 1 hour or until pumpkin is tender. Put mixture in blender and return to the kettle. Stir in the remaining ingredients except the milk. Adjust the consistency with the milk.
